Glutened, only new product udi's bread
Ennis-TX replied to Lakegirl's topic in Super Sensitive People
Udis is used by SO many and such a big Celiac brand I doubt they have any gluten. My thoughts would be the other ingredients....many find they react to stuff like xantham gum much like gluten sort of a intolerance that is common among celiacs. Could also be a overload of other ingredients, yeast can cause gut issues in some, the starch load, etc. Remove the... -

ARCHIVED Why are the symptoms still here?
Ennis-TX replied to kdp's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Crumbs, residue, glutend cook ware, condiment jars, eating out, oats, all can be sources of CC....my other thoughts....are you eating meats, and plenty of greens? Many of the side effects of gluten with the depression concentration muscle weakness can be related to nutrient deficiencies associated with this disease. I would look at a full spectrum B-vitamin... -
ARCHIVED I'm sort of terrified. Please help!!!
Ennis-TX replied to katiedeer's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
HUH? I went grain free/keto to manage AI disease better. I have never heard of developing diabetes because of it. IN FACT many manage their blood sugar and diabetes after by going grain free. They make plenty of grain free, chips, breads, pasta, pizza crust, etc. I even do a grain free keto bread in my bakery that is a hit among diabetics. If you need help... -
Dairy free Pizza cheese alternatives?
Ennis-TX replied to mystic's topic in Gluten-Free Recipes & Cooking Tips
I found something called leaf Cuisine cheese spread this year...VERY few ingredients, gluten free, and has a nice cheezy tang to it of a fresh cultured cheese. The Smoked Gouda and Pepper Jack Spreads are my favorite over bread, try it on some toasted (I use my grain free versions akin to Julian Bakery that I make) with some meat lettuce and tomato...OMG... -
STILL contains gluten...better then coors....yeah would be lower content but for celiacs your still poisoning yourself......FFS just drink antifreeze it's faster and to the end the same effect....forgive the bluntness but I have to put it in to perspective....Celiac Disease - Gluten=Poison.....to that extent antifreeze is a good example, sweet tasting supposedly...

ARCHIVED Smartcakes?
Ennis-TX replied to Nikki2777's topic in Gluten-Free Foods, Products, Shopping & Medications
Few things to consider with those, 1. High fiber, if your not used to it there is going to be a adjustment period of bloat, gas, maybe constipation, 2. Erythritol, I use it daily but if you do not use sugar alcohols often there is again a adjustment phase for your gut normally causing diarrea 3. Whey Protein, many with celaiacs can have issues with various...- 5 replies

ARCHIVED Probably Celiac.. Scared to Officially Test. Tell me if I should.
Ennis-TX replied to Concernedcc's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
.....it got worse, random feeling loss, vomiting every other meal, 7-11 days of constipation, being stuck in bed for a few days a month....I thought I was dying and running a bucket list at the time. The psychological aspect of it....It effected my brain so bad I would turn into Mr. Hyde and just start punching walls out of confusion and anger at why my body...- 13 replies

YEP, I did not notice the pain til I was in my early 20s, even then it was mild, more other issues kept compounded it the pain came around later with other symptoms. I did something stupid in my 20s that shocked my immune system and caused my symptoms to shift and change....This disease is a chameleon with over hundreds of possible symptoms different for...- 13 replies

ARCHIVED Food allergy panel results
Ennis-TX replied to selectivefocus's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have a theory that the body had some association of these foods being a problem while fighting the gluten if they were staples. You removed the gluten and now you body has these whole defense force on standby and overly active. They see anything suspicious and open fire guns blazing with a immune reaction. Just remove them for now and try them again in... -

The constipation hit home for me as that and the no energy even chugging energy drinks helped very little growing up. As a kid I got the ADHD dia. but pretty sure I am lol. Oh the constipation is caused by a magnesium deficiency in most, use Natural Vitality Calm to fix it. Start off with 1/4 tsp a day and slowly up it over a few weeks to the full dose or...- 13 replies

