    I would also look for another dentist. If this is not an option before getting these cavities filled, I'd try to talk to them again. But you can also relax in that things involved in filling cavities will almost certainly all be gluten-free. Virtually everything in every dentist's office is gluten-free, and in a lot of offices it's all gluten-free. Still...

    I'm sorry for your husband but I think your apparent conjecture that both these people had undiagnosed celiac AND that the celiac caused pancreatic cancer in both is more than a major stretch. People with undiagnosed celiac do have a higher chance for certain types of cancer (not sure that pancreatic is among them) but even then the chance is very small....

    I think he took the order and I mentioned I didn't want the bun because I had to eat gluten free. He immediately knew what that meant and what to do to lessen the chance of CC. richard

    The fries are also gluten-free and done in a dedicated fryer. At the 5 Guys I went to, when the supervisor heard me ordering gluten-free, he changed gloves and then made the burger for me in a safer area to lessen the chance of stray crumbs. All without me asking. richard

    I think you were perfectly safe ordering the baked potato. Soups absolutely have to be avoided until they prove that they are gluten-free. I was amazed to find that several of McAlister's soups are gluten-free. richard

    As ravenwood just said, nearly every deli meat out there is gluten-free. As for the Nerds and Gobstoppers, the ingredients themselves are gluten-free, but they are made in a facility that also makes things with gluten. Some folks don't eat things made in shared facilities; many do. Your choice. richard

    From a gluten perspective, Carl Buddig meats are all gluten-free and I've never heard of anybody having a problem. In fact, virtually every deli/lunch meat I'm aware of is gluten-free. Most cold cut brands have either no meat with gluten or perhaps one. richard

    I think that the purpose of a dedicated fryer is to keep the flavors from mingling, a goal that would be thwarted by filtering all the oil together. And at some places, used oil is thrown out at the end of the day -- or even more often. richard

    I'm not saying you didn't have trouble with the Ortega (although I haven't) but anxiety over all this can definitely be a problem. On occasion it's kept me from going places or doing things. richard

    If the gravy package or the ingredient listings specifically say no gluten and the MFS doesn't mention wheat, I'd say it's gluten-free. Unless they made a mistake, it's more likely to be up to date than the website. Or call the company. richard

    Just wanted to add that I can no longer name a ham in the U.S. that has gluten since Heavenly Ham changed its glaze. Any gluten would be clearly listed in the glaze, if it has one. richard

    "His main symptom that prompted the screening is anemia that won't go away with iron supplements." This is a HUGE celiac symptom. As others have said, false positives are rare. And do NOT have him go gluten-free before the biopsy. richard

    I don't know about just with DH, but my mouth ulcers disappeared when I went gluten-free. richard
