  1. It is easy to say in hindsight, but it is best to only add one new food a week, and keep track with a food/symptom journal. It could be either. Did you sort and wash the beans? That is a good idea.
  2. I am sensitive to very low levels of gluten and have problems with coffee. The way I solved it was to buy organic coffee beans and then do a 3 times wash cycle with soap, rinse well, grind and make coffee. No reaction! I don't know if you are very sensitive like me, or if you just have problems with coffee, but maybe it's worth a try.
  3. I get terrible back pain from gluten. Also body, joint and all over. Stretching and strengthening exercises help. Of course, the best thing is to stop eating gluten. Easier said than done.

  5. Some people, like me, react to some things that say gluten free on them. It can be from another ingredient or from cc. Keep a food diary of what you eat and when you have reactions. Stop eating things which you react to. Only eat one new thing a week as it can take that long to notice a reaction. Good luck.

  7. I wonder too about the biopsy for villi damage being used to determine reaction. Surely there is other damage that occurs before the villi are damaged enough to be seen with a biopsy.

  16. I used to use it a lot, but started having problems as I seemed to get sensitive to lower levels. Now I make my own from pasture raised chicken. It's really easy, overnight in the crock pot. I seem to be sensitive to very low levels of cc.

  24. It is possible that it is gluten cc and not food sensitivities. The foods you mentioned are ones I have found to be cc'ed. For nuts, I buy in the shell, shell and wash and then I can eat them.   25. This is what I've been doing with buckwheat lately. I put the groats in a mesh bag and wash them and then leave them in a colander to sprout for about 4 days. Then I whisk a couple of eggs and stir the sprouted buckwheat around in that, then brown on the stove. It's good plain or mixed with some veggies. Even my picky eater son likes it.