ARCHIVED Going about testing
Ennis-TX replied to asdf's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yeah, I have my own list.....many went away after years of healing....some within a few months of going gluten-free...thank god pea protein was fine after a few months. Others stuck around for years, others roll in at random for a few weeks, and a few come back if I get CCed. Try a rotating diet removing a staple food for a week every few months to prevent... -
ARCHIVED Food...
Ennis-TX replied to Enjen's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Keep eating gluten til they are done with that scope, and try a whole foods only diet for a bit and drop the breads for a few months til you no longer recall the taste. btw if you have UC ....those might become even off limits.....everyone is different. But my UC will flare up with carbs, I did a post a few days ago. My is a bit odd but I found eating anything... -
Chocolate is normally magnesium.....if you have normal BMs daily go with doctors best magnesium powder in a tea with a bit of stevia/water enhancer. Other cravings mean different things....I always crave chocolate, used to crave fruit but in the past year of not eating fruit, sugars, grains for my other AI disease I now crave nuts, seeds like a mad man...

ARCHIVED Can you have celiac symptoms even when gluten free?
Ennis-TX replied to EndoAbi's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yes some people do not show up on the blood test at all, one of our regulars is this way. They did show up on the scope with the intestinal damage. CC is a huge issue and can take some people months to decon, and clean out their house and get the diet down good enough. Think about gluten is a protein smaller then a germ, like blood a protein that bleach can...- 2 replies

ARCHIVED gluten-free breads
Ennis-TX replied to Lopez6amsell's topic in Gluten-Free Foods, Products, Shopping & Medications
I had to find something grain free, corn free, and xantham gum free and went with Julian Bakery breads you order online. I reverse engineered their recipe and make my own coconut flour based one in my bakery now that is more flexible. Their seed one.....is still something I order for a treat since I have not been able to recreate it. AMAZING. I have a list... -
ARCHIVED Going about testing
Ennis-TX replied to asdf's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Read this about screening Open Original Shared Link I am a bit rushed right now with some things, but I can say all your symptoms point at celiac. The testing involves eating gluten for 12 weeks at least 1/2 a slice a bread a day prior to the blood test. Then you will need to schedule a endoscope and be sure to be eating it another 2 weeks prior... -
Ingredients: Semi-sweet chocolate chips (sugar, chocolate liquor, cocoa butter, milk fat, soy lecithin (an emulsifier), vanilla, natural flavor), Rice flour, Butter, Brown sugar, Sugar, Eggs, Vanilla extract, Baking soda, Salt, Xanthan gum, and Water Many Celiacs have to remove dairy from their diet for a few months as the enzymes that break down dairy...

Thought I would go over what I have been on and done to treat my UC and see if it benefits anyone else. I was diagnosed almost exactly a year ago in February 2017. UC in different people has different flare triggers seemingly most common are Gluten, Diary, Soy. Some cases are Caffeine, Coffee, chocolate, Glucose, Fructose, Sucralose, Carbs. For me the 3 top...

Weights still bouncing 130ish for 5' 10" (I lost a inch in the past year?! seems to be in my spine)...bit frustrating but a gluten exposure in December and a bad cold early January really messed with my immune system....damn thing brought back many intolerance issues, randomly going purge mode after some meals with no real pattern as to what is making it...

Can I have Celiac even if I test negative?
Ennis-TX replied to Bellelovegood416's topic in Introduce Yourself / Share Stuff
Next time you get the rash, if it is DH you can go to a dermatologist, they will take a biopsy on a clear spot next the the lesion and check it for antibodies....NOTE I do not get DH as a symptom I am quoting and commenting on info I picked up. -

I tend to swear by the keto diet for staying lean and muscular. Once you hit ketosis your body burns fat for energy...so if your not constantly eating it goes straight to your fat stores then your muscles for food. I had to take to the diet to manage my Ulcerative colitis but it has had many benefits in my energy levels (biking/walking average 16miles a day...

Pretty sure Smirnoff is off too...they say gluten free here in some cases but use barely again......and testing as far as it goes and accuracy issues have shone in some cases to contain gluten. Personally I would suggest something like Ace Hard Ciders, or Austin Ciders, I cook and use Rum often (tiny bit in baked goods or in a stir fry works wonders...
