  1. Laura, Thanks so much for the recipe!
  2. HyVee grocers and Target sells it - frozen in both stores.
  3. I had the same problem for awhile to the point that I was getting dehydrated daily. Drinking Pedialyte helped me quite a bit. The fruit flavored is pretty nasty tasting stuff, but the plain one isn't too bad. Once the dehydration was under control, I was able to eat a little more - basic foods like chicken, plain hamburger or steak, baked potato, bananas...
  4. The following are listed on Find Me Gluten Free with high ratings - Gluten Escape, 4403 S. Tamarac Pkwy 103 City, O' City, 206 E 13th Ave Pizza Fusion, 571 E Colfax Watercourse Foods, 837 E 17th Ave Pkwy There a lot of places listed - I just chose a few with the higher ratings.
  5. Would you share your recipe for chicken and dumplings? That is something I dearly miss!
  6. Here are a few very simple ideas that became lifesavers for me - hamburger hash - hamburger, chopped/sliced potatoes, onions, and seasonings. Make a big batch and it it will last several days. Add homemade broth for extra nutrition. Tastes great with applesauce as a side. Fry a pound or two of bacon and keep it in the freezer. Make quick french...
  7. How close to traditional flour crusts do they taste? I usually bake pies without a crust since I haven't had much luck making a good gluten-free crust, and I heard the Pillsbury ready made has a funny after taste.
  8. No, I don't! But, I thought I would bump this, as I would really like that info, also.
  9. It's been a year since diagnosis and my latest blood work shows "no detectable antibodies". It was a rough year, and I'm finally turning this around, but I'm still 18 lbs. underweight, and I can't seem to put it back on. My question is this: Without a presence of antibodies, does this mean that the inflammation is gone and intestinal damage has healed...
  10. I was trying to cook my first gluten free Thanksgiving meal last year while out of town, and gravy was troublesome...until I called mom, and she suggested just thickening the pan juices with instant potatoes. It worked! I use rice flour now or cornstarch, but in a pinch mix in the potatoes!
  11. I'm pretty sure one of his daughters has celiac.
  12. Yes, they are quick and ready to go. That's the advantage!
  13. The peanut butter containing milk whey was a generic brand. The hubs thought we saw it at County Market. We were both very surprised.
  14. Some brands of peanut butter contain milk. Could that be your problem?
  15. I've used it in two recipes by Karina the Gluten Free Goddess - pumpkin cake bars and pumpkin cookies. Both recipes turned out great!
  16. Yes, I have a problem with apples. Last year, I could eat them just fine. I have been on the FodMap diet as suggested by doc for quite awhile now. I tried apples as my challenge food a month ago. I started with just half an apple at lunch and BAM! I was sick for a full day. It is now time to challenge it again, and I'm scared to death to do it. I did...
  17. Broiled zuchini? Sounds good - what do you put on it?
  18. Last year my mom and I each tried a different gluten free dressing recipe, and both of them were horrible. Does anyone have a really good stuffing recipe they will share? I've thought about trying a cornbread based recipe. Have a good one for that? I'm starting early to practice before Thanksgiving.
  19. This is why I thought I was probably glutened at Five Guys - no changing of the gloves after handling buns.
  20. Thank you for responding. And, thank you for the links. I found them both to be very helpful.
  21. I've reached my one year mark for celiac. My latest blood work shows no detectable antibodies, and I got a "Congrats" from the dr. for adhering to diet. I'm still having an issue trying to gain weight. I'm eating and tracking my daily intake, but just don't seem to be able to gain. The dr. wasn't too concerned because I've remained weight stable for the...
  22. What about those individual packets of peanut and almond butter made by Justins?
  23. I took a 4 hr. hydrogen breath test in a hospital setting. Yes, I had to fast for 12 hrs. The day before the test I could have nothing but water, plain chicken, rice, and white potato. First, there is a baseline "blow up a bag". Then I drank a solution of lactulose, and blew into separate bags every 15 min. for 4 hrs. At the same time, I had to fill out...
  24. Are you cooking your vegees? I couldn't eat them raw for awhile. Have you tried bananas? Eat them when they have no visible green on them, and they are easily digestible. Another thing I learned in the fodmap book was to limit the fruits/vegees to l/2 c. servings. And, if you still want more, wait two hours and eat another 1/2 c. This has helped me...
  25. Have you tried zucchini and summer squash? Fall/winter squashes are high in sugar. I love them, so I'm hoping I can add them soon, also.
