There have been several posts recently about what to eat. (Seriously, do we talk about anything other than what to eat? ;-) ) So, out of curiosity, let's hear what everyone ate today. Concrete, be honest. I care about good junk food options too!

Breakfast

two corn tortillas, cheddar cheese, cherries

Mid-morning

tea with milk

Lunch

buckwheat pancakes with apple, walnuts, flaxseeds, and maple syrup

Snack

raspberries and chocolate covered toffee

Dinner

lettuce with white beans, green beans, tuna, balsamic vinegar dressing, and peas

Bedtime snack

probably cherries and cheese (or maybe pecans...)

It was very warm today so I didn't eat all that much. I did drink water with lime juice throughout the day though.

Breakfast: a banana

Lunch: a popsicle or two

Dinner: I made punjabi lamb and spinach curry over brown rice. Tasty. And I had some real jamaican ginger beer with it.

I am almost done baking a loaf of cottage cheese dill bread for next week. It looks great, rising, moist and happy :)

I ate fried chicken for breakfast. Then for lunch I fried a bunch of portabello mushroom chunks with an onion and 3 eggs. Ate it on toasted Kinickinick bread (unusual to have) with mayo. Still full from that so won't eat anything else. Forgot, also ate some Altoids peppermints

Lunch: Mixed green salad w/ chargrilled chicken, avocados, pineapples & strawberries, topped w/ olive oil

Afternoon Snack: Vitamin water w/ almond butter

Dinner: Petit filets w/ mixed veggies & butternut squash casserole (gluten free crusty breaded topping...YUMMY)!

Geez, thats a ton of food down the hatch ;)

I don't eat breakfast when I first get up, but need something light. So I start with:

AM Snack: apple juice, cantaloupe chunks, 3 cherries

BREAKFAST: 1/4 c. Bob's Might Tasty Gluten Free hot cereal, cooked in 1 c. hazelnut milk, to which I added 1 heaping tablespoon of almond butter and 1/2 chopped pear

LUNCH: More cantaloupe chunks, 1/2 Food for Life Rice Tortilla stuffed with peanut butter and banana

I haven't eaten dinner yet but plan to eat:

DINNER: 1 can Amy's Split Pea soup, to which I add chopped kale from my garden and rice bran to thicken the soup, 1 medjool date for dessert

D-- One potato, 2 small sausage patties, small onion sauteed in a little bit of olive oil with a little 75% less fat Cabot Cheddar melted over the top.

Breakfast - chocolate chex and diet mt Dew (a bit embarrassing, but once in a while, what the heck, ya know?

Lunch - deconstructed lasagna (turkey sausage, gluten-free pasta, ricotta, mozzarella, peppers, marinara, and spinach baked.)

Dinner? It's hot and I spent the afternoon splitting wood for the winter so nothing too industrious. Honestly, looks like a good chance of being corn on the cob and some ice cold watermelon.

There is also double chocolate gelato in the freezer calling my name.

snack ..... well, okay, I've sorta just eaten continuously all day........

Refried beans and salsa on nut thins, more cherries, banana, I snacked on turkey meat as I was making soup, celery w/peanut butter.

Usually I'm much more structured - something with meat, veggies, and brown rice for breakfast, if I have time

veggies for snack

salad with no, or little dressing

something with chicken breast and veggies for lunch and pm snack

whatever I had for breakfast for dinner.

Lots of good ideas here. :) -- Sunday isn't a typical day for me because I'm at church in the morning then I rush from there to a retirement community near here for Sunday afternoon services. So I do a lot of eating on the run.

Breakfast:

-- coffee

-- banana

Snack before morning worship at church:

-- apple

Coffee hour after worship:

-- watermelon

-- piece of cheese

(most stuff on the coffee hour table has gluten)

In the car on the way to the retirement community:

-- cheese stick

-- rice cakes

Dinner with the assisted living ladies:

-- tea

-- salisbury steak, mashed potatoes, carrots

After I got home:

-- gin and tonic, sorely needed. lol...

Might have a piece of chocolate before I go to bed. B)

I am intolerant to casein in addition to gluten, so can't have ice cream and treats like that, and just starting my 6th week of this. But I am content because I feel so good most of the time these days:

Breakfast was one egg, scrambled in olive oil, small amount of white potato hash browned.

Lunch - Cold chicken, brocolli, carrots, avocado salad w/lettuce and homemade russian dressing (Bragg's apple cider vinegar, Annie's organic ketchup, olive oil and a bit of raw honey)

Supper - Chicken, sweet potato, more salad with leftover dressing from lunch, + steamed broccoli, cauliflower, carrots & vidalia onion pieces, homemade iced tea with lemon

In between, lots of water!

This is not a typical day, but it's an example of the variety of foods we can eat.

