  1. Maltodextrin can have wheat in the UI.S., but if so it absolutely must be listed in food and drink. Never seen dextrose or tomato juice with gluten. richard
  2. Somebody once upon a time alleged that canola was a problem for people with celiac but there's never been any proof whatsoever. I'm sure there are people who have problems with canola, just like there are people who have problems with almost anything, but it's not celiac related. richard

In addition, the gene test can show whether they have the genes, but that doesn't prove they have celiac. Only a small percentage of folks with the gene(s) have celiac.   9. I checked out the link and it also says to avoid buckwheat. We've known for many, many years now that buckwheat is perfectly safe as long as wheat flour isn't added. Canola is perfectly safe.   10. Sounds like all should be gluten-free. While most chicken has some "flavoring" added or "injected," it has to list gluten if it's there. richard

It could be that in the past items like citric acid and mono and diglycerides were indeed sometimes made from wheat, but those two items are no longer considered a threat.   15. The recipe given is how you make "real" mayo yourself. I use Hellman's, which I consider real mayo (as compared to Miracle Whip), but even Hellman's has ingredients one wouldn't use in a fresh, homemade mayo. And they do taste different. richard

In addition, it's my understanding that it doesn't matter how many labels you run, it's whether the product was packaged and labeled before Jan. 1, 2006, which sandwich meat would be, of course.   18. It's hard to imagine the alcohol used to extract flavor is the culprit here. First, the alcohol might not even be wheat. Second, it's distilled. Third, the amount is so miniscule it's not even measureable. richard

  23. I would guess, although can't say for sure, that the Delphi list is getting shorter in part because the labeling law is making it unnecessary to list some things. richard
  24. You absolutely MUST assume malt flavoring is barley based because it almost always is. However, you can check, because in very rare occasions it's based on another grain.   25. It's even simpler. In the U.S. any grain added to a meat must be listed. They cannot be hhidden. Some hams do have commercial glaze with wheat, so read the label. richard
