My Happy Tree!!!!!!!

Parties last last night were fabulous! So fabulous I was pretty much useless today.

My best friend is the cheesecake queen!!! Her cheesecakes are requested for all major events by friends and family. Her stuff is actually better than Cheesecake Factory.

The one she made for me was a huge gluten-free chocolate swirl cheesecake, with crumbled peanut butter cups and homemade caramel sauce on top. The crust was made of crushed flourless peanut butter cookies (made with chunky peanut butter.) With completely honesty, I think it's the best dessert I've ever had in my life!!!

As soon as she puts it up on her blog, I'll post the link!

This is so awesome! It's so well written -- I really think this will resonate with people who see those symptoms in themselves or their children. You must be so proud of your little guy! It kind of gave me chills reading it, realizing how similar Jack and Colin's symptoms were. I'm so happy that they're both living the gluten-free life and I hope that Colin will eventually see the kind of vast improvement that Jack has.

Jack will be absolutely jumpin' up and down to hear all of your reactions...As he was getting his backpack on and heading out the door this morning with the section of the paper to take to school, I said, "We gotta call Grandma as soon as you get home to ask her if she's seen it". His face lit up and he said, "No, first you've gotta get into Sillyville and show all of them!! What will they say? Will they be surprised?" I laughed, and he added as he was heading out the door, "I bet they'll be proud of me".

Couldn't care less about Grandma's reaction, but you guys, well...........

Yep, he's been gluten-free for about four months. Unparalleled pharting was his only noticeable symptom, and that's pretty well gone. He intentionally glutened himself a couple of weeks ago to see how he'd feel, as he still remains somewhat sceptical (strongly positive Enterolab results, negative blood work and biopsy), and had no symptoms. So that makes him even more sceptical....but he's staying on it.
