I would agree that baking with regular flour is likely to make even typical celiac sick. Did you use regular flour? If this is something that you often do, maybe you caused more flour to become airborne this time. I think that the other things that you mention would require a significantly higher level of sensitivity. -
To be fair, he did say that some people need a gluten free diet for medical reasons. He was making fun of people who eliminate it for fad reasons who don't even know what it is. These are the same people who make restaurant staff not take us seriously because they order gluten free for their meal and then have a gluten containing dessert. Those people...

I am sorry for offering suggestions that you think are not possible. I have many years of experience with this condition and apparant cc where I didn't think it was possible. In other words, the item can be processed in a shared facility even if the statement is not there. You would need to look online or contact the company to find out for sure. I use Country Life zyme-aid and they seem to be working. I can eat high fat things without diarrhea that give me diarrhea without the enzymes. They contain enzymes that digest fat as well as a bunch of other stuff. I chose that brand because it is certified gluten-free.- 88 replies

While it may be impossible for gluten to get distilled, it is not impossible for gluten in the facility to contaminated the distillate. The fact that many producers list allergens in a facility on the label would indicate that it can be a problem. It is very hard to be certain where a reaction originates.

I agree that there is a difference with feeling symptoms. I think there is a difference in how our autoimmune reactions occur. I agree with the build up of small amounts of cc. I've felt that too. There also seems to be a stress/anxiety component. There is so much to be figured out still. -

It will get better. A lot of us have faced this. It can take awhile to learn enough about being gluten free. It can take awhile to heal. You could use a doctor who will be more helpful. I remember my daughter couldn't race one day when she was on the cross country team at school. When she tried to explain it to the coach he asked her why she had eaten gluten. I had that problem and noticed that it was worsened by high fat and protein. Digestive enzymes cleared it right up. The doctor thinks it was pancreatic insufficiency.
