About Me

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

  1. Celiac.com 06/07/2025 - In the heart of the Philippines, Ginataang Gulay has long been a beloved comfort food, blending the richness of coconut milk with the earthy freshness of local vegetables. "Ginataan" comes from the Filipino word...
  2. You are right! The logo the have on their packages got me confused--it looks like they are less than 20ppm, not certified GF. Thanks for catching that! My brain also zeroed in on this "less than 10ppm" but I should have seen the rest...
  3. That is true! Many people with celiac disease, especially those who are in the 0-2 year range of their recovery, have additional food intolerance issues which could be temporary. To figure this out you may need to keep a food diary and do an elimination diet over a few months. Some common food intolerance issues are dairy/casein, eggs, corn, oats...
  4. For people with celiac disease hidden gluten in their diets is the main cause of elevated Tissue Transglutaminase IgA Antibodies (tTG-IgA), but there are other conditions, including cow's milk/casein intolerance, that can also cause this, and here is an article about the other possible causes:
  5. Many people with gluten sensitivity or celiac disease report throat-related symptoms, including a phlegmy, thick, or "sticky" feeling after gluten exposure. This could be due to inflammation, mild allergic response (like a wheat allergy), or even silent reflux triggered by gluten. Some also describe a "gluten globus" sensation—like something is stuck in t...
  6. You are correct--my bad! The ingredients do include wheat starch, and the fact that their products are certified gluten-free means that they test below 10ppm, but again, some celiacs do report issues with products that use Codex wheat starch. Here is the label of the one I though was wheat-free:
  7. Your diligence in managing cross-contamination is impressive, and it does sound like the dishwasher could be the culprit—especially since your symptoms started around the time you got it. Even if plates and cutlery look clean, gluten proteins can linger if the dishwasher isn’t effectively removing residue. Grittiness or visible marks suggest it may not be ...
  8. Your situation sounds challenging, and it’s great that you’re taking a proactive approach to uncovering potential triggers for your Ménière’s symptoms. Given your family history of celiac, low folate, ferritin, and total protein (all of which can hint at malabsorption), and your possible IgA deficiency, further investigation is absolutely warranted. S...
  9. Celiac.com 06/06/2025 - Bistek Tagalog is a dish deeply rooted in Filipino culinary tradition, blending the Spanish influence of beef steak ("bistec") with native Filipino flavors of citrus and soy. Originally adapted during the Spanish...
  10. Celiac.com 06/05/2025 - Osteoporosis, a condition where bones become weak and more prone to fractures, is a major health concern for people with celiac disease. Since fragile bones can lead to serious injuries, it is important to know...
  11. Celiac.com June 2025 - Explore expert insights, research updates, and practical tips on celiac disease, gluten-free living, and emerging treatments in our video library. Stay informed and empowered with the latest developments to manage...
  12. I think the best approach is to lean how to read product labels, especially the allergen warnings, and these lists might be helpful:
  13. It looks like you are referring to this product: https://shop.kingarthurbaking.com/items/gluten-free-bread-flour Their site says: "Made with gluten-free wheat starch to give baked goods incredible taste and texture, it’s ideal for classic yeasted recipes like artisan boules, bagels, cinnamon rolls, and burger buns", and it is true that Codex quality w...
