You would need to eat gluten daily for at least a couple of months before getting tests for celiac disease, especially a biopsy. Some experts believe it could take longer for the gut damage to be detectable. It’s important to keep eating gluten until you finish all testing, which can be difficult. It’s also hard to get any tests now due to Covid-19 stuff. There are also home test kits available for ~$100 in case you can’t get screened soon.

It looks like it is in this part: In a medium bowl, beat together the cream cheese and lemon juice until soft. Add whipping cream and beat with an electric mixer until batter becomes thick. Add the sugar and continue to beat until stiff. Pour into chilled crust, and top with pie filling. -
GERD can cause some of the issues you mention, and GERD is a common symptom of diagnosed celiac disease, as are panic attacks: Have you discussed your symptoms with your doctor? They should be able to screen you for celiac disease, and/or determine if it is GERD.

Awareness has certainly increased, as has the total number of people on a gluten-free diet, and most are on it due to self diagnosed gluten intolerance, or the perception that it is healthier.