Breakfast: Key Lime Pie Larabar scarfed down before church

Lunch (more like second breakfast): banana, string cheese, coffee

Fathers Day dinner (we invited my parents and cooked for them): corn chips and salsa, homemade smoked ribs with homemade BBQ sauce, grilled marinated chicken breasts, from-scratch crockpot baked beans, quinoa salad with lime, mint, cilantro and tomatoes, red cabbage and carrot slaw with soy (gluten-free) and ginger dressing. I washed mine down with a Redbridge beer.

Dessert: Peach crisp and vanilla ice cream

Still digesting. Probably will eat something light before bed.

I ran out of potatoes and rice and need to go pick some up so today I've had:

a banana

a spoonful of nutella

a small can of redbull

a delicious salad with mixed greens, mushrooms, tomatoes, cheese, cucumber seasoned with salt and pepper.

having gone out to get potatoes and rice I'll eat a way better dinner- probably brown rice seasoned with Thai Spice with broccoli, carrots and chicken.

I've also devoured half a small tub of Haagendaaz Vanilla Icecream while wandering the interweb.

I can see my eating habit for today has been pretty terrible now that I've written down.

Breakfast was ham on Udi's bread with mustard and sweet pickles

Lunch was T-bone steak, baked potato, macaroni and cheese, fresh cucumbers and fresh fruit

Dinner was fried fish and french fries with watermelon

Dessert was a glass of milk and a piece of chocolate coconut cake

Just realized that I didn't have more veggies. I usually eat much more fruits and vegetables on a daily basis but because it was Father's Day we were eating at other's houses.

Just curious ... Why do you avoid grains and sugar? I have a diagnosed (ELISA blood test) IgG mediated allergy to cane sugar (as well as dairy, soy, eggs, vanilla and nutmeg)? Are you also allergic to cane sugar? Do you have allergies to specific grains (besides gluten intolerance)?

Upon awakening: hot green tea

Breakfast: yogurt with Trader Joe's gluten-free granola & sliced banana, toasted slice of Udi's bread with sunflower spread

Brunch: garlic-encrusted baked polenta with poached egg, sauteed kale

Snack: iced green tea, strawberries

Dinner: went out for Senagalese food!

baked tilipia (fish), carrots & yams in a tomato sauce with rice

I began avoiding grains and sugar as a means to lower my blood pressure. Worked like a charm--my doctor ended up cutting my meds from 2 down to half of one. After a while, I began to add some back--not a lot, mostly rice, corn, and gluten-free bread and a little ice cream.

What happened was that I started having what feels like hypoglycemic episodes. They tend to happen when I eat rice or bread--it's very odd. I had bloodwork recently and my blood sugar number was good.

I have gone back to avoiding the grains and sugar--and can feel the difference. I have had skin-prick allergy testing for many foods and came up negative for all of them. Regardless, I will stick with what makes me feel better.

Skin prick tests only exclude IgE mediated food allergies or skin sensitivity allergies. They can't diagnose IgG or IgA delayed reaction allergies. For those allergies, blood tests are more effective.

I've also noticed hypoglycemic reactions to eating high sugar or high carb foods, unless I balance those in a meal with low glycemic fats, proteins and low carb, high fiber foods. I can eat grains, but I eat small amounts with vegies and protein. You'll notice from my 'menu' that I add almond butter, hazelnut milk, and chopped pear to my Bob's Red Mill 'Mighty Tasty' hot cereal. Without those additions, I'd be hungry an hour after my meal. With those additions, which lower the total glycemic index of my meal, I can go 4 hours without feel hungry after that bowl of hot cereal.

      @BlessedinBoston, it is possible that in Canada the product in question is formulated differently than in the USA or at least processed in in a facility that precludes cross contamination. I assume from your user name that you are in the USA. And it is also possible that the product meets the FDA requirement of not more than 20ppm of gluten but you are a super sensitive celiac for whom that standard is insufficient.

      No,Lindt is not gluten free no matter what they say on their website. I found out the hard way when I was newly diagnosed in 2000. At that time the Lindt truffles were just becoming popular and were only sold in small specialty shops at the mall. You couldn't buy them in any stores like today and I was obsessed with them 😁. Took me a while to get around to checking them and was heartbroken when I saw they were absolutely not gluten free 😔. Felt the same when I realized Twizzlers weren't either. Took me a while to get my diet on order after being diagnosed. I was diagnosed with small bowel non Hodgkins lymphoma at the same time. So it was a very stressful time to say the least. Hope this helps 😁.

