  1. I can't eat starches (found in the garlic and onion powder) so I thicken my 1 lb. meat by browning it with a food-processed small sweet onion. Just throw that onion in the food processor and grind it up until it's in really small pieces. Brown the hamburger with the onion and it smells delicious! Then (to taste) add real garlic - 2 cloves, 1 T chili powder...
  2. Hives is an allergic reaction that will show up right after eating a food you are allergic to. Do you know if you are allergic to a certain food? Intolerance side effects can show up long after you eat the food, so your D might be a reaction to food you ate yesterday. Do you keep a food diary? That will help you pin point which foods are giving you...
  3. I also had to eliminate other foods to get rid of the night sweats. Another help for me? I got new pillows. I'm not sure if it was the filling of the old pillows, or if the old pillows were just... old.
  4. This is one of the worst tests I've had. Barium was so awful to drink. My doc was looking for a hernia when he did the test. I might have thought it was awful because I have a really small stomach and they made me drink a ton of the stuff - I had it done pre-celiac diagnosis in 1998. I felt so bloated after. It's really chalky and thick. Kinda like a really...
  5. I have always had tough side effects from gluten. I'd writhe in pain and have to stay home for days because I couldn't be 20 feet away from the toilet. Migraines, vomiting, cold sweats, etc. But the other day it happened. I was in such terrible pain that I had my son take me to the ER. I tried to wait it out, but it kept getting worse and worse. By the...
  6. I also notice a dramatic change! Since I started eating healthy and my vitamin/mineral levels are normal, I rarely get any colds. Before, I got sick if I heard someone sneeze.
  7. You've asked a lot of questions, but I'll give you a tip on one thing I wish I had known... Don't eat the same thing every day. When I first went gluten-free, I started eating apples and peanut butter for lunch every day. I did this for a long time. Now I'm intolerant to peanut butter. :-( Vary your diet. Also, allergy and intolerance are different...
  8. Me too. I went on my elimination diet last May and introduced one food every 4-7 days. Since I found that I'm intolerant to many of the "staples" of my previous diet, I've been trying foods that I've never had before. I used to be a really picky eater, but since I'm forced to try new foods, I'm learning to enjoy the experience and the tastes of things that...
  9. Thank you all for your kind replies. There are times when I just need to reach out and get some sympathy. :-) I feel much better today. @Rusty: What a positive attitude! It's inspiring. I need to put "This to will pass. Hang in there" on a sticky note and put it on my monitor at work. @Eat: Yikes! I've been taking Ibuprofen several times a day almost...
  10. @Googles: It is hard to share a kitchen and no matter how careful you are, there will be times that you forget to put your cookware away and something will get shared by your roommate. Here's a hint: Buy "slick" cooking and kitchen items. Gluten can't stick to metal and glass and Pyrex - it slides off when washed. So if you use slick cooking and kitchen items...
  11. Do you have other symptoms when eating nuts? Do you get a rash, stuffy nose, or swelling anywhere? If so, you may have a nut allergy.
  12. My glutened symptoms are changing and I'm mad about that. (toning down my words a bit so not to offend) I ate leftovers for lunch 2 days ago and got my immediate symptoms of bloating and gas, etc, but my residual symptoms are quite different this time. First of all, these were LeftOvers! Why did I get glutened from LeftOvers??? I'm not going to dwell...
  13. Agree - it's probably another intolerance. That's why I continued to have symptoms. Good luck!
  14. Your story hits a nerve for a lot of people. It takes a long time for most of us to get the right diagnosis because Celiac (wheat sensitivity) presents itself so differently in everyone. There was a time when I was also thought to have MS and that was one of the hardest for me to emotionally cope with. I has so many specialist doctors, and no one talked to...
  15. What kind of elimination diet did you go on? What foods did you start with? Did you stay on those basic foods until you felt better, and then add new foods? If you didn't feel better after you started your "strict" elimination diet, then food might not be your problem. I'm on the Specific Carbohydrate Diet and I feel worlds better than when I was gluten-free...
  16. Daily stool softeners are not good for long term use. You'll get hooked on them and then you can't go without them. They're "laxatives" hidden under the name "stool softeners". I've had constipation since I was a baby, too. I don't eat gluten, soy, corn, sugar, grains, or dairy. The two that I ditched that were most helpful for my constipation were dairy...
  17. Me too. The women who've given you advice are very smart. I just wanted to make sure you're getting a balanced diet. You need all kinds of nutrition to stay healthy. Initially, going gluten-free helped tremendously. My hair stopped falling out. But it wasn't until I stopped eating corn, soy, dairy, and sugar that it started growing back in again. Now...
  18. My doctor said basically the same thing. I went in for a check-up recently and I listed all the medication I was on and talked about Celiac and misc other diagnoses. I said, "I know, it's a lot." She said, "Not at all, you're very healthy! Just look at the people around you and look at what they have to live with." So I did. And I am healthy! I can work,...
  19. Could you be pregnant? :-) That's the first sign for me. Or you could have a case of food poisoning or the flu. If I were you, I'd go see my doctor. But I have a lovely doctor and I know that a lot of people on this board feel differently.
  20. I've taken Topamax for 11 years. It's a wonder drug for me. I certainly have some of the side effects, but I've learned to adapt and my close friends and family have, too. The short-term memory thing is the worst, but it's better than biweekly migraines. ;-) I've been thinking of backing off now that I've been gluten free for a while, but I'm afraid of the...
  21. The nice thing about this is that you'll get to step out of your comfort zone and try a world of flavors that you didn't know could be combined to make wonderful flavors! garlic (fresh) ginger (fresh) sea salt extra virgin olive oil (the darker the better) FRESH black pepper (get a pepper mill - so much better than preground) lemon juice (fresh -...
  22. It's not necessarily something more scary than a migraine. Sometimes you can notice symptoms of a migraine coming on and they may be particular to you. My suggestion is to keep a food log. If you can track your food and then have these warning symptoms, you might be able to catch the offending food. For me, I can tell a migraine is coming soon when I...
  23. I don't know if this counts because it's not my "story" that's changed lives, but rather my lifestyle. We often have food-based events at work that are either catered or someone goes and buys food for the meeting, lecture, or conference. Before I was diagnosed, the food was typical for these kinds of work-events that many businesses hold: bagels, cookies...
  24. I find it so awesome that people have self-diagnosed. I'd never heard of Celiac before my (new at the time) doctor told me about it. I'm quite embarrassed to say that I didn't know what gluten was, either. I was quite blissfully ignorant to have a thick file full of other diagnoses and various pills or treatments for fixing them (actually they're all electronic...
  25. I'm 40 yo 5'5" now, I was 5'6" when I was 25, but due to osteoporosis from Celiac, I shrunk. My bone mass is back to normal so I shouldn't shrink anymore.
