Post a listing of everything you've eaten and drank in the last 48 hours. Incclued brand names and how (and in what) it was cooked. Remember to list anything that goes into your mouth; soda, toothpaste, mouthwash, candy and additions to coffee/tea. I have never in my life been a bread person. So when I went gluten free I really didn't miss the bread. I missed a good french bread for pastas and french dip sandwiches. But this Udi bread is making me a bread fan. I picked up four more loaves today for the freezer. Will have to try that bake it yourself gluten-free french bread. Off to check the website... -

I called Wind and Willow to find out if their Tiramisu Cheeseball and Dessert Mix was gluten free. They had to find someone who knew the answer so I was put on hold for less than a minute. Sometimes you do not have symptoms but that does not mean it can not do damage. You may be one of those people that needs a certain amount of gluten to trigger symptoms. You can track how you feel over the next few day. Also have someone else track your moods in case it produces symptoms that you may not notice. -

Udi's gluten-free pre-made bread review (was frozen at the store). I vote for this. I was just at the local Fresh and Natural store when they showed me some of this bread. I do not own muffin pans so I looked at muffin pans today thinking about this pumpkin recipe. I may have to go back tomorrow to buy them. I found extra large muffin pans, only 6 muffins to one pan at a cost of $18 each at Bed, Bath and Beyond. Yep, I'm going to get them just for this recipe. The things we'll do for a good muffin! -

LALady, You already have the proof you need. You are intelligent and resourceful enough to decide if you need to be gluten free without spending a ton of money on tests that can and do show false positives. It is not all in your head. Trust yourself. Keep a food diary if you need written proof. -

You may find after you have been off soy and dairy long enough you will be able to eat them. Once the intestines heal some people add them back into their diet. I believe most people are saying stay off dairy and soy 6 months to a year. I was off dairy for 6 months before adding it back without problems. It's will worth the healing time. -
