I usually eat a small breakfast, a big lunch and then a small supper. I cooked that turkey and will be having that for lunch today. And yesterday, one day only, the store had russet potatoes on sale - a five pound bag for FORTY-EIGHT CENTS, limit 2 per customer, so I'll be having a baked potato with my turkey.

 

But for breakfast (and supper later) I have grilled cheese. I got the Schar multi-grain bread by mistake. (I had wanted to get the white to make stuffing with.) And I got the big block of American cheese. I'll tell you, that Schar multi-grain makes the best darned grilled cheese I may have ever had.

Thanks! I learned patience and self-control while I was so restricted so in the long run it was good for me. And now I just want to celebrate.

 

It'll happen for you too. And when it does you'd better watch your figure! :lol: I thought giving up ice cream would make me lose weight but with all the ymmy things I've gotten back I fear I'm eating more now than I ever did! :ph34r:

So, I got a box of glutino corn bread stuffing. Could I substitute the butter it asks for with olive oil?

I know its probably too late (was afk for thanksgiving) but it should work well.

Lets see.  Haven't posted in a while, so some catch-up

 

We made some great pizzas on pizza crusts from a local bakery - cheese & feta; pepperoni, jalapeno & pineapple; red onions and bacon; and a BBQ chicken - Gates BBQ sauce for the sauce, grilled chicken, red onions, cheddar & moz.

 

Turkey sandwiches on millet rolls, left-over scalloped potatoes & carrot sticks & chocolate and apple cinnamon cupcakes.

Last night I made Spaghetti with Broccoli.  Today will be beef stir fry with brown rice.  

 

I put in a huge order for canyon bakehouse bread... if you order $50+ it is free shipping with code "canyonfreeship".  The email I got says it is good through Friday.  So excited to have a good stockup of bread!  I will probably eat it all too quickly... lol.

COD!! The healthfood store had wild caught Alaskan cod for a good price. I'll be broiling it with butter and bread crumbs. I'll probably have a baked potato and some broccoli with it. And I WILL be sharing with the cat. (She loves cod almost as much as I do.)

Went to Jimmy John's last night.  I checked and double checked with them to make sure everything was gluten-free--or what I could have was gluten-free.  They called their manager to "verify" too....sicker than a dog today.  Did some more research, their roast beef is NOT gluten-free....I will be stopping by to make sure they don't do that to someone else.  I am on the road traveling and it was pretty much my only option.  I have some food with me but I did plan to eat out last night so I did not bring "dinner" food.....ugggggg.

We had beef stew last night, too!  With some experimental "pop-over" rolls.  The rolls were very "eggy"- not really what we wanted but OK.

 

Sunday night we had the best green chili pork stew!  Cooked the pork for 4 hours in the oven, then made the stew!  It was fabulous!  We are having more tonight!

Anyone have any ideas for a gluten-free substitute for Guinness Beer?  I have an Irish Stew recipe that we like to make in the winter but it needs Guinness or a dark beer.

Guinness is something I still miss. I don't know of any gluten-free beer that is even close.

I think the overall flavor would be fine even if it's not drinkable as a solo delight :D.  Probably can't duplicate it gluten-free though since it's such a gluten heavy drink.

Sadly just had gluten free chicken strips and oreida fries for dinner tonight. We ran out of Thanksgiving leftovers and have yet to venture into the grocery stores to replenish.

      Hi @Atl222 As @trents points out, there could be many reasons for this biopsy result.  I am interested to know, is your gastroenterologist concerned?  Also, are your blood tests showing steady improvement over the years? I remember when I had my last biopsy, several years after diagnosis, mine came back with with raised lymphocytes but no villous damage, too! In my own case, my consultant wasn't remotely concerned - in fact, he said I might still get this result even if all I ever did was eat nothing but rice and water.   My coeliac blood tests were still steadily improving, albeit slowly, which was reassuring.

      Welcome to the celiac.com community, @Atl222! Yes, your increased lymphocytes could be in response to oats or it could possibly be cross contamination from gluten that is getting into your diet from some unexpected source but not enough to damage the villi. And I'm certain that increased lymphocytes can be caused by other things besides celiac disease or gluten/oats exposure. See attachment. But you might try eliminating oats to start with and possibly dairy for a few months and then seek another endoscopy/biopsy to see if there was a reduction in lymphocyte counts.

      This is a solid, well-reasoned approach. You’re right that “koji” by itself doesn’t indicate gluten status, and the risk really does come down to which grain is used to culture it. The fact that you directly contacted Eden Foods and received a clear statement that their koji is made from rice only, with no wheat or barley, is meaningful due diligence—especially since Eden has a long-standing reputation for transparency. While the lack of gluten labeling can understandably give pause, manufacturer confirmation like this is often what people rely on for traditionally fermented products. As always, trusting your body after trying it is reasonable, but based on the information you gathered, your conclusion makes sense.

      Seven months can still be early in celiac healing, especially if you were mostly asymptomatic to begin with—symptoms like low iron, vitamin D deficiency, nail changes, and hair issues often take much longer to improve because the gut needs time to recover before absorption normalizes. A tTG-IgA of 69 is not “low” in terms of immune activity, and it can take 12–24 months (sometimes longer) for antibodies and the intestinal lining to fully heal, particularly in teens and young adults. Eating gluten again to “test” things isn’t recommended and won’t give you clear answers—it’s far more likely to cause harm than clarity. Weight not changing is also very common in celiac and doesn’t rule anything out. Please know that your frustration and sadness matter; this adjustment is hard, and feeling stuck can really affect mental health. You deserve support, and if you can, reaching out to a GI dietitian or mental health professional familiar with chronic illness could really help you through this phase. This study indicates that a majority of celiacs don't recover until 5 years after diagnosis and starting a gluten-free diet: Mucosal recovery and mortality in adults with celiac disease after treatment with a gluten-free diet However, it's also possible that what the study really shows is the difficulty in maintaining a 100% gluten-free diet. I suspect that if you looked closely at the diets of those who did not recover within 2 years might be that their diets were not 100% gluten-free. Perhaps they ate out more often, or didn't understand all of the hidden ingredients where gluten can hide. Either way, it shows how difficult recovery from celiac disease can be for most people.
