  4. Hey Jessica! I was wondering what ever happened to you. If you had positive bloodwork, then you have Celiac and you need to stay gluten free for life. If you can't do it for yourself, do it for your beautiful little girl (BTW, I love getting the pictures). She needs for you to stay strong and healthy. If you need support, you know you can always lean on me...
  5. Betty Crocker Potato Buds Great Value Brand Potato Flakes (Wal-Mart) Barbara's (www.shopbydiet.com)
  6. Just a little tidbit of info that you may find useful... I did my gluten challenge about two years ago. I was terrified to start eating gluten, but when I did I quickly became re-addicted. I ate about four full servings a day for 1-1/2 months with absolutely no symptoms. I never had the endo so I thought great, I don't have it afterall. Then, on the 47th...
  7. Mission corn tortilla sandwiches. You have to add mayo, ranch dressing, or mustard to make them good, but they are oh so delicious! I do sweet bologna, cheese, and mustard; turkey, cheese, and ranch dressing; ham, cheese, and mayo; peanut butter and honey; peanut butter and jelly; tuna salad and cheese; fish sticks and tartar sauce (homemade fish sticks,...
  8. How long has your son been gluten free? It can take up to two years for symptoms (such as stomach ache and canker sores) to go away completely, especially if he has done a lot of damage to his intestines. Are you sure that all gluten sources have been eliminated (ie: soaps, lotions, play dough, paints, glue, hair product, soaps at school, lotions at school...

  12. Bette Hagman's Easy Pizza Crust recipe... EXCELLENT!!!
  13. What kind of restaurant is this? Is it nicer or is it more family style?
  14. Here's my donut recipe... They are fabulous... Open Original Shared Link
  15. You're very welcome. So glad somebody else was able to enjoy them as much as my family did.
  16. I used a mini bundt tray (6 mini bundts) and then I also used a roll tray (mammoth muffin size) and they turned out very well. I'm assuming it would turn out very well in a bundt pan. I forgot to mention that I doubled the apples in the recipe. Next time I make it I will also mix them into the batter instead of making layers.
  17. 1/20 first degree relatives of Celiacs also have Celiac. Acid reflux can definitely be a symptom and I believe it's one of the more common symptoms. Get tested, it could save you from a lot of hassles down the road.
  18. Yes, use confectioner's sugar in the recipe. I believe that is what they ment by "white sugar". It didn't turn out when I used granulated sugar, very good when I used confectioner's sugar. Yum!
  19. Open Original Shared Link Instead of the all-purpose flour they call for, use 1-1/2 cups white rice flour, 1 cup potato starch, 1/2 cup tapioca starch, and 3 teaspoons xantham gum. Also, be sure to use confectioner's sugar (not granulated) or they won't turn out well. Enjoy!!! I also doubled the cinnamon.
  20. This recipe is from Open Original Shared Link submitted by Amy entitled Gluten free yellow cake. I've only ever made this as cupcakes and it is phenomenal, absolutely the best... Don't be scared off by the mayo, you can't taste it in the recipe. Be sure to use full fat mayo, no light stuff or it won't turn out. INGREDIENTS * 1 1/2 cups white rice...
  21. I have an amazing cake recipe. No one will ever know the difference. I've only made this as cupcakes, so I can only vouche for the end product of that, not as a cake, but I imagine it would be similar or the same. These are absolutely the best gluten free cupcakes ever... Don't be scared by the mayo in the recipe. This is from allrecipes.com submitted by...
  22. The pizza crust posted above is the one that I use also. It is FABULOUS!!! It takes about 40 minutes from start to finish (if you're quick), but it is SO worth it. I give it two thumbs up and two toes up and my nose up too, cuz it's just that good... This crust is very similar to a Pizza Hut traditional style crust (the disc they use to make stuffed crusts...
  23. I was diagnosed with fibro two months before I was diagnosed with Celiac. I had a newborn baby who I could hardly lift and I spent most of my days in bed because I was in so much pain. I was on Cymbalta, muscle relaxers, and pain killers for the pain and none of them were helping. After about 8 months on the gluten free diet, 95% of my "fibro" issues have...
  24. Honestly, I don't remember how long I baked mine for. I didn't use the timer because I was adapting an old pie recipe for cupcakes... I'm thinking it was probably around 15 minutes, but I guess I'm probably too late since you posted this evening... Let us know how long it took for yours.
  25. Also, insist that biopsies all be from different areas. If they do 8-10 biopsies, but they're all in one concentrated area, they may as well have only done one.
