Yes, cheeses are generally considered to be gluten-free with very few exceptions. Our family eats that particular one regularly with out issues.

Consider California olive oils, as they seem to be very pure, and as @RMJ mentioned, look for certified gluten-free ones. -

Approximately 10x more people have non-celiac gluten sensitivity than have celiac disease, but there isn’t yet a test for NCGS. If your symptoms go away on a gluten-free diet it would likely signal NCGS.

Possibly, but there used to be a movement within the celiac disease community to just tell restaurants that you have a deadly wheat/gluten allergy to, hopefully anyway, ensure that your meal is actually gluten-free. Your son has two positive blood tests for celiac disease, plus a positive biopsy for it...why hasn't your doctor diagnosed him with celiac disease, which is the most likely diagnosis based on the test results you shared? The next step should be a gluten-free diet, which your doctor already recommended.
