I just finished unpacking :D ....I'm settled. I just need to go get my books tomorrow and then I'm officially ready for anything. I went out last night with various people (not getting into trouble of course), but I decided that tonight I need to get my internet working, get my class list, and finish unpacking. I succeeded in everything except getting my class list....I was THREE minutes too late!!!!!

Hello hello :):) Well, about the muffins, I just moved into a house that happens to be about a block away from the place that sells them :o:D I swear I did not plan this on purpose :ph34r:, but I'm not complaining either. I'll keep you all updated on the muffin news as I continue recipe investigations :P

So...I started this new job that I really like, but I find it funny (yes I'm easily amused) that they often send me out to buy massive quantities of milk and biscuits. The first time I had to buy the milk I was a bit scared I was going to get the wrong thing b/c I've never really purchased milk before. :unsure: It was a totally foreign thing to me LOL Today I had to buy nine packages of chocolate biscuits. I don't know what my job title is (purchaser of the office gluten and casein?) I'm working for an accounting firm. I don't know what they do with all this stuff :huh: but I get paid well so I don't really question anything. The happy thing about the biscuit mission is I discovered an organic gluten-free cafe on my way to the store :). How ironic. Ooh I gotta run (they're probably about to send me to buy bread or something). Catch ya all later

Glad to hear that everything is going well and that you got a new job! That's great that you got a house. Should be much easier for you as far as cc issues. We will continue to await your muffin investigation. :D

Incredible Edible Gluten-free Food for Kids Banana Bread by Sheri L. Sanderson

Ingredients:

1/2 cup brown rice flour

1/2 cup rice flour

1/2 cup tapioca starch

1/4 cup potato starch

2/3 cup sugar

2 tsp baking powder

1 tsp baking soda

1 tsp xanthan gum

1/4 tsp salt

1/3 cup shortening

2 tbsp milk

2 eggs

1 c mashed bananas (2-3 med.)

1/3 cup chopped nuts (optional)

Method:

In a large bowl. combine brown rice flour, rice flour, tapioca flour, potato starch flour, sugar, baking powder, baking soda, xanthan gum, and salt. Cut in shortening until mixture is crumbly.

In another bowl, combine the milk and eggs, beating slightly.

Add half of the milk mixture. With an electric mixer, beat to combine. Add half the mashed banana and beat to combine. Repeat with remaining milk mixture and banana, beating between additions.

Beat the batter on medium speed for 3 minutes. Add nuts, if desired, and combine.

Pour into a greased loaf pan or three greased mini-loaf pans. Bake at 375 for 55-6- min. for a large loaf or 40-50 min. for mini-loaves or until toothpick inserted near the center of the loaf comes out clean.

Cool for 10 min. on wire rack. Remove from pan. Cool completely on wire rack before slicing.

Slice and store in an air-tight container or zip style bag in the refrigerator for a week to ten days.

~Linda's notes: I usually put in at least 1/2 of a personal size plain, unflavoured yogurt for protein and moistness. If I don't have yogurt I'll put in plain, unsweetened applesauce. I've never made a bad batch of these, and I bake this recipe every 3-4 weeks.

~I use small loaf pans. Four small loaves attached together in one pan. Each loaf is about 3"wide x 6"long x 2"deep. (I bake for 45 min.)

Good girl Morgan! The social scene has a way of sucking you in, it's great that you have your priorities set. If you balance the two you will do fine. I had a hard time myself doing that :ph34r:

How fabulous you live near the bakery of the oh so yummy almond meal muffins, now that is good thinking :lol: Hopefully you can get a recipe out of it for us.

I'm so glad you like your new job, sounds like an improvement from the last one :lol: They must like their milk and biscuits.

Let us know if and when you try out that gluten-free cafe.

There's no way to tell. It was bad before. It started a couple months ago ... I got off casein and it got worse. I've been tired and foggy ever since. Then it started to get a little better, and I got sick, Morgan got it, too, so I know it was a bug. Then I was still feeling bad in NC at my grandmothers and came home and still felt bad. I attributed it to probable glutening there (Chloe and Morgan both got d while we were there). So, I don't know if the ice cream bar will add to it or not. I don't really know if it's glutening, or something else. I've felt really bad to the point that I can't do much for quite some time now. Either one thing is running into the next, or I'm going through major detoxing. I'm eating very clean now and never away from home, so hopefully it will clear up soon, or I'll have to start figuring out what's happening.

