For most people, "pretty darned simple" is a bowl of chex. :P

I'm cooking meatloaf. I posted a recipe, but waiting for moderator approval. Is quite good.

Way too hot to cook here and

I was trying to decide what to have for dinner when I saw your thread. Thanks for the idea,, I had some leftover meatloaf in the freezer that I pulled out for dinner :)

Me too, but it makes me sick if I eat it solo. Usually I have peanut butter or cheese at the same time.

I'd really be trying to raid your recipes if I didn't have so many other food intolerances/allergies.

We're having grilled fish again tonight. I marinated it in pineapple juice, fish sauce and pepper. That's with salad and sweet potatos for me, roasted white taters for him. Got to go eat now...

We're trying to use up everything in the fridge so tonight I had chicken marinaded in Asian chili sauce and cucumbers with roasted red pepper hummus. Hubby had leftover bison taco meat, carmelized onions and bell peppers in a bowl over rice with a broken up tortilla. I cooked up the rest of my boneless skinless chicken breasts in three ways--lemon pepper chicken, rotisserie and in the Asian chili sauce. Now I have enough cooked food to last us until Friday and I can pack all the pots and pans and even all my spices up for the move.

I'll just be having some mashed potato, because my mum made bolognese sauce and used some from a jar in it.. she forgot to read the label... dear oh dear :(

We had a stir fry tonight. Lots of veges with some fruit and nuts in it. Yummy! Finished cleaning up the kitchen now heading off to bed. Early start tomorrow for work :(

Thinking about making pancakes for dinner (as my family went out for them this morning and i've been craving them).

Tonight for dinner we had grilled sirloin burgers. I sauteed some sliced onions and portabella mushrooms in olive oil with s&p to top the burgers. We had roasted potatoes too. When we sat down to dinner, I asked my non gluten-free sig other if he'd like some bread. He said "yes!". I said "Too bad!" and cracked up laughing and you know how it goes, when one of you starts laughing the other one does too. We laughed and laughed. "It's better that a wish burger, where you WISH you had some meat!" (Wonder what the Blues Brother would have sang about gluten-free?)

Then he said, "You know, I've had to become better at grilling with this diet of yours. I used to be able to slap a slice of cheese on a burger, or drown it in bbq sauce if I cooked it too long. We'd stick it on buns and you'd never know." "Now that you want things cooked naked, I really have to pay attention."

So tonight we got into naked cooking without buns. It was all good. And I'm finally getting my sense of humor back. Yay!

Plain boiled white rice for me, some lovely homemade vichyssoise soup I made the other day for my husband. I have been quite ill lately so am keeping it bland and simple until whatever this is passes.

Add a little home made chicken broth to that. It adds a tad bit more to flavor and you know what they say about chicken soup, maybe that will do the same?

I normally do that when i'm not feeling well.

Not cooking tonight. Eating at Maggiano's Italian restaurant and ordering off their gluten free menu to celebrate my HQ credentias being restored to me for passing the NTE years ago. YEH!

I am so freaking excited to start cooking dinner tonight!

Butter chicken

Jasmine Rice

Aloo Gobi (Cauliflower and potato curry) with the cauliflower and potatoes from my own garden!

Pakoras with tamarind and mango chutneys

All homemade! I love cooking Indian food but only find the time once a month or so. I've never made pakoras before but I bought a deep fryer so I can have all my favourite deep fried foods at home where I'm safe.

Maybe a stew tonight in the slow cooker. It's so cold here so my child is only having her breakfast now at 9:30 lol. Will make a loaf of bread to have with it too.

Tonight's dinner was not very exciting. We had some frozen stuffed baked potatoes. They were really lacking in flavor! Also some bacon that needs to be used up and salad. The salad was the best part. That's kind of sad.

I was totally lazy. Two rice cakes with peanut butter. :(

Thanks! I've had a somewhat rough two weeks - severe D, vomiting, cramps, pain. Surprisingly enough I have not lost a single pound. My pain threshhold is high but I am not liking this. ER doctor questioned me about travels. However, with celiac disease, I have no idea whether this is my first glutening or what? I have not eaten out for ages and our home is strictly gluten-free. Perhaps it is a sign of another intolerance but I have no clue what because I get ill no matter what I eat. We had fab food last night because I was feeling better but am ill again now. Just cannot link this with anything I am eating at all. I am seeing my GP Wednesday.

What are your daily meals? Guilty pleasure snacks? Protein bars? I feel when looking for gluten free foods they are filled with sugar cholesterol. Looking for healthy gluten-free protein bars. Something to fill since sometimes I feel like not to eat anything. Especially if on vacation and unsure of cross contamination I figure go with a salad and protein bar to fill and play it safe.

Unfortunately, there is presently no test for NCGS. Celiac disease must first be ruled out. NCGS is thought to be much more common than celiac disease. We know that celiac disease is an autoimmune disorder but the mechanism of NCGS is less clear. Both call for an elimination of gluten from the diet.

Thanks for your reply Trents…most appreciated.  I am unfamiliar with celiac labs terminology so I wanted to know if the presence of HLA variants (DA:101, DA:105, DQB1:0301 and DQB1:0501) that the labs detected had any merit in predisposing one to be more sensitive to gluten/carbs than the general population?  Also,  I found what you said about NCGS very interesting and I appreciate you mentioning that.  I’ve worked hard to research and advocate for myself with my Hematologist and now with a new GI, since my bowel surgery and to maintain my Vitamin B12 health concurrent with keeping my levels of Iron in the optimal range. I’ve been tested for SIBO (do not have it), biopsy showed negative for HPylori, and have had Fecal studies done (nothing showed up) and I understand how a loss of a large amount of bowel could be highly impacting re: SIBO, malabsorption and motility issues. So I’ve managed pretty well diet and elimination-wise until just recently. That said, this new problem with extreme bloating, distention and upper girth, NAFLD just occured over the last 4 months so it is new for me and I thought celiac might be a possible issue. I’ll probably just continue on in this less gluten/carbs seem to be better for me and see how reintroducing certain foods go.  Thanks again.

Thanks bumped it up and now take all 3 vitamins 2 capsules each with the super b complex at breakfast. I will give it some time to see if I notice a difference. I am going to track my eating daily diary on a myfitness pal app to see if the "claimed" gluten free foods bother me or not.

Please can anyone help. I was diagnosed on 23rd December and I am trying my best to get my head around all the things to look out for. I have read that yeast extract is not to be eaten by coeliacs. Why? And is this all yeast extract. Or is this information wrong. Thanks.
