ARCHIVED Garlic Bread Or Breadsticks
happygirl replied to StrongerToday's topic in Gluten-Free Recipes & Cooking Tips
I second the idea of using hot dog buns! I use glutenfree4me (a bakery in PA), cut them in little slices, and add seasonings to taste. I LOVE it and so does my husband and mom (both non-gluten-free). I buy them, keep them in the freezer, and pop them out ....takes less than 5 min to thaw, season, heat in oven, etc. -
ARCHIVED Outer Banks Gluten Free
happygirl replied to blueeyedmanda's topic in Traveling with Celiac Disease
aw, blueeyed, definitely go there!!!! My husband grew up going to the Outer Banks every summer with his whole family.....and the first time he took me, he proposed to me on the beach. So I have a special place in my heart for it. We have gone twice since being diagnosed. The first time, I ate out once (just ordered plain seafood, cooked in butter... -
ARCHIVED Mushroom Soup
happygirl replied to Kiki's topic in Gluten-Free Foods, Products, Shopping & Medications
Hey Kiki: Not sure if you need soup or a soup mix (like a seasoning packet). If you need soup, yes, the Progresso one that Lisa mentioned is gluten free. Also, Health Valley has a gluten-free cream of chicken and cream of mushroom soup. If you are lookign for a mix/seasoning packet, I'm not sure if I know of a mushroom one offhand. I use... -
I use mine just like normal, for most things. I use it to thicken sauces, soups, etc. For baking, I sometimes add a little bit of xanthan gum.

happygirl replied to LoveBeingATwin's topic in Coping with Celiac Disease
lbat, Welcome to the board! I am happy you have found this resource...it really is invaluable. Well, the good news is that you have a rock solid diagnosis! (Hey, we have to be grateful for little things sometimes, right?) Just getting a diagnosis is step one of all this, so at least you are past that. Now, onto the diet. Your body takes awhile... -
ARCHIVED Entrolab ?
happygirl replied to confused's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
If your IgG was high, it is indicative of a problem with gluten, regardless of if its Celiac or not. Many have only been positive on "one" test and most do better on the gluten free diet. I wouldn't be quite so sure to throw that test out the window. By the way, did you have the full Celiac panel done at your doctor's office, that includes the tTG and... -
ARCHIVED In The Wedding Party, Need Travel Friendly Food...
happygirl replied to tiffjake's topic in Traveling with Celiac Disease
Tiff: You made me laugh about the comment about your sister's wedding and the drama..... I was in a wedding the fall, and I'm in two this year (including my sister's), and attending another. I don't have much to offer since all the places we are going, even though out of town, I will be cooking full meals before hand, taking with me, and micro-waving... -

ARCHIVED Celiac Cure.... A Possible Pill To Cure Celiac
happygirl replied to PizzaGuy's topic in Gluten-Free Foods, Products, Shopping & Medications
DD: I fully respect your opinion! Debmidge: When I heard Dr. Paterson speak (2006), he presented it as you would take it before a meal in which you would consume gluten. I think he said like three times a day, before b, l, and d. I remembered thinking it was interesting, because even if someone were to use this drug, it would still benefit them from... -
Jo: Celiac is said to run in families because there is a genetic link to Celiac. There are two main genes that account for the majority of Celiacs. However, just having the gene doesn't mean that a person will have Celiac. About 30-40% of the American population has one or both of the genes, but only about 1 in 133 have Celiac (of which, 97% don't know...

ARCHIVED Looking For Tried And True Banana Bread Recipe
happygirl replied to ebrbetty's topic in Gluten-Free Recipes & Cooking Tips
Betty: Sorry it took me so long to get this to you. It is adapted from my mom's "normal" banana bread recipe (everything in our house is pretty much "adapted") Banana Bread 2 tsp vanilla 3/4 c sugar 1 1/2 mashed bananas (very ripe, 3-4 bananas) 3/4 c veg. oil 2 eggs, beaten with a fork 2 c "flour" of choice 1 tsp baking soda 1/2 tsp baking powder... -
ARCHIVED Bath And Body Works Lotions
happygirl replied to newg's topic in Coping with Celiac Disease
Well, the problem with the avena on the list is that we just don't know enough about oats to know if it is an official problem for Celiacs. Some researchers say that pure uncontaminated oats are safe, but some say that Celiacs may still cross react, etc. So, technically, we don't know if their oats contain gluten. Also----soy should not contain gluten... -

ARCHIVED Very Confused About 10 Year Old Son's Diagnosis
happygirl replied to jmoody74's topic in Parents, Friends and Loved Ones of Celiacs
Jen, Welcome to the board! I am happy you have joined us. Although, I am very sorry to hear of all you have gone through with your poor son. To be tested for Celiac, he needs the whole blood panel run. However, being gluten free for an extended amount of time negates the purpose of testing. Once you take gluten out of the diet, the body begins... -
ARCHIVED Celiac Cure.... A Possible Pill To Cure Celiac
happygirl replied to PizzaGuy's topic in Gluten-Free Foods, Products, Shopping & Medications
I believe it is the Stanford drug that is related to minimizing the effects of small amounts of gluten, whereas the AT-1001 drug is to stop the gluten reaction (taken like a lactaid, essentially).
