  1. Betty, The way I understand it is, when we have damaged villi, we can not digest the lactose in the milk or dairy products. I don't believe that consuming the dairy will continue to harm the villi or impede healing. I think it's more a matter of stopping it for a while to give the system a chance to heal and settle down a bit, and then if you can tolerate...

  4. When I used to eat dairy, I loved Stoneyfield Farms! The Vanilla and the Strawberry flavors are really good. Good for your wife while taking the antibiotics--it has the good bacteria in it.

    Ha Ha--I will be watching for any answers you get to this since I am going to see an Allergist this Friday! I'm going for much of the same reasons as you are. After 8 months gluten-free, I am increasingly intolerant to other foods--especially other grains.   7. Milk chocolate is a tough one to do without dairy. Enjoy Life makes semi-sweet choc. chips that are both dairy and soy free. I make the best hot chocolate--it is creamy and very milk-chocolaty tasting. I use Vance's Dari Free (potato based non dairy "milk"), one teaspoon of Nestle's unsweetened cocoa powder, and one teaspoon sugar. I mix it all in a mug...
  8. I am sensitive to soy, but can use Smart Balance. Some people with soy problems can still tolerate oil and lecithin. I can use both of those, but not soy flour or isolated soy protein--those give me D, gas and cramping. I think I react to the protein in the soy.   10. Yes--the Gluten Free Pantry Pie Crust Mix--it is really good! I used it for a pumpkin pie at Thanksgiving and everyone loved it.
  11. Yup--I've had my cobalt blue Kitchen Aid for years and love it.
  12. I haven't used sorghum flour yet, but Enjoy Life uses it in some of their cookies and I seem to tolerate it well so far.

  18. Thanks Joe--I did react to the Puffins--not the first or second time, but when I bought a new box. It actually caused stomach pain within minutes of eating it. I figured that this batch was probably made right after another product with gluten, and got contaminated. That kind of thing, I think, makes it hard to pin down the source of the reaction.
