I've seen tubes of polenta but don't know how to use it? Could you give me some ideas? Is there any dairy in it? -

ARCHIVED gluten-free Pasta For Cold Pasta Salads?
Nor-TX replied to sallyterpsichore's topic in Gluten-Free Recipes & Cooking Tips
I use the Quinoa pasta and cook it a little longer than recommended. I grew up eating very soft pasta so that is what I prefer. Once it is cooked I drain and rinse and toss with a tiny bit of oil. I add seasonings and shrimp, cooked veggies like asparagus, softened red, yellow and orange peppers, tiny diced turkey pepperoni, cooked and chopped portobello... -
ARCHIVED Rice Paper Wrappers Recipes Please!
Nor-TX replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
I haven't had great results frying them. They split - I'm not using very much filling so that isn't the problem. I don't like the oil flavor, but I have done them in dairy free margarine and the results are passable. I use a package of Annie Chun's Rice Express Sticky rice cooked in the microwave for 1 minute and stir fry that with some leftover chicken... -
ARCHIVED New Finds For Me
Nor-TX replied to Roda's topic in Gluten-Free Foods, Products, Shopping & Medications
This does sound good. I would use the turkey pepperoni and the Daiya cheese shreds because I am dairy intolerant. The Daiya cheese melts and stretches just like regular cheese. I have found that I prefer the Katz Gluten Free Challah bread over the Udi brand. Thanks for the sandwich suggestion... Now I'm hungry! -
ARCHIVED Bread!
Nor-TX replied to bluebonnet's topic in Gluten-Free Foods, Products, Shopping & Medications
I also vote for the Katz Gluten Free bread - especially the challah. It is sweet and nutty and moist. A consistancy somewhat like banana bread. I can't eat just one slice. I keep it in the freezer and take out 3 slices at a time. It only takes minutes for it to defrost and then I use dairy free margarine, or any type of filling. This really is the best... -
ARCHIVED Top Three Worst Gf Products
Nor-TX replied to anerissara's topic in Gluten-Free Foods, Products, Shopping & Medications
I live just north of Dallas and we have a HUGE market called Central Market. It is the size of about 5 or 6 Whole Foods stores. I called and asked about fresh bread and asked if they would carry Katz Gluten Free bread because it is so delicious and so much better than the Udi brand at Whole Foods. Well the manager told me that they carry the Ener G... -
ARCHIVED New To Gluten-free...whats Your Typical Diet?
Nor-TX replied to Metoo's topic in Coping with Celiac Disease
I just checked and you are right. I wonder why the cookie dough says "gluten free" beside it and none of the others do. I am definitely going to check the ingredients on the packages. I wonder if the recipe changed? Thanks for pointing this out. I love some of the other flavors. -
ARCHIVED New To Gluten-free...whats Your Typical Diet?
Nor-TX replied to Metoo's topic in Coping with Celiac Disease
Absolutely, but the only flavor that is dairy free and gluten free is the cookie dough.. Mmmmmm.... I know life it tough, but someone has to eat it! -
ARCHIVED New To Gluten-free...whats Your Typical Diet?
Nor-TX replied to Metoo's topic in Coping with Celiac Disease
I have been gluten free since October and have the added complication of also being dairy free, having colitis, taking remicade and sensitive to garlic and peanut butter. I began the gluten free diet by using prepared items requiring as little creativity as possible because I was so sick. As my health has gotten better I have become more creative. For... -
ARCHIVED Talk To Me About Alcohol, And About Bread Please...
Nor-TX replied to Monklady123's topic in Coping with Celiac Disease
You should try the Katz Gluten free Challah. If you go to their website you can request a free box of their baked goods to try. I love this bread. I like it even better than the Udi bread. It is moist and sweet and nutty. It is wonderful fresh or toasted. I am amazed at this product. If they can make such a great product why do we have to put up with... -
ARCHIVED Is Udi's Bread Always Frozen?
Nor-TX replied to Streetlegal's topic in Coping with Celiac Disease
I've been buying Udi bread fresh from Whole Foods but I recently found another bread that I love even more. Unfortunately I can't get it around the Dallas area so I have to order it online. The Katz Gluten Free bread/bakery line is excellent. The Challah has a sweet nuttiness and the slices are moist and fluffy. It doesn't break or crumble. I started... -
Oh yes, she is also a teacher. Young, perky, always joking, everyone thinks she is quite a character.

