Since we have been having a few posts saying they have nothing to eat but gluten when they are hungry, I thought we could compile a list of our favorite things to eat when there is "nothing" to eat.  I don't mean "pop a chicken in the oven with fresh herbs from my garden".  :P

 

So.....

some people love the lara-bars, i am a bigger fan of the nature valley almond bars although i can't find them everywhere

Stretch Island Fruit Leather.... omg! We buy it at Costco. I can't eat half the flavors that come in the box these days, which is fine because my husband loves them all. For some sick twisted reason though they don't put the mango ones in the huge box, I have to get those at the health food store. <_<

 

Also, Orville Redenbacher Naturals popcorn single serve bags. These obviously only work at home or where you can get a non-nasty microwave. I've had the buttery salt & cracked pepper and the lime & salt. Both are really great. I prefer the lime though because my husband won't eat it. :P

 

I also try to keep apples in the house. I don't generally eat fresh apples, but if I'm absolutely starving will make a quick batch of fresh applesauce. Of course, nothing wrong with eating them fresh!

 

I keep Larabars and Trio bars around for my husband. I can't do the nuts and dates but when we're going out and my husband is spending the day gluten free with me they make great snacks for him. He has taken a great liking to the Trio bars especially. He never took to Kind bars but I loved them SOOOOO much.

lolz - i wrote the same thing and didn't know it - aren't they GOOD - i found them on the clearance thingy at wallyworld and bought all of them!

 

also, i keep greek yogurt and kefir around the house.  the kefir is surprisingly filling and is good for when i'm trying to stretch till dinner is ready.

 

boulder canyon chips are da bomb, also :)

I always have these on hand: nut butter (w/apples or just straight off the spoon), handful of almonds/walnuts/pecans, corn chips with guacamole (I should really own stock in the "Wholly Guacamole" brand!), baby carrots, bell pepper slices, eggs, berries & bananas. My purse/car is stocked with Larabars, just in case and I almost always have a banana in my purse...my hubby calls me a hard core snack hound. :)

I'm kind of bad at remembering to replentish my emergency food supply.

 

Larabars. They have saved me many a time.

Chocolate. as in a piece or two off a good dark chocolate

 

Avocado. All I need is a knife and a spoon, really.

Nuts

Corn chips, or any gluten-free chips really

Banana

Hummus

 

Sometimes I make popcorn (on the stove. I got a whirley pop. I love it) and save extra in baggies.

 

Nothing's wrong with a quick bowl of cereal or piece of toast with peanut butter.

While I try to keep a large stock of frozen muffins in the freezer, fruit on the counter, and eggs in the fridge, there are times I need non-perishables. So, I always keep rice cakes, dried fruits and nuts in the pantry, and some variety of bar food (Lara, Pure Organic, Kind, etc.).

Good thread.  I didn't know about the Nature Valley Almond Bars and I'm looking forward to trying them.  My kids love the Oat and Honey version.

I always have fruit and cut up carrots, celery and bell pepper strips on hand. (I'm a "grazer"  :D )

 

Dried fruits and  nuts and seeds of all kinds (Nuts.com and I are great pals)

 

Jif -to-go cups are stashed in my car with Crunchmaster crackers

Cheese

Chobani yogurt

natural applesauce cups

cottage cheese cups

Rice pudding cups

 

I make these big granola cookies and they freeze really well, so you can put them in baggies, let them defrost in your bag or backpack

and eat it when you want.

Giant Granola Oatmeal Cookies

Gluten-Free and Dairy-Free Makes 12.

Dry Ingredients:

2 cups Certified Gluten Free Quick Cooking Oats (Bob's Red Mill, for example)

1 cup Almond or coconut Flour

1/3 cup Organic Coconut Palm Sugar (or you can use Light Brown Sugar)

1/4 cup Quinoa Flakes

1/4 cup Ground Flax seed meal (or Chia Seeds or Ground Hemp Seeds. )

2 tsp. Ground Cinnamon

3/4 tsp. Celtic Sea Salt

1 cup Dried Fruit of choice: pick one --or use a combination to equal 1 cup Raisins, Golden Raisins, (SunMaid) or Dried cranberries (Craisins are gluten-free), Dried apples, apricots, cherries, pineapple, mango, etc.