And I'm good at planning stuff. And my degree (Poli Sci) made me cynical and able to BS anything. Yup, that was worthwhile :rolleyes:

Well, if I hadn't gone to that college, I wouldn't have met my husband, so I guess it was worth it :)

It was apparently also worthwhile for DH, since I ask him if it was every month when he writes that student loan check :P

It's so frustrating trying to figure out what is making us still so sick. I am just recently off casein, over a month now. I'm not feeling any ill effects yet, but I did hear detoxing from dairy can be rough. Some of these flus and viruses going around can also be pretty potent and linger, so it could be that also. Take good care of yourself and hope it turns around for you very soon :)

So far, not so good. I feel like hammered sh--! Wednesday night my stomach started to hurt a little (my "aura" for knowing the pyloric spams were coming) so I took a phenergan and hoped for the best. I spent all but 4 hours asleep yesterday, because I had to take 3 more doses of phenergan to get it to stop. I don't know that it's ever been that bad, I was ridiculously weak. Today I started out ok and then about an hour after I got to work my stomach started hurting again and I'm REALLY nauseous. And sleepy. Making it very difficult to actually work. I'm hoping to get stuff done so I can go home and go to bed :(

I wish I knew what caused the spasms, nobody has been able to figure it out. The anti-spasmodics don't even TOUCH them. So frustrating. I just have to live with having these flares I guess.

I'm in and out of here, just keeping up. I've been working on updateing the checkbook :ph34r: . I've got to order some more things for Talitha for school (and fun stuff for Micah) and still make the phonics group cards. I have flash cards but these are different. My handwriting is not good, to say the least. I might have to figure out how I can do it on the computer. Still got projects to do and school is in a week and a half. Mitch has fantastic handwriting so if I can't do the cards on the computer I'll have him do them. Why do I suspect my handwriting might get a little better going through school again? :P:lol:

Seth already erased this once for me and he's starting to fuss. The little boy was up last night for 2+ hours. He woke up around 11:30 and didn't go back to sleep til around 1:45 or so. I was not a happy camper and now he won't be today. He's saying mum....he wants his mommy. I'm off.

Well, I got an MRS degree, but I also got a BS in Business from IU ... I do balance our checkbook ... :) I also have a couple rental properties that we own and I do the work for ... if I ever feel better I'm going to buy a couple more and also do fixer uppers ... so my business degree will finally go to work! There's a house down the street from us I'd like to buy, but I don't have the energy to go look at it. It would be a buy-fix up- resell house. It's a one-story cape-cod, so could easily be converted to a 3 brm-2ba instead of 2 brm-1ba. I'd have to do the math, get estimates, etc., which I just can't do right now ....

Oh Chelse, I'm so sorry. I imagine your intestinal tract took a severe beating with all of the gluten for so long, so things have to be pretty stirred up. I don't really know much about the spasms (sounds a little bit like Rachel's alien baby), I would think it was from an irritant of some kind? It has to be very frustrating for you. Hopefully as you continue with the gluten-free diet you will heal and see some improvement. Hang in there!

