    I'm not cooking tonight. I made a Teff wrap for daughter with a little margarine, lettuce and turkey. She is also having baby carrots and apple slices. Not sure what I'll have. Maybe a can of chili.

    OK, I thought we should eat a balanced/healthy meal tonight. Plans changed to Herbed Salad with Frisee, Lardons, Capers, Pears and Blood Red Oranges with Sesame Balsamic Vinaigrette; Devilled Eggs with Oven Roasted Red Peppers.

    We made the cream sauce from cashew milk from the Spunky Coconut, added it to some gluten-free pasta and added a can of chickpeas. My picky 3 year old ate it, so we're adding this recipe to our rotation.

    Bunless turkey burgers with lettuce wedges in place of the buns to hold all the toppings, homemade baked steak fries and fruit salad (cherries, pineapple, pears, mandarin orange and banana slices) for dessert. I feel like it's summer already!

    What I like to call "breakfast rice". I hate rice pudding as a dessert, but I often make a form of it for breakfast. Take leftover rice. Mix in milk and/or yogurt of choice. Add cinnamon, dried fruit, nuts. I often make up a big batch at the beginning of the week and put a serving in a small container and eat it when I get to work. Works great with quinoa...

    I have to eat breakfast every day or I starve until lunch. I eat 2 eggs, whisked together in a bowl and then nuked in one of those egg poacher-style containers. Usually I add some lean ham (pre-cooked) and mustard on gluten-free, dairy-free bread. That gives me protein, fat, and carbs. I find with the combo, I easily stay full until lunch.

    We had green salad with feta cheese and dressed with plain lemon juice; homemade lentil soup (onions, carrots, brown lentils, chicken stock, too much pepper according to hubby); Trader Joe's gluten-free mac & cheese; steamed carrots, cauliflower, & zucchini; and homemade tapioca pudding made with honey instead of sugar.

    Watch out for the Lipton onion soup! I have seen on here that the newer versions seem to have gluten in the ingredients.

    Oven roasted pot roast with carrots, onions, potatoes. I put lipton onion soup in the water, and made gravy with potato starch. I made a brussel sprouts casserole with dried cranberries and almond slivers.

    Good luck to you with the meat! I had to train myself to eat meat after my diabetes DX but my body thanks me for it Tonight I had bunless beef burger patties with saurkraut, sauteed red onions and steamed broccoli and carrots. Was a lazy dinner night.

    We are grilling steaks that I marinate in worchesshire (?) sauce , garlic and.black pepper. Red potatoes cut in little squares, tossed with olive oil and Italian seasoning, put in a foil packet and grilled. Regular salad. Hub's millionth birthday so I will make a BC brownie mix with Kraft Carmel bits, hot from the oven, vanilla ice cream and Carmel sauce...

    We were out most of the day so I pulled out some pot roast and gravy I had in the freezer from a couple weeks ago. I made mashed potatoes and brussels sprouts to go with it. I make pot roast by browning the meat on all sides for about 5 minutes per side in a little olive oil. I add a couple chopped onions, a few cloves of peeled garlic, a cup of water...

    I'm having Tinkyada brown rice spaghetti-style pasta with doctored-up ready-made spaghetti sauce that I've had stashed in my freezer in single serving sizes. Yum! This time I'm trying the quick cook method for the pasta (cook 1 to 2 min., cover and let sit for 20 min. before serving). As you can tell, I'm being lazy today.

      Occasionally eating out in restaurants means that there is potential cross contamination in spite of ordering a gluten free dish. What enzyme supplements can the forum recommend that would help with potential cross contamination? Something I could take before I start eating. I used to order Wheat Rescue from Microbiome lab, but it is not available anymore.

      Hi  - Anyone have any experience with these? I bought them at Costco thinking they must be gluten-free, but now I see Natural Flavors and Spice in the ingredients. There's no Gluten Free labeling. However the Costco site and two other sites say it's gluten free. Anyone know?

      Yes, I doubt you can find a perfectly safe restaurant--perhaps a dedicated gluten-free restaurant, but in general, very few of them exist, and they tend to be in larger cities. Super sensitive celiacs should probably just avoid eating out.
