ARCHIVED Gluten Free Baking: Tastes Funny!
MelindaLee replied to michayla's topic in Gluten-Free Recipes & Cooking Tips
I don't care for Bob's due to the bean flour as well. I really like King Arthur's, if you are going to use an AP flour. I did at first when baking, now I have a pretty diverse supply of different flours/starches. -
ARCHIVED On My Way To Gluten-Free Bakery
MelindaLee replied to TPT's topic in Coping with Celiac Disease
I'm in Green Bay, Wisconsin. Wish I was closer. I think it could work here...I just need to find a business person to advise me. -
Is it for sure this meal? I usually don't get symptoms until 4-6 hours later...so usually it's not what I just ate, but the meal before....

Hey Girl, So glad to hear your wonderful story. I too feel so much better, most days I don't even care that I can't eat some foods. We have lots to be thankful for! This is a great week to remember that! Melinda

ARCHIVED On My Way To Gluten-Free Bakery
MelindaLee replied to TPT's topic in Coping with Celiac Disease
My goal one of these days is to start a bakery. gluten-free of course. I have to figure out how to do this, though, as I have 0 business sense! Anyone want to help??? -
ARCHIVED Modified Food Starch?
MelindaLee replied to Monklady123's topic in Coping with Celiac Disease
Kinnikinick's (sp??) has gluten free grahm cracker crumbs. I used it for pie and then today for layer bars. It does seem to stay a little moister, so today I mixed in just a bit of rice flour. Half the pan of bars is gone and even my dh loved them, and he doesn't usually like gluten-free carbs. -
I also like the Ancient Harvest Quinoa. My DH who doesn't appreciate many gluten-free foods likes this and doesn't notice a difference. I did find that if you order it online you can get a better price, however, it was on sale at my local grocery store recently. It's the one I find most commonly in the local grocery stores.

ARCHIVED Celiacs And Relationships
MelindaLee replied to sfamor's topic in Coping with Celiac Disease
My thought Sfamor, is to do all that you can muster to do the things she wants once in a while. I totally understand the fatigue and fuzziness, but you'll feel the same way sitting on the couch as you will doing something with her. I realize sometimes things might be more that what you can handle, but try to do it when you can. Sometimes what holds us... -
When I spoke to Hersheys they stated the regular size are gluten free. (I have eaten my share to be sure that they are fine ) I know the other sizes they can't guarentee as they do not have a dedicated line and other things might be made on the line that aren't safe. The same with their milk chocolate bar...other sizes may not be okay due CC issues.

ARCHIVED Horses, Hay And Feed
MelindaLee replied to taweavmo3's topic in Gluten-Free Foods, Products, Shopping & Medications
My only other thought is the dust from oats, if they are feeding oats. Others have talked about flour getting into their nose and therefore into their stomach. Usually oats aren't ground like a flour, so the risk would be smaller, but I do remember dust in the feed when I had my horses. Usually it was at the bottom of the bag when filling bins, so I don... -
ARCHIVED When Did They Lose Their Manners?
MelindaLee replied to Nor-TX's topic in Coping with Celiac Disease
I have laughed and agreed with so much in everyone's posts. I think we have ended up here because parents feel guilty over the lack of time they spend with their children. Lots of families are two income (or single parent). The kids lose that parent that correct them when they are rude, the parents give too much to compensate for the time they don't spend... -
Same for me, except the HIDA scan was not conclusive. During the HIDA scan, they give you a medication to cause your gallbladder to contract as it does with digestion, this tells them how it is functioning. Mine did function, but the pain was reproduced during that portion of the test. That is what made by GI confident the gallbladder had to come out,...

My favorite are Kind bars and Nature Valley Nut Crunch. There are others out there that are gluten free, but I don't find them as economical, given their size.

I bake both gluten and non-gluten items in my oven (in pans) with out any issues. I can see where cooking on the rack can cause an issue, but if it's in the pans, I can't see where it should be a problem. (Please, correct me if I am wrong..all you more experience ones!) some people are very sensitive and have reactions over very small amounts of gluten...

I was having pain on the right side, under my rib cage after eating. I was certain it was my gallbladder. I had tests done, which were inconclusion. They did an edoscopy and colonoscopy to rule out anything else. That is actually when they found my celiacs. My gallbladder is out and I don't have that pain anymore. Though I didn't have stones, my gallbladder...

I have eaten lots of potato chips with just watching the ingrediants without any issues. Lays have just the potatoes and oil on the lables. They don't usually have the "processed in a facility that also process..." phrase either. I am cautious of the flavored chips as there are many more ingrediants and I think more likelihood it could come in contact...

ARCHIVED Gluten-Free Pie Crusts
MelindaLee replied to MindytheOrganist's topic in Gluten-Free Recipes & Cooking Tips
I haven't tried this yet, but this was on a thread a while back. Vinegar Pastry by Betty Hagman. This makes two crusts. 1 c white rice flour 3/4 c tapioca flour 3/4 c cornstarch 1 t xanthan gum 3/4 t salt 1 T sugar Combine all of the above. Cut into it: 3/4 c shortening. Blend together: 1 egg, lightly beaten 1T vinegar Add this to the flour... -
ARCHIVED Are People Just Ignorant Or Inconsiderate?
MelindaLee replied to jasonD2's topic in Coping with Celiac Disease
I know my DH is ignorant about it. It's still relatively new to us as I've only been diagnosed 3 months. The other night I fixed a plate of cheese and sausage with some fruit. He plunked his gluten filled crackers right in the middle. I think he was hurt when I said I couldn't eat any of it now. One time I asked if he forgot...didn't care...or didn't... -

MelindaLee replied to GFM's topic in Gluten-Free Foods, Products, Shopping & Medications
