It's easy to miss what we can't have anymore, but personally I think I am eating a higher quality of food since going gluten free. What meals are you eating right now that you absolutely love?

I used to order cheap pastas and chicken at restaurants, but not anymore. Today, I went to a local restaurant with coworkers, and I had:

a baked potato

steamed broccoli

garden salad, oil and vinegar on the side

a ribeye steak, rare!

OMG, so good. I never would have ordered a rare steak two years ago, but I loved it. Let's get some inspiration--what are you eating that's to die for?

Right at this very minute I'm eating a slice of my leftover b-day cake from Mr. Ritts bakery... a chocolate-peanut butter sacchertorte... So much for eating "better" - it's absolutely delicious but hardly healthy!! :P

Hmmm...I don't think anything I've eaten today is "to die for" but it's all very healthy. :)

Hot n creamy rice cereal w/ stevia

hazelnuts

mushrooms, garlic, green beans, asparagus stir fry

potato

macadamia nut butter

chicken

steamed swiss chard

blueberries

Imagine corn soup w/ cilantro

eggplant w/ tomato

As you can see...no sweets. :(

Since going gluten free, I've become a more creative/adventurous cook!

Breakfast: 2 slices Glutino Flax seed bread with almond butter

Lunch: leftover veggie stirfry from last night

Dinner: romaine lettuce, kale, spinach sauteed in olive oil, salt/pepper with thai noodles

Snack: tea and 2 Kinnikinnick double chocolate almond cookies...YUMMY!!!

As I write this I'm baking choclate chip, crisp rice cookies(gluten-free, of course) :)

Well, for brunch I had a stirfry of ground chicken, lots of onion, carrots and mushrooms. For a snack some mixed nuts and later some dark chocolate.

And for supper another stir fry, consisting of beef strips, onion, mushrooms and brussel sprouts.

Water to drink, and lots of supplements to regenerate my depleted body, so I get some energy back.

And yes, I actually love those stir fries, and think they're to die for! And tomorrow morning I'll put on my crock pot with lots of veggies (rutabaga, onion, carrots, leek, celery, green beans) and chicken thighs, so supper will be ready when I get home from work (I babysit two little boys two days a week). Yummy!!!!!!!!!! I love food from the crockpot, especially when I am coming home tired, and the smell greets me when entering my house, and I can just sit down and eat with my family, instead of first having to cook.

Day just started for me over here... yesterday I had:

Breakfast: rice crackers topped with goats cheese, olives and oregano, nuked to melt the cheese

banana, pear and dates cut in chunks and mixed to make a fruit salad

darjeeling tea - a whole pot :D

Lunch: two more bananas, raisins and nuts - I was in a hurry

Tea

Dinner: Huge salad of leafy greens, olive oil, lemon juice, a bit of salt and herbs, with smoked salmon on top, a couple more dates as dessert

Rooibos tea, with cardamom, yum!

Late night meal, what can I say, I didn't have a proper lunch...another salad, but this time with a can of tuna. Probably some raisins somewhere as well, because I eat them every day!

I enjoyed all my food immensely!

When I eat out, I do eat better, but not at home! I just made gluten-free mac and cheese cause I am sick and I wanted one of my old favorites.....LOL, so not too healthy at home, but when I do go out, there aren't a lot of "bad" foods that are Gluten-free, so I eat a salad, meat, and veggies, really a much better mean for you!!!

I've been eating really healthy lately too!

Breakfast -

2 clementines

Rice milk (vanilla) mmmmmmmmmm

2 Carmal Gluten-free Casein-free rice cake

bowl of carrots

Lunch-

1 bowl of Amy's gfdf soup

Almost a whole bag of gummi bears! :P:blink::rolleyes: (I was really craving something chewy and sweet. I really wanted those spice drops, you know, they are candy, like minty chewy, sugar covered? But I didn't know for sure if they were gluten free-as I am new to this)

Snack-

Apple (a HUGE green one!)

Haven't had dinner yet! But I'm excited because I have some smoked salmon waiting for me in the refridgorator....and more VANILLA RICE MILK-I can't get enough of that!!!!!!!!

SO yes, I am really enjoying my new diet-although I miss cookies, and the gluten/dairy/egg free one I tried gave me a bad bad bad reaction! But when finals are over, I will DEF. be in the kitchen a lot coming up with new dishes!!!!!!!!!!!!!!!! EXCITING!!!

Today I had a blueberry smoothie, rice crisps, a salad, orange juice, and tuna tacos. I made up my own recipe for tuna tacos the other day and I was quite impressed. Here it is!

2-3 tablespoons olive oil

1 yellow or sweet onion, diced

3-4 garlic cloves, diced

4-5 stalks of celery, diced

4-5 green onions, diced (optional)

1-2 tomatoes, diced (optional)

1 can of tuna

1 bottle of salsa

corn taco shells

Cook all vegetables in olive oil until they are soft, then add tuna. Place the vegetable and tuna mix into a taco and pour salsa over it. This recipe makes quite a bit of food and I make some up for lunch the next day! They are really yummy!

I'll probably have some french fries before I go to bed!

This morning I had Whole Foods gluten-free Bakeshop Cinnamon Raisin bread w/Smart Balance and orange juice. For lunch, my usual large salad w/ lots of veggies, some Lay's Natural Ruffles and ice water. This afternoon I made a batch of Gourmet Magazine's gluten-free choc. chip cookies. They turned out really good and I ate about 4 or 5 of them :rolleyes: . Tonight for dinner, I'm making Tinkyada spaghetti w/ meatballs. The meatballs are actually in the oven now.

