Found this recipe for Tortillas's I think I really want to try it! What do you guys think?

 

 

Like corn tortillas, these become pliable when heated. Pop them in the microwave or warm them in a dry skillet before using. If you like crispy edges, add a little oil to the pan when reheating.

INGREDIENTS:

  • 3/4 cup yellow split peas
  • 1/4 cup long-grain white rice
  • 1/4 teaspoon salt
  • 1/2 cup water
  • oil for the pan

DIRECTIONS:

  1. Cover the split peas and rice with 2 inches of water. Cover and set aside on the counter overnight.
  2. Drain the peas and rice, then put them into the bowl of a food processor. Add the salt, then process until the mixture is finely chopped, scraping down the sides of the bowl as necessary.
  3. With the motor running, gradually pour in ½ cup water. Scrape down the sides of the bowl, then continue to process for 3 minutes. The batter should be the consistency of pancake batter (but grainy). If it’s too thick, stir in a spoonful or more of water.
  4. Heat a skillet over medium heat. Once hot, add a thin layer of oil. Pour in 1/3 cup of the batter, then spread it around with a rubber spatula until you have a 7-inch tortilla. Cook for 1-2 minutes, until the tortilla is golden around the edges. Flip and cook 30 seconds to 1 minute more, until bottom side is lightly freckled. Remove from the pan, then repeat the process for the remaining batter.

Yield: 7 tortillas

I made a Grand Marnier Souffle with Creme Anglaise for dessert last night. First time I've made it since going gluten free. I just substituted cornstarch for flour and it came out fine.

 

I've got nothing fun to share...so I thought I'd add RMJ's recipe to this thread  :P

We saw it was delayed. Daytona is @150 miles north of us. We had 83 and sunny today, but rain is coming this week and a lower average temp. (like maybe 76 ?? lol)

 

The hubs rarely makes any requests and he was craving corned beef and cabbage. (I have no luck eating preserved meats like that, but...) I love and humor him and he put up mirrors, art work, towel racks, bird feeders, and shelves today, so he deserved a treat!

 Therefore,

Corned beef and cabbage, carrots, potatoes, baby onions and turnips he got!. YUM!!

Last night I grilled a pork tenderloin and had it with some leftover sides from two days before.  Had my IV infusion this week and it beat the heck out of me this time so I haven't done a lot of cooking.  Tonight I am going to whip up breakfast for dinner. :D

We're on the road vacationing in Florida, so we made gluten free waffles at a park for lunch and served them with coconut butter, peanut butter, applesauce, and jam as well as some recently picked Florida oranges. (yay for power plugs for my waffle iron and blender!) For supper, we went out to eat at California Pizza Kitchen.

 

We just started making cooked food on the road instead of buying gluten-free bread and so far, I love it! On our trip down to Florida, when we stopped because of an unexpected tire problem, we cooked up some gluten-free oatmeal and raisins in the lobby of the tire shop. (in a rice cooker) For lunch, we found a rest area with electrical outlets and cooked up spanish rice and beans in my rice cooker and ate it with some salsa and had it with hummus and veggies. 

 

I'm so done with spending $50-100 on bread for vacation, so I'm glad that there are other viable options!

I love my rice cooker :wub: I use it for so many things  in addition to rice :P

My fave is lentils & brown rice with red onion  ,,, just throw it all in the rice cooker and you have  a fresh cooked meal :D

for a 1/2 cup of uncooked  lentils and a 1/2 cup of  uncooked brown rice I add 3 cups of water. I also add red onion and what ever spices I feel like that day  :P  My rice cooker has an automatic timer but the cooking time is about 45 - 50 mins

 

 

This is doable in the rice cooker because the brown rice and lentils have the same cooking time.

my bff was there - the last time she went to a race, we went to talladega and there were tornado warnings all day the saturday before the race!!  i texted her and told her to leave the track yesterday.  so she did and it quit raining LOLZ

 

we made the most awesome battered and fried shrimp the other night!!  i tweaked a batter recipe and it turned out really good  :)  with purple potatoes and asparagus (roasted evoo, s&p)  *NOTE - do not forget that you ate purple potatoes.,  it is Very Alarming!!*

 

yesterday, we made Daytona Sandwich (french bread dough shaped like the track)  it's really roasted chicken, fresh spinach, roasted red peppers, and pesto/mayo.  we started out making it to amuse the kids, but the kids are now pushing 30 and still demand it.  i made my own gluten-free version <shaped like a drag strip haha udi's french baguette)  and i made homemade pimento cheese :)

Glad your bff left the track....was very glad they were able to squeeze the race in between storm cells and not have to holdover to a Monday restart!!!!  Really glad the Little E won :wub: what a great victory lap...never seen him look that happy.

 

Fun sandwiches....you'd need an extra big sandwich considering how long it took to get the race in the books ;)

 

Yesterday....I had a waffle and today two slices of Canyon Bakehouse....crossing everything I got that I can handle a little bread  :ph34r:

Just having a plain ole burger and some roasted asparagus tonight. It's plain city for me for a few days. (grumble grumble...) 

