This idea is form a Dutch coeliac forum that I also visit. It's guaranteed to bring a smile to your face anytime.

Right, let me start off.

I'm happy today because it's Sinterklaas, a traditional Dutch holiday. When I arrived at work today Sinterklaas was at the factory gates, together with a lot of Pieten. Every worker got a present, it was a wind-up flashlight which can be used without batteries. Very handy for emergencies or camping trips. Thank you Sinterklaas! We also got a chocolate initial, which luckily was gluten-free.

This weekend I have baked kruidnoten, tiny spiced cookies which are traditional at Sinterklaas. My co-workers loved them and said they never expected a diet-food product to taste this good. It may be food intended for a medical diet, but it shouldn't have to taste that way ;) Tonight there are friends coming over for dinner. I've bought them each a small present and dressed those up like Sint and Piet.

Happy Sinterklaas!

I am happy that I woke up this morning and that I have a low stress day today. I am also happy that my Christmas shopping is done and will have fun wrapping and packing stuff off for shipping to my family in plenty of time to beat the rush.

I am happy for many reasons - I am blessed with more than I need. My husband is supportive and I am cherished. My pantry is bursting full of enthralling ingredients and I get to spend today in the kitchen! :) Although it is very cold outside it is bright and sunny. I strongly dislike our winters BUT this winter it did not rain before the snow came so it is not too slippery to walk outside which I will do this afternoon. I am alive to live another day. :)

I'm happy because God has blessed me richly. I grew up in the best family a person could hope for, with wonderful, loving, supportive parents. I am living in the place I love best. I am doing what I love for a living. I am surrounded by true friends. The Christmas decorations look festive, the music is fun to play, and the coffee tastes good.

AND, the custom made guitar I ordered last year is finally done and I will probably have it in my hands by Friday!!!!! (Merry Christmas to me!)

Yes, bartfull, we want to hear you play! Hooray for low stress, full pantries, and good food! Ellie, are kruidnoten like German pfeffernusse? I've been thinking about baking those this year. I haven't made them for years, not since going gluten-free.

I'm happy today, because it's one day closer to Friday. My baby brother (32 and about a foot taller than me) arrives for a visit on Friday; I haven't seen him in almost three years. He'll get to relax with no stress. And I'll get to feed him good food. Can't wait to see him!

Happy today because my husband made me an awesome dinner tonight, he is on vacation this week but I have to work. He made Scallops Provencal, saute fresh baby spinach and fresh green salad with nuts and cranberries. He's my # 1 support and I'm so thankful for all his support. :rolleyes:

Your dinner sounds lovely and your husband even more so! Mine is that way, too - he spoils me to bits! His support is unwavering and that is definitely something to be thankful for. :)

Happy today because it snowed!!! I live in Utah and we have had a mild winter so far. It's nice to see some snow. Happy New Years everyone!!!

Charese. I live in Utah too. We got snow and within an hour of sunlight every neighbor was shoveling their drive way. We left ours and it was melted by 2 pm. lol

Now it is almost melted off our lawn. I'm happy for a mild winter. But I suspect this winter will last until July. Fireworks in the snow. lol

I'm happy today because I actually had enough energy the past 2 days to clean up the house (after a very long time of being too down to get stuff done)...I still have more to do, but it is a start! And I am happy that I have a sister who came over to help go through the kid's things.

I'm in Utah too. I loved the snow we got! After last spring's serious flooding a mild winter is sounding good.

This morning I'm practically walking on air. I'm making pies and cookies today and going shopping later in the afternoon. ($15 off a purchase of $15 or more is too good to pass up!)

Best of all though, Beauty and the Beast (3D) will be in theaters in two more days. :D I know I'm 34 but it is my very favorite movie. It's the perfect fairy tale of common girl becomes a princess with a female character who has always reminded me of me. I get so excited every time an ad for it comes on the tv that I bounce in my seat, I'm sure my husband can't wait for it to be over. :lol:

Did you get to go to the sing-a-long in October (or maybe it was September) in 2010? I was just as excited then but couldn't manage to drag my husband along, which really didn't bother me at $17 a ticket. I finally bought the dvd last year and watch it at least once a month.

