I don't really think about stuff I miss cause just about anything can be made gluten free and at almost 5 years I don't really remember what gluten stuff tasted like. New foods discovered are better like parsnip "mashed potatoes", eggplant and fennel. Have discovered how much I love and crave veggies. -

The rule of thumb on healing is six months to two years, even four years depending on how old you are, how sick you were etc. At two weeks it is to be exoected that you will have ups and downs. But how encouraging that you are feeling so much better so quickly!- 8 replies

Practical Paleo by Dianne Sanfilippo is my favorite. Even if you aren't into the paleo lifestyle all the recipes are naturally gluten free and very easy! I was never into cooking until I found this book. Well worth the money!!

I have also read that same thing, although I don't remember where so can't quote the source but it was just a month or so ago. Also they can be difficult to digest. -
Rice, quinoa are in the grain family and they may not work for you right now as they can be difficult for some people to digest. Perhaps some time down the line as your gut heals you may be able to reintroduce them into your diet if you wish. My niece is a vegan and know she eats tons of veggies. Is fish an option at all for you. That's a tough one as...

"Awkward" sort of goes along with celiac I think, especially in the beginning. My first dinner party with friends after diagnosis I took my own little plate of food. When I (and my plate) sat down there was total quiet as everyone stared at me. At that time I was not a cook in any way, shape or form! The only comment made by anyone was "Oh, what is that"... -

Pile your plate with lots of your own dressing, corn bread & desserts and be sure you go first. Even if it means scooping out your portions as it comes out of the oven. My first year filled my plate first I hid my plate in the laundry room till time to sit down! lol Get involved with the food prep so that you know exactly what you will be eating. And... -

I agree! It's moms job to make sure her child has safe foods. Perhaps once she become more accustomed to the ins and outs of g.f. eating she will calm down. The more upset she is the worse it is for her child. Stashing some items in a small cooler makes life a whole lot easier. That said.....this is a learning process! -

I couldn't live without puppy kisses! We feed Natural Balance grain free. You have to watch any foods or treats that even say "gluten/wheat free" as they sneak in barley or oats! Raw food diet is also a good way to go. I don't do that we have three and it can get a little pricey but worth checking into. Also for treats we use g.f. Chex. -

Kraft is very good about calling out allergens. That said you may want to look at the list of ingredients that are in the product. Any one of those, or all, are probably not healthy and your body may quite possibly be reacting to that! -

GFinDC - I agree! Sometimes we have glutened-like symptoms after eating and/or drinking but those symptoms are Not related to any gluten at all. Read the ingredient list. Take note of all of the additives and chemicals that are in candy bars and soda's (not to mention other processed foods). Those additives are most often the cause of our discomfort... -

Mouth sore were one of my first symptoms before being diagnosed six to eight of them at a time. I still get them from time to time now but usually they heal over night. He might be getting some gluten from some place.... In the meantime you might ask the doctor for Miracle Mouth if his sore are over the top bad. It's a prescription that numbs the mouth... -

Kareng - Thanks for posting the link for the glutenease, digestgluten etc. I cringe when I hear people suggesting those products. The last big celiac convention that I attended some of the leading celiac doctors addressed those "gluten aids" stating that they are basically a waste of money.- 9 replies

I so agree!!! Some time back I went into a regular bakery to buy my son a special loaf of bread. omg!! To me, the smell was nauseating and my nose felt like it was on fire! Fast food places stink! lol -
There is a lot of meat for protein on the Paleo diet. No beans as those are hard to digest. If you choose to try it you could probably skip the beans, grains and dairy (which are harder to digest anyway) and load up on the veggies. Maybe some fish ? What I love about the Paleo way is the many ways of fixing veggies. The book I suggested has wonderful...

I don't understand "kinda sorta" celiac, however if gluten makes you sick then you don't eat it, right? That would be enough of a diagnosis for me! If I am glutened it results in severe vomiting, diarrhea (followed by days of constipation) and passing out so those symptoms are "normal". Although is anything normal when it comes to Celiac? I don't know of any mainstream sodas that have gluten. To avoid some of the nasty stuff in soda you might want to try something organic. I lo0ve an organic root beer now and then.
