I used to eat breakfast everyday..oatmeal with honey and whole wheat toast..no wonder I was in so much pain! Now I tend to skip breakfast to remain pain free and have black coffee with sugar. CarolinaKip replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
My local organic store ordered for me "The Ojai Cook Lemonaise" There are a few flavors plus a light version. The regular is so creamy with a wonderful lemon taste, not like regular mayo....but better! It is wonderful with chicken and fish! I'm not a big mayo person, but with this, I could eat the entire jar! Makes great egg salad as well. I'm pretty sure... -
ARCHIVED Betty Crocker Brownie Mix
CarolinaKip replied to NateJ's topic in Gluten-Free Recipes & Cooking Tips
I believe she used Symphony toffee almond candy bars by hershey. I think you could use anything gluten-free. Pour half the batter in then add any gluten-free candy bar, pour the rest on top. Then why not use a galze....Yum! -

CarolinaKip replied to Jenn624's topic in Coping with Celiac Disease
Hugs! I know a lot of people around me don't get it either, or they think I'm being OCD! they don't get CC at all! My sister went to great lenghts to make a turkey gluten-free for me, however she had it beside the stuffing! Right then and there we had a lesson on CC. Now all the gluten-free stuff is first and by itself. I'm 10 months gluten-free and I didn... -
ARCHIVED Betty Crocker Brownie Mix
CarolinaKip replied to NateJ's topic in Gluten-Free Recipes & Cooking Tips
I love the brownies as well! When I treat myself, I frost them with gluten-free Betty Crocker icing. Paula Dean made brownies once and put candy bars in the middle. I thought that would be a good idea to kick up the gluten-free brownie mix, but haven't tried it. -

So, I was in my schools lunchroom standing eating out of my container watching the two classes I have to at lunch. I am eating a lovely bowl of fruit including expensive cherries. I miss this as well! Work is a difficult place, on teacher workdays they go to places without gluten-free menus. We also have a cookout that I'm trying to think of a safe way of having it. I do feel somewhat left out when I cannot eat what they are. Any treats that are supplied for staff are always gluten loaded.

To freely walk into anywhere with my children and freely eat without worry. Bud-light, Paneras sandwiches really bad!! My daughter and I would eat there once or twice a month. Subway, Papa Johns cheese bread. A good bagel. My favorite mexican place and BBQ joint!!!!!!!!!!!!!!!!!!!!

ARCHIVED Any Tips For Gas And Bloating?
CarolinaKip replied to healinginprogress's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
You might want to see if you could replace your meds with other options. Also, give up corn and see if that helps. I get like this sometimes as well. The gel caps help some. My daughter calls it my gluten baby! I've been like this for 3 days and I think it's because I thought (key word thought)I could get corn again...ha! It takes time, I'm still learning... -

Will check into it..thanks! Some loved my gluten-free breads..others not so much and that's okay....I shared my world and I'm happy with it! -
I had this test done in October. My doc was looking for anything else that could be wrong other than Celiac. I was still bloating etc. The stuff you drink is bad tasting, however, I was informed it was gluten free. I didn't get sick from drinking it, although it did go straight through me. They took xrays (I was on my back )before drinking and then a hour...

ARCHIVED Chebe Bread...
CarolinaKip replied to CarolinaKip's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the replies! I made them in balls...my fellow teachers are my age and them eating gluten-free is new enough, so I didn't throw any other stuff on them Trust me..this crew would take homemade pound cake over gluten-free brownies! This cake is famous! I also made a bread using the bisquick, fresh chive, bacon and cheddar. My DD loved them both...
