Celiac Disease & Gluten-Free Diet Blogs

A Decade of Determination Pays Off

This will be my shortest blog. After a decade on The Specific Carbohydrate Diet, I am once again able to eat occasional moderate amounts of restricted sweets and starches with no apparent consequences. Since my celiac disease was never formally diagnosed, I cannot claim it is curable or was cured but it is now six weeks since I resumed eating foods I have not had in ten years as well as foods purported to be cross reactive with Latex Allergy. Ultimately I decided to be very cautious and not p

Diagnose Or Self Diagnose?

Daughter was just diagnosed with Celiac's Disease. I stopped going to the doctor for me to get her diagnosed as it is a long process and many different doctors and doctor appointments and time off work and copays etc. I know it's genetic and I am sure that I have it and so does my mom even though never diagnosed....Do I now try and eat gluten again and get a diagnosis? Is it worth it? The pain? The sick days the NO LIFE?   I realize that diagnosing her officially was necessary due to he

Spanish Rice Made With Chicken Bouillon Ruined A Baby Shower!

New to be being gluten free and went to a baby shower. Passed all the processed foods and was so happy to see Spanish rice. After a few minutes from eating my tummy started that all too familiar pain starting to creep in. Over heard the lady who made it saying she added chicken bouillon to the rice and knew that was it. I thought well, I'll stay calm and use my brain power to keep me in check at least until presents begin to be unwrapped or a game starts. NOPE, went to restroom, was mortifi

More Choices than you think for Gluten-Free Food at Target Field

You may not be enjoying the gluten-free food to it’s fullest at Target Field. The brand new home for the Minnesota Twins is complete with a gluten-free concession menu, but I’ve tracked down additional, more kid-friendly items that are gluten-free and — so far — aren’t on the list. This list posted on my website has been about 5 months in the making. I actually started drafting this post with a different title and all back before the first pitch of the season, but when I saw the Open Or

New Beginnings

While spending my year in Korea, I created a blog to document my experiences. It was soo much fun. Now that I'm no longer in Korea, I miss creating blog entries. I decided to write about food. Since I love food and love to cook, why not help other people. Obviously, all my recipes are gluten free. Some people think that eating gluten free has to be expensive or maybe they have no idea what to make. This is where I can help.   Open Original Shared Link   It's brand new and I'm thin

The Grill of It All

Everything old is new again, at least it is in my kitchen. The neighbor passed along a lovely little George Foreman grill she had no interest in and although I can't take photos, text or place phone calls with it, the shiny little white griddle looks fine next to the juicer and food processor. It cooks a range of foods in no more than ten minutes and they are done on both sides with the juices dripping into a little tray placed at the front. Pluses: The food is juicy, cleanup is relatively quic

The Start

One day, I was doing some roofing and I got a fairly sharp pain in my chest, left side. It was not a jolt like you hear a heart attack would be like. However it did hurt, it hung around for about 30 minutes then it went, I thought I may of pulled a muscle. After all I was doing physical labour, which I was not used to. A few days later it came back again, this time it lasted about 20 minutes. I had been taking it easy as I figured it was a pulled muscle. After about a week of this on and off,

Top 10 Tips For a Strict Gluten-Free Lifestyle

Going gluten-free can be very difficult for some people, depending on their levels of sensitivities. It took practically a life-time for me to discover my own food intolerance's so when they were finally revealed to me, so much damage had already been done that I was very ill. Because of all the damage I caused my body from misdiagnosis, I am now very sensitive to gluten contamination, even the slightest cross-contamination can make me very ill for days or weeks. It has taken me over a year to

Seneca Crisp Onions are Gluten-free

I have bee gluten-free for at least 2 and a half years now. And I really miss broccoli casserole, and green bean casserole. Of course both those recipes use the Durkee french fried onion rings which are definitely NOT gluten free. Don't you just wish the Durkee company would wise up?! So I was absolutely delighted when I found a new product on the shelves of my local Giant: "Crisp Onions" made by Seneca Farms. They smell and taste much like Durkee's french fried onions, but just don't have flou

Changes

Wow, so I was just re-reading my old entries... boy have I changed. I no longer give a crap if people around me eat pizza because I don't want to feel bad anymore. If I do have these cravings for certain foods, I have learned to make them myself. Even my husband loves my gluten-free pizza! My changed attitude over the years is attributed to learning as many different recipes and varieties of food I possibly can. Before discovering I was Celiac I had never tried Thai food... now, I LOVE Th

Dining out Gluten Free

The one thing I really miss about being normal, is going into a restaurant and ordering the new pasta dish on the menu and not worrying about it causing you three days of severe pain--perhaps just a few pounds of extra weight. So I find myself eating at home a lot. Being in the restaurant business I get a chance to really search for some new restaurant choices in gluten-free foods. I love Italian and this is my biggest challenge, but so far I have actually found two very good choices in noodl

Recall of the Wild

We read almost daily about recalls of commercial foods which we thought were safe for a celiac disease diet. We are informed of contamination and undisclosed ingredients regularly right here at celiac.com thanks to vigilant posters. Jennifer and Destiny have both pointed out that which I have found is typical. Yes, I have one of the older models and have tested many products with it. For me it seems like a valuable tool and I have used it to test foods that I eat regularly, which are naturally gluten-free, for example salsa, refried beans, etc.

Has anyone tried the NIMA gluten detector?  I'm seriously thinking of investing in one. I haven't eaten out at a restaurant since my late diagnosis 4 years ago (I'm 55 in March)  Any information would be greatly appreciated
