  1. Liz, I love ginger snaps. I wonder if one could just roll the dough in logs, refrigerate, and then cut off slices like refrigerator cookies, without rolling out and using a cookie cutter. I think I'll give it a try. Thanks for the recipe.
  2. Tasha, Has your mother gone gluten-free. If not, is she willing to give it a try? I was always getting gastritis - from many years ago up until about a month ago when after being gluten-free for a few months allowed for enough healing that I no longer have acid stomach issues. Edit: Oh, I see now from your signature that your mother has celiac...
  3. I was curious what this is so did a google search and found this very interesting article from Alternative Medicine Review through the Lame Advertisement site. Open Original Shared Link Below is part of that article.
  4. Before I discovered that it was gluten causing all my GI problems, it was like you say - just out of the blue - pow - hit me like a ton of bricks. It was very puzzling. Now that I've been gluten-free (and corn-free - that's an issue also with me) I have been able to determine that it takes at least 15 hours (or more) for GI symptoms to hit me after ingestion...
  5. Burdee - I made the Chocolate Almond Slice and Bake Cookies from your recipe today - YUM YUM!!! I couldn't find any almond flour at Whole Foods today, so I bought whole almonds and ran them through the blender - worked pretty good but left some larger pieces of almond which I just sifted out. This is probably cheaper than buying the almond flour anyway...
  6. Good idea for a thread. This is one of my favorite combinations, but instead of fresh tomatoes I will partially reconstitute sundried tomatoes (just soft enough to cut but still sort of chewy) and add them to the mix. These tomatoes really ad a great taste. I like this combination with cooked rice, too.
  7. Here's an apple tart that has a nut/date crust. I fixed it for Thanksgiving and it is really good. Open Original Shared Link When I make it again (for this weekend) I'm going to double the amount of apples. I've yet to find a bread or cake baked without egg that is worth the effort, so I try to concentrate on desserts that naturally don't have egg, and...
  8. I didn't seem to have any gluten reaction to the oats in my meatloaf. I am going to try eating some oatmeal after the holidays - right now I'm having some GI issues so need for that to settle down (I don't always know what sets it off, don't think it was gluten but could have been something else!!!).
  9. you need to take calcium with the magnesium at a ratio of 2-cal/1-mag. (If you just take the magnesium your body will take calcium from your own store to break down the magnesium). You usually find the cal/mag combinations at 1,000mg calcium/500mg magnesium. I take one with breakfast, and one with supper, and have in the past taken a third one with lunch...
  10. I'll add my experience here, addressing the tension headaches. I don't get typical migraines but do have some light sensitivity when they're bad. I used to have 24 hr headaches that lasted for days. Chiropractic helped some but didn't address the cause (the bone-cruncher type chiropractor). All my headaches went away when I started supplementing with magnesium...
  11. I cannot tell you how many supplements I've given/thrown away in the last few months because of containing one or more of my allergens. From now on, I only purchase those supplements where the manufacturer lists whats NOT in them. I'm just not willing to call/email those who don't bother to disclose allergen information about their product on the label...
  12. I can't answer your specific question about the flours, but.... I did a search on this board for "sugar cookies" and several threads came up. You might want to do the same and browse the results for a recipe you think you'll like. Here's a recipe from JerseyAngle.
  13. Good grief! We have to be constantly on guard... all the time!
  14. Oooohhhh.... this place is decadent Here's a direct link to the site: Open Original Shared Link
  15. I bought that bag of oats and had a bit of it in a meatloaf tonight. Will see what happens tomorrow (my reactions are delayed about 15 hours). I sure hope these oats are exactly what they say, gluten-free. I'm dreaming of oatmeal cookies
  16. ... and whey (a milk byproduct that's in a lot of processed foods).
  17. I checked out this cookbook at the library and found so many recipes I can use that I'm going to buy a copy of it to keep at home. The authors (Jodi Bager and Jenny Lass) do not use any grains in their recipes, nor refined sugar, and the recipes are low-lactose. They mostly use honey or fruit juice to sweeten, and sparingly, so their foods are not overly...
  18. I take some supplements - a B complex, calcium/magnesium and glucosamine for arthritis, and digestive enzymes. I cannot seem to get along without magnesium - whenever I stop taking it, about a week or two later I start getting headaches round the clock. With it, no headaches. (I started taking magnesium for fibromyalgia and although I no longer have FM...
  19. Thanks, that's good to know.
  20. Welcome to the forum and to the gluten-free lifestyle. There are several other wives of celiac husbands so you are in good company. Isn't Nini's survival kit great? Once you get a handle on reading labels and finding foods that you know are safe and your husband enjoys, it gets so much easier. As far as eating at other people's homes... personally...
  21. I've read on this forum a time or two that it's more than just "getting it out of your system" as the gluten causes an autoimmune response that continues after the gluten has long since left the intestinal tract. This is why it can continue for a week or more. Each person's recovery time is different. Some have mentioned eating bananas (for the potassium...
  22. This would be my suggestion, too. Sorry you're feeling so bad. I'm sure your friend wouldn't mind if you didn't order the restaurant breakfast. It's the time together that is important, right?
  23. That was a great reply, considering they aren't quite ready to publish a gluten-free menu, but it appears they know the drill. thanks for posting this.
  24. I've been there, too. It's hard to give up so many foods. Gluten is hard enough, but when you add soy, corn, egg, milk.... I mean, what's left!!!??? That's how one feels, anyway. But, in reality, there's a lot left. It's just not convenient anymore. It does take time to get adjusted to a new way of eating, and there's a certain amount of getting over...
  25. I've had trouble digesting apples, too, so I'm careful about eating them. I do better with the less sweet varieties, and I always peel them - the peel has so many chemicals and fungacides on it and I'm sure not all has been washed off before they're dipped in wax so that you can't get it off even if you want to - I just don't want to be ingesting all that...