      @Jmartes71, I understand your frustration and anger.  I've been in a similar situation where no doctor took me seriously, accused me of making things up, and eventually sent me home to suffer alone.   My doctors did not recognize nutritional deficiencies.  Doctors are trained in medical learning institutions that are funded by pharmaceutical companies.  They are taught which medications cover up which symptoms.  Doctors are required to take twenty  hours of nutritional education in seven years of medical training.  (They can earn nine hours in Nutrition by taking a three day weekend seminar.)  They are taught nutritional deficiencies are passe' and don't happen in our well fed Western society any more.  In Celiac Disease, the autoimmune response and inflammation affects the absorption of ALL the essential vitamins and minerals.  Correcting nutritional deficiencies caused by malabsorption is essential!  I begged my doctor to check my Vitamin D level, which he did only after making sure my insurance would cover it.  When my Vitamin D came back extremely low, my doctor was very surprised, but refused to test for further nutritional deficiencies because he "couldn't make money prescribing vitamins.". I believe it was beyond his knowledge, so he blamed me for making stuff up, and stormed out of the exam room.  I had studied Nutrition before earning a degree in Microbiology.  I switched because I was curious what vitamins from our food were doing in our bodies.  Vitamins are substances that our bodies cannot manufacture, so we must ingest them every day.  Without them, our bodies cannot manufacture life sustaining enzymes and we sicken and die.   At home alone, I could feel myself dying.  It's an unnerving feeling, to say the least, and, so, with nothing left to lose, I relied in my education in nutrition.  My symptoms of Thiamine deficiency were the worst, so I began taking high dose Thiamine.  I had health improvement within an hour.  It was magical.  I continued taking high dose thiamine with a B Complex, magnesium. and other essential nutrients.  The health improvements continued for months.  High doses of thiamine are required to correct a thiamine deficiency because thiamine affects every cell and mitochondria in our bodies.    A twenty percent increase in dietary thiamine causes an eighty percent increase in brain function.  The cerebellum of the brain is most affected.  The cerebellum controls things we don't have to consciously have to think about, like digestion, balance, breathing, blood pressure, heart rate, hormone regulation, and many more.  Thiamine is absorbed from the digestive tract and sent to the most important organs like the brain and the heart.  This leaves the digestive tract depleted of Thiamine and symptoms of Gastrointestinal Beriberi, a thiamine deficiency localized in the digestive system, begin to appear.  Symptoms of Gastrointestinal Beriberi include anxiety, depression, chronic fatigue, headaches, Gerd, acid reflux, gas, slow stomach emptying, gastroparesis, bloating, diarrhea and/or constipation, incontinence, abdominal pain, IBS,  SIBO, POTS, high blood pressure, heart rate changes like tachycardia, difficulty swallowing, Barrett's Esophagus, peripheral neuropathy, and more. Doctors are only taught about thiamine deficiency in alcoholism and look for the classic triad of symptoms (changes in gait, mental function, and nystagmus) but fail to realize that gastrointestinal symptoms can precede these symptoms by months.  All three classic triad of symptoms only appear in fifteen percent of patients, with most patients being diagnosed with thiamine deficiency post mortem.  I had all three but swore I didn't drink, so I was dismissed as "crazy" and sent home to die basically.   Yes, I understand how frustrating no answers from doctors can be.  I took OTC Thiamine Hydrochloride, and later thiamine in the forms TTFD (tetrahydrofurfuryl disulfide) and Benfotiamine to correct my thiamine deficiency.  I also took magnesium, needed by thiamine to make those life sustaining enzymes.  Thiamine interacts with each of the other B vitamins, so the other B vitamins must be supplemented as well.  Thiamine is safe and nontoxic even in high doses.   A doctor can administer high dose thiamine by IV along with the other B vitamins.  Again, Thiamine is safe and nontoxic even in high doses.  Thiamine should be given if only to rule Gastrointestinal Beriberi out as a cause of your symptoms.  If no improvement, no harm is done. Share the following link with your doctors.  Section Three is especially informative.  They need to be expand their knowledge about Thiamine and nutrition in Celiac Disease.  Ask for an Erythrocyte Transketolace Activity test for thiamine deficiency.  This test is more reliable than a blood test.       I have been diagnosed with celiac in 1994, in remission not eating wheat and other foods not to consume  my household eats wheat.I have diagnosed sibo, hernia ibs, high blood pressure, menopause, chronic fatigue just to name a few oh yes and Barrett's esophagus which i forgot, I currently have bumps in back of my throat, one Dr stated we all have bumps in the back of our throat.Im in pain.Standford specialist really dismissed me and now im really in limbo and trying to get properly cared for.I found a new gi and new pcp but its still a mess and medical is making it look like im a disability chaser when Im actively not well I look and feel horrible and its adding anxiety and depression more so.Im angery my condition is affecting me and its being down played

      Wondering if anyone knows whether Lindt chocolate balls are gluten free. The Lindt Canadian website says yes but the Lindt USA website says no. The information is a bit confusing.