Also... omg omg omg omg one more day. I already am like a kid Christmas Eve night and can't sleep because I'm so excited.

No I didn't, wanted to though and I really hope I will get out to see the 3D one (saved up Christmas money, but I have to pay for daughters ballet recital costume).

We have the movie on VHS and my girls and I watch it probably once a week since it's my youngest girls favorite princess movie (she loves Chip :) ). I really need to get it on DVD soon.

I am rejoicing today because I have had FOUR consecutive days where my chronic pain has been about a 4/10 which has not happened for a couple of years. Four whole days! Sure, I still hurt a lot but I can do more for longer! I was able to sit for half an hour yesterday. YAY! My doctor started me on a muscle relaxant and analgesic combo that is actually working. My hope that it continues to help and that I can get off the meds soon. I have been on both meds at different times but not together.

Drawback? Stupid weight gain of 7 lb in 7 days. One of the meds top side effect is weight gain. :angry: My dietitian assures me it should level off in a month or so and to be patient. But I just bought some fabulous jeans that no longer do up. :(

My hope is that if I continue to feel better that I will be able to do more physical exercise and that this weight will disappear (plus about 20 other stubborn pounds I need to rid myself of). I also hope that I will not continue to gain any more weight which places additional stress on my spine, core, etc. We will see!

I'm SO happy you're getting some relief! I hope the trend continues. :D Bummer about the side effect though.

I remember a time when I had put on a few pounds and had to lay back on the bed to fasten my favorite jeans...ah, the good old days. ;)

I'm happy today because there is a snowstorm coming - I'm off from work so the plan is to curl up by the fireplace & enjoy the fact that I don't have to go out driving in it. Maybe I'll attempt a snowman... I love a lazy, have to do absolutely nothing day like today!!!

Well, kiddo, are you snowbound and warm and cozy?? :) How are you feeling, BTW!?? Better?!

It's snowing here today (NY) and I am HAPPY because I figured out what was bothering me the past 2 months and messing with my healing curve :( ....bean flours!! yup, beans... as in all legumes. I knew soy was a culprit, but never thought ALL of them could do it....Who'da thunk it?? :rolleyes:

Out they go! Detective work pays off. B)

I am happy as I get to spend two weeks with my family whom I have not seen for many months as they all live several hours away. Of course cross contamination is a concern so I will be doing all the cooking at all four homes I will be staying at. For that I am thankful because if I cannot cook for more than about two days I get antsy. I am going to be introducing my family to more interesting ingredients I will be taking along! :P

The sun is shining brightly and it is calm outside which is rare as we live on the prairies. It is still cold but no longer -35F so I am going to bundle up and go for a walk in the park. :)

We have two Europe trips booked for 2012 and it is so wonderful to have things to be excited about and look forward to. :D

      I think, after reading this, that you areso traumatized by not being able yo understand what your medical advisors have been  what medical conditions are that you would like to find a group of people who also feel traumatized who would agree with you and also support you. You are on a crusade much as the way the US Cabinet  official, the Health Director of our nation is in trying to change what he considers outdated and incorrect health advisories. He does not have the education, background or experience to be in the position he occupies and is not making beneficial decisions. That man suffered a terrible trauma early in his life when his father was assonated. We see now how he developed and worked himself into a powerful position.  Unless you are willing to take some advice or  are willing to use a few of the known methods of starting on a path to better health then not many of us on this Celiac Forum will be able to join you in a continuing series of complaints about medical advisors.    I am almost 90 years old. I am strictly gluten free. I use 2 herbs to help me stay as clear minded as possible. You are not wrong in complaining about medical practitioners. You might be more effective with a clearer mind, less anger and a more comfortable life if you would just try some of the suggestions offered by our fellow celiac volunteers.

