Early on in my bakery days with gluten free, I did a experiment using Greek yogurt in the bread to and a extract I had found to make a type of sour dough knock off the texture was more cake like and soft. I do have a theory on making a new version, but the process of of making it gives a high chance for food poisonings.

Funny thing I was looking at pollution mask for heading out. I found tis one company that makes some really high quality ones that do not look that bad and even had skin options. 3-4 vials, I distract myself with small talk and look away when they do it. Yeah I take iron and I consume a TON of pea protein (i take 3-4 servings a day each contains 15% RDI) I consume cocoa nibs, nuts also high in iron. and I take 1500-2000mg vitamin C a day to help.....no clue as to the cause. I do about the same thing, Butcher paper, paper towels. Microwave cookware (bowls, omelette makers, steamers), a small griddle (covered griddle with sides and a lid is a multi cooking life saver), knife, spatula, and plastic utensils. I find I do not like to drink plain water as it does not seem like I am drinking anything, I often use a water flavor additive. I have only used Spry mints and gum exclusive for the past 3 years. Sugar Free, and Gluten Free. I gotta say out of all the mints they offer I love the lemon, berry, and cinnamon mints over the wintergreen, spearmint, and peppermint.