I felt "normal" today. (Well, almost.)

Breakfast: Apple with almond butter

Lunch: Turkey sandwich on rice bread, Salt and Vinegar chips, Carrot sticks, Envirokids chocolate cereal bar, apple (wow, I must have been hungry!)

Snack: "Think Organic" Cashew/Pecan bar

A few more Salt and Vinegar chips

Dinner: Middle Eastern style meat patties; Coconut, saffron, carrot and raisin rice pilaf; broccoli and salad

It's fun to see what everyone else eats!

This morning so far I've had: apple with hazelnut butter; homemade hot chocolate with unsweetened cocoa, hazelnut milk and a little agave nectar.

For lunch I plan to have: Tinkyada penne with a meat sauce made with very lean ground beef and crushed tomatoes.

For dinner I plan to have more ground beef, some brown rice and a veggie (not sure which yet).

Snacks: Think Organic bar, banana, rice chips.

It's an odd day, and I'll have to leave my house at 4:00, so will be eating all the above early (except the snacks)...I may also grab something out, but what will depend on where I am, lol.

I usually have breakfast at work - so it has to be quick and portable. I toast rice bread and top with cashew or almond butter and a little bit of jelly. (also known as a PB&J!) Lunch is usually yesterdays dinner's left overs (last night was orange/ginger pork medallions, green beans and one of my favorite little secrets - McCain Smiley Fries... love 'em!). Tonight we're having breakfast for dinner... bacon, eggs and Alexia morning fries (hashbrowns).

Today was a little atypical b/c i had a law school final this morning, but...

Breakfast: Envirokidz cereal bar, starbucks americano w/ soy milk (usually van's waffles for breakfast)

Lunch: pear w/ peanut butter, turkey roll up (turkey as the wrap w/ cheese & honey dijon dressing), apple cider

Dinner: i dont know yet- probably tinkyada pasta and a sweet potato, probably some edys ice cream for dessert (im addicted to the choc fudge mousse)

After dinner: definitely a few drinks- hey, i'm halfway done w/ finals! :P

Mine looks better in print than it actually was today:

Breakfast:

- Grapes (Red)

- Lipton Tea with lots of sugar (I use sickening amounts of sugar)

Lunch:

- Grilled Chicken slices

- Roasted squash

Snack:

- Cremalita Blueberries & Cream Frozen Yogurt with Hershey's Syrup

Dinner:

- gluten-free Pizza (it wasn't that great)

I'm still hungry. Trying to figure out what else to eat. I think the Tostitos and salsa are calling me.

Breakfast: Rice cakes with peanut butter

Lunch: Tinkyada pasta salad, Tazo Awake tea with honey and Glutino breakfast bar

some Lays Stax chips

Supper: Salad, Chili (made with ground turkey) and a glass of red wine

Hmm, I think I need to add more fruit to my diet.

For breakfast - 2 pieces of Montina flour bread from my breadmaker with peanut butter and strawberry jelly. Lots of water

For lunch/dinner - asparagus/corn/carrots frozen veggies, turkey from a whole turkey i roasted yesterday, green beans, more Montina bread and butter and 2 chocolate potato starch/flour brownies I made, as well. (And a glass of milk)

      Hi I've been told I need a MRI on my bowels , I was booked for a colonoscopy, but because of my sever back issues and trapped nerve it can't be done , the nurse told me I will have to have a manitol drink a hour before the scan , I'm just a bit worried has I have issues with sweeteners like even a little,  I get a weird throat and ears and I've read it is a similar substance , not sure if anyone has had one of these scans or could give me some advise on the drink prep thanks in advance 😄

      Hi all ! Can a celiac attack be so intense that it causes your entire body to work in reverse? Meaning really bad pain,  neuropathy and muscle,  jaw pain,  the stomach issues , Horrible anxiety and confusion??  I had a Tums and you would think I ate poison. My jaw and stomach did not like it . Not the norm for me. Things that are simple are just out of control. Anyone ever have this happen??  I'm trying to figure out what I ate or did to bring on a celiac like attack. I had an idea before but yesterday I didn't have any gluten unless it was in a medication ?! Any positive suggestions ??  Thank you

      The following two lists are very helpful for anyone who is gluten sensitive and needs to avoid gluten when shopping. It's very important to learn to read labels and understand sources of hidden gluten, and to know some general information about product labelling--for example in the USA if wheat is a possible allergen it must be declared on a product's ingredient label like this: Allergens: Wheat.

      Tammy, in the food industry, "gluten free" doesn't mean the same thing as "no gluten". As Scott explained, the FDA (Food and Drug Administration) allows food companies to use the "gluten-free" label as long as the product does not contain more than 20 ppm (parts per million) of gluten. This number is based on studies the FDA did years ago to determine the reaction threshold for those with celiac disease. And the 20 ppm figure works for the majority of celiacs. There are those who are more sensitive, however, who still react to that amount. There is another, stricter standard known as "Certified Gluten Free" which was developed by a third party organization known as GFCO which requires not more than 10 ppm of gluten. So, when you see "GFCO" or "Certified Gluten Free" labels on food items you know they are manufactured with a stricter standard concerning gluten content. Having said all that, even though you may read the disclaimer on a food item that says the spices may contain wheat, barley or rye (the gluten grains), you should be able to trust that the amount of gluten the spices may contain is so small it allows the total product to meet the requirements of gluten free or certified gluten free labeling. I hope this helps.