      @rei.b,  I understand how frustrating starting a new way of eating can be.  I tried all sorts of gluten-free processed foods and just kept feeling worse.  My health didn't improve until I started the low histamine AIP diet.  It makes a big difference.   Gluten fits into opioid receptors in our bodies.  So, removing gluten can cause withdrawal symptoms and reveals the underlying discomfort.  SIBO can cause digestive symptoms.  SIBO can prevent vitamins from being absorbed by the intestines.  Thiamine insufficiency causes Gastrointestinal Beriberi (bloating, abdominal pain, nausea, diarrhea or constipation).  Thiamine is the B vitamin that runs out first because it can only be stored for two weeks.  We need more thiamine when we're sick or under emotional stress.  Gastric Beriberi is under recognised by doctors.  An Erythrocyte Transketolace Activity test is more accurate than a blood test for thiamine deficiency, but the best way to see if you're low in thiamine is to take it and look for health improvement.  Don't take Thiamine Mononitrate because the body can't utilize it well.  Try Benfotiamine.  Thiamine is water soluble, nontoxic and safe even at high doses.  I thought it was crazy, too, but simple vitamins and minerals are important.  The eight B vitamins work together, so a B Complex, Benfotiamine,  magnesium and Vitamin D really helped get my body to start healing, along with the AIP diet.  Once you heal, you add foods back in, so the AIP diet is worth doing for a few months. I do hope you'll consider the AIP diet and Benfotiamine.

      Imemsm, Most of us have experienced discontinued, not currently available or products that suddenly become seasonal.   My biggest fear about relocating from Maryland to Florida 5 years ago, was being able to find gluten-free foods that fit my restricted diet.  I soon found out that the Win Dixie and Publix supper markets actually has 99% of their gluten-free foods tagged, next to the price.  The gluten-free tags opened up a  lot of foods that aren't actually marked gluten-free by the manufacture.  Now I only need to check for my other dietary restrictions.  Where my son lives in New Hartford, New York there's a Hannaford Supermarket that also has a gluten-free tag next to the price tag.  Hopefully you can locate a Supermarket within a reasonable travel distance that you can learn what foods to check out at a Supermarket close to you.  I have dermatitis herpetiformis too and I'm very sensitive to gluten and the three stores I named were very gluten-free friendly.  Good Luck

      Okay well the info about TTG-A actually makes a lot of sense and I wish the PA had explained that to me. But yes, I would assume I would have intestinal damage from eating a lot of gluten for 32 years while having all these symptoms. As far as avoiding gluten foods - I was definitely not doing that. Bread, pasta, quesadillas (with flour tortillas) and crackers are my 4 favorite foods and I ate at least one of those things multiple times a day e.g. breakfast with eggs and toast, a cheese quesadilla for lunch, and pasta for dinner, and crackers and cheese as a before bed snack. I'm not even kidding.  I'm not really big on sugar, so I don't really do sweets. I don't have any of those conditions.  I am not sure if I have the genes or not. When the geneticist did my genetic testing for EDS this year, I didn't think to ask for him to request the celiac genes so they didn't test for them, unfortunately.  I guess another expectation I had is  that if gluten was the issue, the gluten-free diet would make me feel better, and I'm 3 months in and that hasn't been the case. I am being very careful and reading every label because I didn't want to screw this up and have to do gluten-free for longer than necessary if I end up not having celiac. I'm literally checking everything, even tea and anything else prepacked like caramel dip. Honestly its making me anxious 😅

      So you're saying that you think you should have severe intestinal damage since you've had the symptoms so long?   DGP IgG antibodies are produced in response to a partial gluten molecule.  This is different than what tissue transglutaminase antibodies are  produced in response to.   TTg IgA antibodies are produced in the intestines in response to gluten.  The tTg IgA antibodies attack our own cells because a structural component in our cell membranes resembles a part of gluten.  There's a correlation between the level of intestinal damage with the level of tTg antibodies produced.  You are not producing a high number of tTg IgA antibodies, so your level of tissue damage in your intestines is not very bad.  Be thankful.   There may be reasons why you are not producing a high quantity of tTg IgA antibodies.  Consuming ten grams or more of gluten a day for two weeks to two months before blood tests are done is required to get sufficient antibody production and damage to the intestines.  Some undiagnosed people tend to subconsciously avoid lots of gluten.  Cookies and cakes do not contain as much gluten as artisan breads and thick chewy pizza crust.  Anemia, diabetes and thiamine deficiency can affect IgA antibody production as well.   Do you carry genes for Celiac?  They frequently go along with EDS.

      I was tested for celiac at the same time, so I wasn't taking naltrexone yet. I say that, because I don't. The endoscopy showed some mild inflammation but was inconclusive as to celiac disease. They took several biopsies and that's all that was shown. I was not given a Marsh score.