I work in an elementary school and during staff meetings we basically all sit with the same groups. Staff meetings always have lots of food like cakes, cookies, little piggies in blankets, pita chips, brownies, crackers, dips.... Each and every time while I am eating my glutino pretzels and almond butter or jello the same insensitive b**** takes bites...

ARCHIVED Whats For Breakfast
Nor-TX replied to Sarah2889's topic in Gluten-Free Recipes & Cooking Tips
I just discovered Katz gluten free challah. I can't eat before I go to work, so I grab a few slices and put them in a baggie and then at about 8:30 I butter a couple of slices with dairy free margarine and eat them. Katz gluten free challah is a sweet nutty bread that is light and fluffy and moist. It is similar to banana bread in texture and has a wonderful... -
ARCHIVED Katz Gluten Free Challah Bread
Nor-TX posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Today I tried the Katz Gluten free Challah bread. It was delicious. I had the loaf in the freezer and grabbed a few slices to take to work. By the time I got to work they were defrosted and I decided to try 2 slices toasted. They toasted evenly and were delicious with some dairy free margarine. I still had 2 slices in the baggie so for break I took a... -
ARCHIVED I Found Something Good For Lunch !
Nor-TX replied to conniebky's topic in Gluten-Free Foods, Products, Shopping & Medications
I have been using this product for awhile. In my area, it comes in two sizes - one serving with a little plastic spoon and a larger size. I make it up at night and add it some mushrooms, shrimp, leftover chicken and end up having 2 meals out of the package. I love the slightly sweet flavor. It is easy to make and satisfying and easy on the body. Definitely... -
ARCHIVED Oops... Wylers Beef Broth Cubes
Nor-TX posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Been on death's door with the stomach flu for the last week and my dh kept making me some broth to sip on. I never thought to check the Wyler's beef boullion label. I just happened to think about it and called the company... Oops on me... been sipping on gluten for the last week. *sigh* Just wanted to share with everyone. -
Sheesh, wishing that your husband would deploy because he stuck his finger in some bbq sauce?????? You are very lucky you have a husband and you should be thanking God that he is in the US and is safe. There are bigger issues that your family is facing and from the sound of it, your family is losing. How sad for you. My husband sometimes makes mistakes...

ARCHIVED Poll: If A Fairie Could Wave A Magic Wand...
Nor-TX replied to rdunbar's topic in Coping with Celiac Disease
My magic wand would deliver a huge bacon, cheeseburger on a huge bun with fries with brown gravy and malt vinegar and onion rings -- the thickly breaded kind. -
Sushi and sashimi are the types of restaurants I love to go to because I am so safe eating there. I have not yet had any problems. I pretty much stay to the sashimi (just the raw fish or the sushi that has the raw fish over sticky rice). I can't eat the sesame seeds and the fake crab is a no no. My faves are salmon, red snapper, mackeral, tuna and the...

Along with being gluten intolerant, I have Colitis, Dairy intolerance, IBS and Gastro Paresis. Being on this diet along with dairy free, fresh veggie and fruit free, has helped alot. I still have issues with some foods and still trying to work out all the kinks, but feeling much better than I did. The biggest issue is that food is on my mind every minute...

I've been buying the generic simethicone gelcaps at Albertsons. They are 4.00 for 60. My GI told me I could take as many as I like so I take 2 or 3 with each meal and 3 at bedtime. It really helps and not quite as expensive as GasX.

ARCHIVED Sitting Here About To Lose It
Nor-TX replied to MartialArtist's topic in Coping with Celiac Disease
I also love Chinese food and so does my husband. We have a buffet near where we live that I have been able to eat at without difficulty. They have sashimi (raw fish with sticky rice), steamed shrimp, mussels, baked salmon (no flour coating), Hibachi grill where you pick what you want and it is stir fried (he cleans it before cooking my food), steamed shrimp... -
ARCHIVED Mor About Daiya Cheese - Yummy
Nor-TX posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I purchased Daiya cheese and a loaf of Udi white bread yesterday and made a grilled cheese sandwich for dinner. It practically made me cry. I haven't had a grilled cheese sandwich in about 7 years. The cheese was melty, stretchy, cheesy and yummy. The bread was soft, fluffy... yummy. I ate a slice while my sandwich was cooking. Today I made an almond...