      Thus has got to STOP , medical bit believing us! I literally went through 31 years thinking it was just a food allergy as its downplayed by medical if THEY weren't the ones who diagnosed us! Im positive for HLA-DQ2 which is first celiac patient per Iran and Turkey. Here in the States especially in Cali its why do you feel that way? Why do you think your celiac? Your not eating gluten so its something else.Medical caused me depression. I thought I was safe with my former pcp for 25 years considering i thought everything I went through and going through will be available when I get fired again for health. Health not write-ups my health always come back when you're better.Im not and being tossed away at no fault to my own other than shitty genes.I was denied disability because person said he didn't know how to classify me! I said Im celiac, i have ibs, hernia, sciatica, high blood pressure, in constant pain have skin and eye issues and menopause intensified everything. With that my celiac nightmare began to reprove my disregarded disease to a bunch of clowns who think they are my careteam when they said I didn't have...I feel Im still breathing so I can fight this so no body else has to deal with this nightmare. Starting over with " new care team" and waisting more time on why I think I am when diagnosed in 1994 before food eliminated from my diet. P.s everything i went through I did write to medical board, so pretty sure I will continue to have a hard time.

      @Scatterbrain, Thiamine Vitamin B1 and amino acid Taurine work together.  Our bodies can make Taurine from meats consumed.  Our bodies cannot make Thiamine and must consume thiamine from food.  Meat is the best source of B vitamins like Thiamine.   Vegetarians may not make sufficient taurine since they don't eat meat sources of taurine.  Seaweed is the best vegetarian source of taurine. Vegetarians may not consume sufficient Thiamine since few veggies are good sources.  Whole grains, legumes, and nuts and seeds contain thiamine.  Many of these sources can be hard to digest and absorb for people with Celiac disease.   You may find taking the forms of thiamine called Benfotiamine or TTFD (tetrahydrofurfuryl disulfide) and a B Complex will give the benefits you're looking for better than taurine alone.

      @Jmartes71, I went to Doterra's site and had a look around.  The Doterra TerraZyme supplement really jumped out at me.  Since we, as Celiacs, often have digestive problems, I looked at the ingredients.  The majority of the enzymes in this supplement are made using black mold, Aspergillus!  Other enzymes are made by yeast Saccharomyces!  Considering the fact that Celiac often have permeable intestines (leaky gut syndrome), I would be very hesitant to take a product like this.  Although there may not be live black mold or yeast in the product, the enzymes may still cause an immune system response which would definitely cause inflammation throughout the body.   Skin, eyes, and intestines are all made from the same basic type of cells.  Your skin on the outside and eyes can reflect how irritated the intestines are on the inside.  Our skin, eyes, and intestines all need the same vitamins and nutrients to be healthy:  Vitamin A, Niacin B3 and Tryptophan, Riboflavin B2, Biotin B7, Vitamin C, and Omega Threes.  Remember that the eight B vitamins work together.  Just taking high doses of just one, vitamin like B12, can cause a deficiency in the others.  Taking high doses of B12 can mask a Folate B9 deficiency.  If you take B12, please take a B Complex, too.  Thiamine B1 can be taken in high doses safely without toxicity.  Thiamine is needed by itself to produce energy so every cell in the body can function, but Thiamine also works with the other B vitamins to make life sustaining enzymes and digestive enzymes.  Deficiencies in either Niacin, Vitamin C, or Thiamine can cause digestive problems resulting in Pellagra, Scurvy, and Gastrointestinal Beriberi.   If you change your diet, you will change your intestinal microbiome.  Following the Autoimmune Protocol Diet, a Paleo diet, will starve out SIBO bacteria.  Thiamine keeps bacteria in check so they don't get out of control as in SIBO.  Thiamine also keeps MOLDS and Yeasts from overgrowth.   Menopause symptoms and menstrual irregularities are symptomatic of low Vitamin D.   Doctors are not as knowledgeable about malnutrition as we need them to be.  A nutritionist or dietician would be more helpful.   Take control of your diet and nutrition.  Quit looking for a pill that's going to make you feel better overnight.  The Celiac journey is a marathon, not a sprint.   "Let food be your medicine, and let medicine be your food."

      The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.
