				ARCHIVED Brain Fog?
Ennis-TX replied to IrishTwins2009's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I used to have to wear noise canceling headphones to concentrate on anything. My ADHD was made worse by gluten and dairy, combined with autism and the brain fog...it was maddening. The fog, its like you try to think of something and you mind sort of slows down and gets stuck on something else. You want to think or work on something but it will not. Concentration... -

ARCHIVED What do you eat when most of the foods make you sick?
Ennis-TX replied to Fairy50-dust's topic in Food Intolerance & Leaky Gut
You would probably benefit from my diet base....Keto/Paleo with no Sugar, Grains, Starchy Veggies, Fruit, etc. Normally people use meat on this diet but my pancreas issues prevent this. I live on omelettes, avocados, nut butters from various nuts, seeds both meals in foods and whole pumpkin, gerbs hemp (only gluten free ones out there), flax, chia sunflower... -

ARCHIVED Continuous Weight Gain for Celiac
Ennis-TX replied to Sgf17's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Your thinking of brewers yeast. Nutritional Yeast by KAL or Braggs is certified gluten free and not grown a gluten media, or alive. It is a great staple for vegans for vitamins and minerals. Also very useful for creating vegan cheese. iodine is a great suggestion, I snack on gluten-free Nori, wakame, and other see veggies for mine, sodium again will...- 6 replies

ARCHIVED Continuous Weight Gain for Celiac
Ennis-TX replied to Sgf17's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
The swelling etc, is commonly referred to as edema. I used to struggle with and had drink and eat duriatic foods through out the day to maintain it while avoiding sodium. Here are some things that might help Open Original Shared Link Past few years I adopted a keto/paleo diet avoiding all grains, starches, carbs, sugars. The keto diet naturally causes...- 6 replies

				ARCHIVED Neuropathy and encephalopathy
Ennis-TX replied to Stepherwolf's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yep, over 4 years in, I have gluten ataxia with it where it attacks my brain and nervous system. I had a scope last year and my intestines had mostly healed. The nerve damage not so much....that might never. I suffered brain, nerve damage from it and lost the ability to do something, numbness in hands in feet (I can pick up a sheet out the oven and smell... -

ARCHIVED Does anyone know anything about the correlation between celiac desiease and depression?
Ennis-TX replied to Jesper's topic in Coping with Celiac Disease
Many times it can be related to a nutrient deficiency from your damaged intestines, like B-vitamins, and a few others, I would need to check my charts. I honestly eat a ton of pumpkin seeds, hemp seeds, and cocoa nibs to promote my body to produce feel good chemicals all the time. I also take liquid b-vitamin complexes to deal with it like Liquid Health Stress... -

				ARCHIVED tips and recommendations
Ennis-TX replied to BirdieH's topic in Gluten-Free Foods, Products, Shopping & Medications
Did a bit of a list here but we normally suggest a whole foods only diet at first with as few ingredients as you can to boost healing. Many benefit from removing dairy for a few weeks to a few months. The damage to the villi in the intestines inhibits the utilization and production of the enzymes to break it down. >.< When I first went gluten free... -

				Lemon Ricotta Scones
Ennis-TX commented on Ennis-TX's blog entry in Gluten Free and Specialty Diet Recipes
Umm no offense but this is counter productive to my post/blog ...the whole point of these is grain free, corn free, low carb, and dairy free....while I have suggested pamela products on my alternative list on another post, this blog is focused on no gluten, corn, dairy and lowering carbs, grains, and starches. Pamela product you suggested is something I would...- 7 comments

Had a scare few days ago, I thought I developed a almond intolerance, ended up being I can not eat raw almonds that I just chew and eat, roasted I can make into butter or chew and they turn into a "mud" that sinks, raw tend to turn into a floating gritty irritating paste that causes purging, almond flour is fine if baked or soaked over night before being...

ARCHIVED Finally got answers and I wanted to help others do the same.
Ennis-TX replied to Before40's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
You can not diagnosis celiac with saliva and hair.....celiac is a autoimmune disease, where your immune system reacts to gluten. THE ONLY way to test is 1. Check the BLOOD for ANTIBODIES to gluten where you have to be eating it til you get them in your blood stream. 2. Checking for damage to your intestines like blunted vili by taking a biopsy of the small...- 2 replies

ARCHIVED Low stomach acid enzyme deficiency
Ennis-TX replied to Kylebailey1994's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Well I have celiac, and ulcerative colitis, and learned a while back that my pancreas was not producing enough enzymes. Mine progressively gets worse into the evenings and I have to take porcine enzymes. Recently have been taking betaine HCL for raising stomach acid as my PH in the evenings is often 3-5 and they said should be much lower on the PH scale.... -

Ennis-TX replied to V123's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
First...if celiac is the suspected culprit you need to be eating gluten and get tested first please refer to the following before proceeding with your current diet. Yeah I can not handle the harsness of something as heavy as chili...vegan even. I might have a spoon of it when I fix it for others but nothing more. Eggs, and veggies, scrambles, stir fries, tiny bit of seasoning on one part of it....been my go to...last month has been mostly blending steamed veggies, coconut flour, and seed meals, into egg then cooking...

Weight gain since starting Gluten diet
Ennis-TX replied to NickL's topic in Related Issues & Disorders
If celiac, before hand you were damaging your villi and not absorbing food, once you start healing you start absorbing more of it. Try to stay away from "gluten free" processed foods...MOST are really unhealthing starch/sugar/fat bombs in really bad ratios with sugar/fats. and fiber/starches. Try a whole foods only diet of veggies, meats, and rice and potetoes... -
Waffles are often not that crumby or sticky, bread on the other hand can stick the mesh and leave crumbs more. Toasters are cheap if you want to play it safe, or use toaster bags for awhile, 500F can destroy gluten...unsure how hot those get. It is easier the manage the diet the first few months and makes healing faster to use whole foods only and nothing...

I cook asian style stuff using coconut secret sauces like the teriyaki, garlic, and coconut aminos. I found Thai Kitchen Makes some curry paste...not japanese style but it works. I found some nice togarashi seasoning from The Spice house, and some sesame oil from various places that is gluten free, I use Nori from amazon in bulk that is fine, I also found...

Ennis-TX replied to LilyR's topic in Gluten-Free Recipes & Cooking Tips
Constant set backs with the broccoli dish led to a epic new dish. TESTED it my bake mixes and my coconut flour all came back gluten free, to be extra sure, I left the test alone and checked it 2 hours later after the first time and it still read the same (sometimes even the tiniest traces are present the line will appear hours later indicating something might be below 20ppm but still have some in it) Double sure even the...

				ARCHIVED Help with diagnosis
Ennis-TX replied to Jo hay's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yeah if your gluten free the blood test will be negative...it is testing for antibodies to the gluten proteins....if you not eating gluten your not going to have them in you blood. There is a gluten challenge that needs to be done where you eat gluten every day for like 12 weeks to raise the antibodies for the test. The endoscope like wise requires gluten... -

				Lemon Ricotta Scones
Ennis-TX commented on Ennis-TX's blog entry in Gluten Free and Specialty Diet Recipes
Not really they have no binders in them, they crumb really easy, this would not work for a biscuit. As a scone this works great, not so much in something that is supposed to be more tough. I made some tough textured dinner rolls grain free that reminds me of those cheap ones in the square packages, deduce that binder in half for a softer biscuit like texture...- 7 comments
