Hello & Welcome wow, you have quite a laundry list...your blood work may be not accurate if you were already cutting out wheat. For correct blood work one needs to be consuming lots of wheat. Some say at least two to four slices of bread on a daily basis or some equivalent to that amount... Many of your laundry list is relative to celiac & other illness... -

As I understand the labeling law that the product stating gluten-free on the label must be under 20 ppm....which doesn't make it totally gluten-free at 100 %. If I were a super sensitive celiac I would not try any product like that but many can get away with under 20ppm..... I can say for us these are oh hum.... wouldn't purchase again... but Van's cheese... -

there are about 300 or so symptoms of celiac disease. Please do not stop eating wheat before being tested in July. IF you have already stopped eating gluten before, your testing is worthless & a waste of insurance money. You need to be consuming a large amount of gluten for proper testing results...plus you may not have celiac disease but be gluten sensitive... -

Bi-Aglut is one of the best.... for fresh pasta, Rp's is excellent , I use that for cold pasta salads , holds up wonderful......there are a few new brands that will be available later in the year.... Tinkyada is not a favorite but it is an easy find.... With Bi-Aglut most gluten eaters have no idea they are eating... -

pricklypear I'm with you , skimming off the watery liquid... it is the water content of the tomatoes. Olden days the tomatoes were not like that so the Italian grandma's like mine didn't have to do that step....Our plants are not the same as in years & years ago....The skimmed liquid is hardly visible of any... -

Tomatoes have lots of water/juice. When cooking tomatoes down for sauce or canning you need to skim off the liquid that usually floats to the top or continue the all day, all night cooking... I'm a canner & I always remove the excess liquid or one ends up with 1/2 quart tomatoes & 1/2 quart of water....I... -

old thread but just to note..years ago GC was a tiny tiny bit helpful... But the last two years every GC in five states has been horrible, dirty place, dirty dishes. inferior food items,... usually no English speaking people behind the cooking stations...We have walked out of many ..... wouldn't eat there now...

My two cents worth is::::::: NO to the word"CURE" whether celiac of gluten sensitive... Both can be managed & controlled by a 100% gluten free diet... And for some people it may take a while for them to start to present with gluten issues. So this person may be one that after going off gluten has become less sensitive... -
