  1. I just got over a stomach virus (mostly over) and it sounds a lot like your symptoms. These suckers are going around now and they're highly contagious! Whole cruise ships full of people get hit with them. Just about everyone that was at my Thanksgiving dinner has come down with it, my neices's husband probably gave it to us all. I had vomiting, chills...
  2. Well... you'll probably need to go easy on whatever you make because MOST (not all) sugar alcohols can cause gas and diarrhea if eaten in sufficient quantity. What happens is that part of the sugar isn't digestible and it goes to the bacteria in your gut which digest it for you, and that causes gas and possibly other effects. Erythritol is the one SA...
  3. There's a bit link between celiac and thyroid disease (in fact all autoimmune diseases) so it is good you caught this! You might actually go into remission (on the Hashi's) if you're very good about being gluten-free. I've read there's a 30% chance of remission.
  4. Totally agree with Waywardsister. *wave* Fat isn't the issue, calories from unrefined carbs and starches are the problem. Fat makes you feel full and keeps you feeling full while carbs make your blood sugar bounce up high, which releases insulin and makes it plummet. That drop in blood sugar makes you hungry again. Eat plenty of protein at every...
  5. Open Original Shared Link. This is from a heart scan doctor's blog, very interesting blog! But it shows that even light smokers have these holes in their lungs. Yes... holes! Where no tissue exists. As a former smoker I can tell you that smoking even a little perpetuates the desire. You'll never rid yourself of the desire completely until you stop...
  6. Here's some info about Eosinophilic Esophagitis: Open Original Shared Link (I was curious, so I looked it up!) Basically it is food allergies causing inflammation of the esophogus.
  7. I did a bit of a freak out realizing I had to freeze my poop! Then I had to take it to work with me and put it in the freezer until I could get to a DHL drop off location. I was so freaked out that someone might open my container in the freezer. Of course it was wrapped up well and stuck into bag, inside a bag. But still! I was SO happy to get that stupid...
  8. Check out The Gluten File link in my signature. There's a lot there on neurological disorders, depression and anxiety and gluten sensitivity.
  9. If your husband doesn't want to get tested, would he just trial the diet for awhile and see if his symptoms improve? That was essentially how I went about it. My IBS disappeared in 2 days. Other things took longer to improve but for me, that result was almost immediate. That will sort of disqualify you from doing the blood test/biopsy route because...
  10. I think some people are fructose intolerant too. :\ That'd explain why it goes away when you cut out fruit.
  11. For my neurological stuff it took getting rid of dairy products too although a chunk of it was due to gluten. But some of the digestive issues cleared up very fast. Within 2 days of going gluten-free my crampy diarrhea ended. But other things are still improving and I've been gluten-free for over a year now. Good luck! You might want to try a "paleo...
  12. I haven't re-tried them again but I was having issues with sunflower seeds. They were coming out of me almost whole. But I think I found a supplement I was taking was giving me issues (Curcumin) and started taking Kefir and things are MUCH better. I should probably try the seeds again.
  13. I used to make a lot of chili in the crockpot. I would use (ingredients varied): Huge can of diced tomatoes (maybe 2 cans) Cut a pot roast into mouth sized chunks Can of black or pinto beans Cumin Lots of Chili powder (2-3 Tbl) Red pepper flakes (if I want it spicy) Sometimes I threw in a bag of frozen broccoli just for extra bulk Corn (frozen...
  14. So sorry about your Father-in-law. But you know, so many people I've talked to, like my sister, that show obvious gluten related problems just reject the information out-of-hand. And even if I did get her to take it seriously, she'd probably be negative on the celiac test and never try the diet anyway.
  15. Where do you live? In some places moss grows like crazy. I think it likes dampness. If you use something like Scottish Moss... good luck. I didn't have much luck with it in So. CA. Probably too hot and dry here. I just saw something on TV called "low-mow grass". I think it was creeping red fescue. You only have to mow it once a year. I was thinking...
  16. I make lemon curd all the time and I dump all the ingredients into the bowl at the same time, so not quite sure what you mean. Hmmm... although now that I think of it, if you added the butter before it got hot it'd be hard to whisk. (I don't put butter in mine). But basically as long as you get it up to 160 degrees it'll be fine. One time I had a curd...
  17. I thought this would interest some of us! Snippet: Open Original Shared Link Interesting points: Basically, the longer you're exposed to gluten, the more likely you'll get another autoimmune disorder. Mice with a predisposition to diabetes (Type 1) developed it less often when on a gluten-free diet. Similar study of humans too. If humans...
  18. Also, outside of forums like this where people get lots of support and guidance, the adherance to a gluten-free diet is probably pretty abysmal.
  19. I once lived on vegetables, fruits, nuts, seeds, and dried fruit (almost nothing cooked). It was a fad diet my Mom had us on. Anyway, just proves you can live on anything.
  20. celiac disease is much more than just villious atrophy. Those are just the people where the antibodies are attacking in the intestestines. Since it can attack any organ in the body, you might have celiac disease and never have any villious atrophy.
  21. One problem I forsee for you on a gluten-free diet is the carby gluten free stuff is even more highly refined and much starchier and higher in carbs than what you're replacing. I think everyone goes a little nuts on the gluten-free replacement foods at first, I know I did. I would suggest you adopt a diet that has plenty of whole foods that haven't had...
  22. I think their Gluten Free flyer is on their web site.
  23. You might want to give an elimination diet a try. The mucus issue sounds like dairy to me. And it isn't just lactose, there are lots of various proteins in dairy that people can have problems with. The Paleo diet works pretty well as an elim sort of diet. Also it sounds like you haven't been truly gluten free. You've really got to be fanatical about...
  24. I just heard someone say their Mom used stuffing to thicken the gravy. Use a stick blender on it. Shirley Corriher, well respected cooking expert: Open Original Shared Link
  25. I'm like you, I wouldn't go back to eating that stuff all the time. It caused other health problems too simply because my diet was too high in carbohydrates. But the pill would be nice for when you go out to eat and need to ensure that you don't get sick from cross contamination.
