I did the Enterolab testing because it would tell me if I had the DQ1 gene as well as the DQ2 and DQ8. I believe DQ1 is recognized by some neurologists as being linked to neurological problems due to gluten. I also did want to know the likelihood of getting "official" celiac disease. It does seem that most people will be diagnosed with a gluten problem by Enterolab. My personal opinion is that most people probably do have somewhat of a problem with gluten. I think for you to know if it is worth giving up gluten and casein for you, you need to be very strict for a while. Otherwise you will never know how good you can feel. ... -

I don't think you are missing anything. I don't get why they think it is so harmful to not eat gluten! My kids are not "properly diagnosed" either. I avoid anything that says "may contain traces of ...". For me, I might take a chance with casein or soy but I wouldn't let my kids because they react to tiny amounts. I used to buy the ones that said "manufactured in a facility that uses ..." but I have noticed my children have reacted to some of those. For now, I will avoid the ones they have reacted... -

Fleischman's Light margarine is gluten/casein/soy free. I'm pretty sure Fleischman's unsalted sticks of margarine are gluten/casein free. I used to buy that but now we avoid soy so I can't. I use that margarine, coconut oil, and olive oil depending on what I'm using it for. I also use shortening instead of butter in cookies. -

I've also been using the Wilton recipe lately. It is so good! I use 1 cup of shortening instead of half butter. For chocolate, you can add 3/4 cup cocoa and 1 - 2 T of water. Add extra water to thin to the right consistency. You can also add a pinch of salt to cut the sweetness a little. -

I have done lots of testing with Enterolab. While I agree that you can determine a lot of what you find out from them by a diet trial, I don't think I wasted my money. I think some people are able to eat soy lecithin. I think, theorectically, the soy protein has been removed. However, my daughter reacts even to soy lecithin with a tummy ache. That stuff is in almost all chocolate. -

I went on a cruise with them last summer and they seemed trustworthy. We only ate in the main dining room. I did not trust the buffet. You will have the same waiter every night so you won't have to explain it every night. We ordered the night before for the next dinner so that they could prepare ours without gluten. We didn't have any problems. -

I don't live in Houston but I researched some restaurants last summer for a family gathering. We had a group of 15 with 6 people on the gluten-free diet. 4 of us were also dairy free. Happy Anniversary! I like to make the Namaste chocolate cake mix. They carry it at my regular grocery store and at Whole Foods. I haven't found a recipe from scratch yet that is as good.