 

but hey, the sun's out, so not complaining too loudly.

Last night I made pancakes with marionberry syrup and scrambled eggs. I still have no idea what's for dinner tonight. I'll probably disappoint my husband with burgers and fries. I don't want any leftover floating around because we're going out for our anniversary tomorrow. We celebrate whenever it's convenient for us at the end of February/beginning of March since we don't have an anniversary most years.

 

I'm feeling pretty spunky today. I finally went for my dexa scan (it only took 2 years to have decent insurance to pay for it) and he told me that my doctor would have the report in a few hours but he let me know right away that it was perfectly fine. I guess that habit of drinking gallons of milk a week my entire life paid off. With all the other crap I have to deal with, at least this is one concern I can completely wave off. It's nice to have good news for a change. :D

Yesterday was perfect. The year we got married it was insanely warm, I wore a sleeveless dress and no coat. In February. So far every year we've celebrated, we've never had to wear winter coats. Sometimes we do wait til March to celebrate though since we don't usually have an anniversary. Although yesterday was a tad chilly with the rain and I did wear a sweater. We went to Wallaby's which is a BBQ place for lunch at their just opened new location which is much closer to home. Went shopping for a while and went to the movies to see Hunger Games.

 

Tonight I'll make a pork tenderloin, potato pancakes and glazed carrots.

Last night we had Cowboy Steak Soup - its simple and quick - sirloin, jar of salsa, beef broth, beans, spinach and steak fries

      @Zuma888, The antibodies produced in response to gluten are made in the intestines.  When the body is provoked sufficiently, the antibodies overflow out of the intestines and into the blood stream.  Once in the blood stream, the antibodies can be measured with tTg IgA tests.  Three grams of gluten per day for two weeks minimum is enough gluten to make you feel the symptoms of having been glutened, but the antibodies are not in sufficient quantity to be measured in the blood. Ten grams of gluten per day for a minimum of two weeks is required to get the anti gluten antibodies at a high enough level in the blood stream to be measured by tTg IgA tests. So, no, occasional cross contamination or (heaven forbid) intentional cheat days will not be sufficient for tTg IgA testing.  You will still be making antibodies which will still be causing inflammation and damage to the intestines and body.  Histamine is released as part of the immune response to gluten.  High histamine levels lead to food sensitivities, brain fog, and body aches.   The damage done to the gastrointestinal tract affects the absorption of essential vitamins and minerals.  Malabsorption of fats can cause changes in stools.  Insufficient absorption of vitamins and minerals can cause damage to other organs like the thyroid if it can't get enough Selenium, iodine, iron, zinc, and Thiamine.  Brain fog and fatigue can be caused by low Thiamine and other B Complex vitamins.  Vitamin D is needed to regulate the immune system.  One gene is all that's needed to develop Celiac disease.  I know a Celiac diagnosis is a change that can be difficult to get your head around.  Many people go through the five stages of grief.  One stage is "bargaining".  Sounds like you're stuck there.  Every little cheat counts to your detriment.  But sticking to a gluten free diet, makes every meal a success.   Read the comments below the article...       No, I would not say this at all. If you were diagnosed with celiac disease and were gluten-free for a while, you could have gone into remission. Everyone's body is different, and some celiacs may be able to get regular contamination and not end up with damaged villi and positive antibody tests, while others who ingest tiny amounts will relapse and have full blown symptoms and flattened villi.  Only a full gluten challenge would reveal where you are at this point. Here is more info about how to do a gluten challenge for a celiac disease blood panel, or for an endoscopy: and this recent study recommends 4-6 slices of wheat bread per day:

      The most common nutrient deficiencies associated with celiac disease that may lead to testing for the condition include iron, vitamin D, folate (vitamin B9), vitamin B12, calcium, zinc, and magnesium.  Unfortunately many doctors, including my own doctor at the time, don't do extensive follow up testing for a broad range of nutrient deficiencies, nor recommend that those just diagnosed with celiac disease take a broad spectrum vitamin/mineral supplement, which would greatly benefit most, if not all, newly diagnosed celiacs.

      Great  post. The skin issue can be intolerable. I have been taking niacinamide for the past month and have improved with respect to the blistering lesions.

      I've found taking Niacin Vitamin B 3 in the form that causes flushing (nicotinic acid) helps immensely to clear my skin.  The flushing is harmless and goes away the longer Niacin is taken.  The flushing (vasodilation in the skin) helps the body get rid of the tTg 3 IgA antibodies that cause the blisters.  TTg 2 IgA antibodies are found in the blood and are measured in diagnostic testing for Celiac.  People with Dermatitis Herpetiformis make tTg 3 as well as tTg 2 antibodies.  Niacin Vitamin B3 in the non flushing form niacinamide also works without the flushing, but takes a bit longer.   I also avoid foods containing high levels of iodine because iodine activates the tTg 3 IgA antibodies to become more active and make more blisters.  I avoid kelp (nori, seaweed) and crustaceans,  eggs, dairy products, and iodized table salt.   Niacinamide and Nicotinic acid are water soluble and harmless.  I'd much rather take Niacin than Dapsone with scary side effects.