1/2 cup Seeds or Nuts of choice – pick one or use a combination to equal 1/2 cup (Pepitas, Sunflower Seeds, Chopped Pistachios, walnuts, Cashews, Macadamia Nuts, Pecans, etc) ..

1/4 cup Chocolate Chips (I use Enjoy life Brand)

 

Wet ingredients:

1 egg, beaten

2/3 cup Cold-Pressed Unrefined Coconut Oil or Canola Oil

1/2 cup Grade B Maple Syrup

1 TBSLP. Vanilla

 

Directions:

  1.  Preheat oven to 350 degrees.  

  2. Pam spray 2 muffin top pans with regular PAM (not Baking PAM—it has wheat in it).

     

3.  Sift together in large bowl: all dry ingredients.

4.  Make small well in center of dry mixture.  Add: beaten egg , oil, maple syrup, and vanilla.

5.  Squish/mix together with hands.  Press into prepared muffin pans. I wet my hand to squish them a bit to form big “cookies”.

6.  Bake for about 14 minutes, or until edges look slightly golden. Center will look a bit undone.

7. Let pans sit for at least 30 minutes on cooling rack before removing cookies from the tins.

8. Cookies store well and they freeze well, too.! I eat one for breakfast on the run  with a banana and I'm good.

I keep packs of sunflower seeds in my purse, jif pb to go packs with gluten free pretzels. Hummus, and or guacamole with anything from celery and carrots to chips or cold fries to dip!

Eat Natural healthy nut bars

Small bars of 85% cocoa dark chocolate (guilt free cos it contains iron etc :) )

Rice cakes and carrot sticks with dips like hummus

bananas or other fruit

Ice pops or even chew on frozen fruit

make a quick smoothie

nuts/seeds/dried fruit

hot chocolate drink / cup soup

mmmmm im peckish now ! :)

It's funny, it seems that when I travel I stock up on all kinds of stuff:

more Larabars than I'll need, instant oatmeal (GlutenFrida is my saviour! I even pack a little jar with sugar/almonds/cinnamon that I put in it. Just add boiling water), nuts, chocolate, fruit if I'm travelling domestically, etc. I always bring my own meal on the plane, etc etc.

 

Then when I'm home all that flies out the window and I end up starving and inopportune moments. This thread is a great reminder to keep it together, also why I stocked up on larabars last night.

(the starving usually results in me making a haphazard desperate meal when I get home, and then I wonder why I just ate rice with a lump of peanut butter on top or something ridiculous...)

I carry Sesame Snaps 180 calories so that can keep me going and it's in a small package that is handy to carry.

I also cut a banana in half and put it in a sandwich box when I go out.

I usually have a package of Corn Thins around. They are good with peanut butter. Natural or soy-free peanut butter of course.

 

If I was going to put some stuff aside, it would be dry beans, peas, lentils type of things.  Actually, if you grid your own pea flour it makes real nice instant pea soup with just some hot water and a few spices like salt, pepper and garlic powder.

 

True North nut snacks are good too.

 

I usually have some kind of gluten-free Chex cereal and almond milk on hand.

 

Eggs.

Corn tortillas.

Peanuts.

Usually a bag of oranges or apples etc around too.

Sometimes  pre-cooked ham in the frig.

That and some Daiya cheese and a dried egg and you have a nice quick meal.

Mushrooms.

Avocados.

Sometimes some chips like Food Should Taste Good or Mission corn tortillas.

And sweet potatoes to microwave. 7 minutes and they are ready.

This is stuff at home, I don't go anywhere that require stocking a car or office. It's also dairy free, and chocolate free and grain-free.

 

-Fruits: apples, bananas, oranges, grapefruit, grapes, whatever's on-sale and doesn't require lots of prep (like, say, a pineapple)

-Meat:  Roast is a super easy, if long, meal to prepare, and if you buy a giant roast, you have leftovers that can last a week. Snacking on roast is as easy as opening the fridge and tearing/cutting off a hunk of meat.

-Vanilla flavoured Almond Breeze.

-Natural peanut butter mixed with honey. Sometimes dip an apple into it.

-Eggs. Well, these require cooking, but they're fried or boiled soooo quickly.

