  8. I really don't have experience baking with corn starch. I just haven't tried it. As far as weighing flours go, I find my flour mixes turn out better (thus my baked goods) if I weigh the flours going into the mix.   10. I'd grill or roast meat - leave the no salt person's piece without salt and season the rest. Meat is high in iron, right? I'd think shrimp would run the risk of high salt-ask the person if its ok for them.

  18. Broths, stocks, soups. I suggest making them. Boiled/broiled/roasted meats. Thoroughly cooked fruits and veggies.
  19. There's a good chance only one celiac blood test was run. There are several. Get the lab results and see. In the interim, stay on gluten and if the results are missing tests, request they are run ASAP. Then get off gluten.
  20. Pudding. There are lots of recipes out there using milk alternatives. Lots using coconut milk, cream. Lots of recipes on the web in a zillion flavors.
  21. Yes. Kiss him on the cheek until he brushes his teeth. Ditto for eating gluten. If mine eats a gluten-free meal after the gluten, and it's been at least two hours I generally don't worry about it. But he's pretty conscientious about remembering to brush. And don't share food, utensils, or glasses along the same guideline.
  22. I suggest you get everyone tested before going gluten-free. If your pcp refuses, insist. If that fails there are online labs you can order the labs from (you go to a local lab for the draw). You will need school support for the gluten-free diet there. Usually, that's a doctor's note.
  23. Last year I seemed to catch mild versions of everything my husband and son brought home. This year not as much. I swear I get a mild version (milder than sick family members), recover, then it hits hard a few days later. Feels like two bugs but it happens like that more often than not so I'm thinking its a pattern for me.

You need free t3/t4 tests to see how your hormones are doing, and even if those are normalish you deserve a trial on thyroid meds.