-Avocado

-Carrot sticks

-Pre-mixed salad, pre-washed, add your favorite gluten-free dressing, homemade or otherwise.

-Squash, potato, sweet potato, as leftovers. I love all of these mashed with some fried onion. Make a whole giant squash or pounds at a time for lots of yummy snacking.

-gluten-free bacon. You can microwave bacon, it's so easy!

-I believe coconut and apple-cinnamon larabars are grain free too, but haven't had any in awhile.

 

Forgot one, can of coconut milk wish sugar stirred in.

      learned I had a high PTH level in 2022 suspected to be due to low vit D  got my vit D level up a bit but still have high PTH   I am 70 yrs old (today in fact) I am looking for someone who also has hyperparathyroidism that might be caused by malabsorption

      I am on day 13 of eating gluten  and have decided to have the celiac panel done tomorrow instead of Wed. (and instead of extending it a few more weeks) because I am SO incredibly sick. I have almost no appetite and am not able to consume the required daily intake of calcium to try to keep up with the loss of calcium from the high parathyroid hormone and/or the renal calcium leak.    I have spent the past 15 years working hard to improve my health. I lost 50lbs, got off handfuls of medications, lowered my cholesterol to enviable levels, and in spite of having end stage osteoarthritis in both knees, with a good diet and keeping active I have NO pain in those joints- til now.  Almost all of my joints hurt now I feel like someone has repeatedly punched me all over my torso- even my ribs hurt- I have nausea, gas, bloating, headache, mood swings, irritability, horrid flatulence (afraid to leave the house or be in any enclosed spaces with other people- the smell would knock them off their feet) I was so sure that I wanted a firm diagnosis but now- I'm asking myself is THIS worth it? esp over the past 2 yrs I have been feeling better and better the more I adjusted my diet to exclude highly refined grains and processed foods. I didn't purposely avoid gluten, but it just happened that not eating gluten has made me feel better.   I don't know what I would have to gain by getting a definitive diagnosis. I think possibly the only advantage to a DX would be that I could insist on gluten-free foods in settings where I am unable to have access to foods of my choice (hospital, rehab, nursing home)  and maybe having a medical reason to see a dietician?   please let me know if it's reasonable to just go back to the way I was eating.  Actually I do plan to buy certified gluten-free oats as that is the only grain I consume (and really like) so there will be some minor tweaks I hope and pray that I heal quickly from any possible damage that may have been done from 13 days of eating gluten.

      So I've been dealing with chasing the name celiac because of my body actively dealing with health issues related to celiac though not eating. Diagnosed in 1994 before foods eliminated from diet. After 25 years with former pcp I googled celiac specialist and she wasn't because of what ive been through. I wanted my results to be sent to my pcp but nothing was sent.I have email copies.I did one zoom call with np with team member from celiac specialist in Nov 2025 and she asked me why I wanted to know why I wanted the celiac diagnosis so bad, I sad I don't, its my life and I need revalidaion because its affecting me.KB stated well it shows you are.I asked then why am I going through all this.I was labeled unruly. Its been a celiac circus and medical has caused anxiety and depression no fault to my own other than being born with bad genetics. How is it legal for medical professionals to gaslight patients that are with an ailment coming for help to be downplayed? KB put in my records that she personally spent 120min with me and I think the zoom call was discussing celiac 80 min ONE ZOOM call.SHE is responsible for not explaining to my pcp about celiac disease am I right?

      I've noticed with my age and menopause my smell for bread gives me severe migraines and I know this.Its alarming that there are all these fabulous bakeries, sandwich places pizza places popping up in confined areas.Just the other day I suffered a migraine after I got done with my mri when a guy with a brown paper bag walk in front of me and I smelled that fresh dough bread with tuna, I got a migraine when we got home.I hate im that sensitive. Its alarming these places are popping up in airports as well.I just saw on the news that the airport ( can't remember which  one)was going to have a fabulous smelling bakery. Not for sensitive celiacs, this can alter their health during their travel which isn't safe. More awareness really NEEDS to be promoted, so much more than just a food consumption!FYI I did write to Stanislaus to let them know my thoughts on the medical field not knowing much about celiac and how it affects one.I also did message my gi the 3 specialist names that was given on previous post on questions on celiac. I pray its not on deaf door.
