  1. What you're trying to do is remove dishes/utensils with pits, scratches, or cracks where gluten has worked it's way in and you can't get it out. Stainless and ceramic should be fine after a good scrubbing unless it's scratched or chipped or bent. Old plastic with scratches should be tossed. For items your Celiac child won't use I advise marking them...
  2. I've never used a press, but I keep my Mission brand tortillas in the fridge and they keep very well. No mold, etc far past expiration date. They also state gluten-free on back, and I've never had problems. I've never seen masa labeled gluten-free, here (Tucson) and stores carry many varieties here. Then again, I don't check them regularly. The only cornmeal...
  3. Not fast food at all - but resorts do breakfast well. Haven't run into pancakes or waffles but I rarely out those out, anyway... I'm excited about Chik-Fil-A being an option!
  4. I've always added vanilla, apple sauce, cinnamon,etc. to any hot cereal. Only way I can get it down. That said, I tried a Bob's 7 grain hot cereal once and no amount of tweaking got that down. Gross.
  5. The symptoms of thyroid disease and Celiac greatly overlap. I've spent the last 2 years trying to differentiate how they are different for me. In short, what doesn't go away from gluten-free is thyroid (for me). But that's a big umbrella - that includes adrenal issues, vitamin deficiencies (found in both celiac and Hashis)....   6. Aside from a six month period in my 20's I NEVER had a clear and immediate reaction to gluten. Even now, it takes 12-24 hours. Reaction time and individual food reactions, IMO, has absolutely no bearing on diagnosis. At least not for me. Some people have immediate and clear reactions, but it isn't a requirement to have Celiac disease or gluten intolerance...

  8. No. You need full thyroid panels:TSH (evidently worthless if he hasn't seen it), free t3, free t4, reverse t3, tpo antibodies, and all the other thyroid antibodies. Total t3, t4....the list can go on. But your frees should be right at midrange - if they aren't that indicates a problem - I don't care what your TSH says. Lots of good reading on about.com...
  9. If you have the genes linked with celiac it simply means you have the possibility of developing it. So, knowing your genetic status is only used to eliminate possibility (which may or may not be accurate, the genetic area is constantly evolving). A positive genetic test is not a positive celiac diagnosis. Disgnosis is made by antibody bloodwork and endoscopy...

  12. I found a pink (I think) sea salt at Costco. Didn't say it was on shared equipment, but didn't call to ask. I used it and was fine. I am also out, so can't swear it was pink Himalayan....
  13. I use dr. Bronner's liquid soap, mixed half with water, in a foaming dispenser for hand soap. Soap - Dove or Kiss My Face plain olive oil bar soap. I still buy Burt's Bees lip shimmer sticks. I know they don't say gluten-free anymore but I've had no problem. Aveda Scalp Benefits shampoo/conditioner.
  14. I have good luck with salsas, but salsas without pepper???? Now that's difficult! I advise making your own til you're more comfortable with reading ingredients and brands. FYI I buy La Victoria, Goldwater brand, and Mi Salsa.
  15. If you're getting them while out, they could have somehow cc'd the milk (heated, frothed milk). Try one at home.
  16. When my lower half finally started to be un-constipated I thought I was getting D. Having more than one bm per day was quite novel, for a year . I'm still a little amazed, and sometimes annoyed at the inconvenience (though c is VERY annoying).
  17. In my opinion it isn't, because that's equivalent to saying almost all sausage is gluten free so eat all sausage without checking the label. You've always got to check the label. All it takes is one product with gluten, in our bodies, to make us sick. Think of all the anxiety surrounding dentist visits. Alleviating that glutening anxiety is wonderful, IMO...
  18. Why is it overkill? It's what we (gluten sensitive) do every day - screen what goes in our bodies for gluten. The dentist can understand the need because his brother is Celiac. Is gluten-free dentistry a market niche, sure. But he can still treat non-celiacs, he can just safely treat Celiacs/gluten sensitives as well (without having to check his products...

  21. Your excitement makes me smile . The next time you go to a doctor, have full thyroid panels run - free t3, free t4, tpo (and other antibodies), and reverse t3. Your free t3 is quite a bit lower than the halfway mark, t4 is right at the half mark. These could be signs you are not converting t4 to t3 properly...which means thyroid disease. Your TSH may...
  22. Were they gluten-free recipes v. Gluten recipes subbing gluten-free flour? And, try increasing your oven temperature by 5-10 degrees. I got quite a bit of spread in recipes in the beginning....and it's either my oven temperature (though thermostat says it's accurate), or altitude, or evil faeries. Generally, I need to increase oven temp 5-10 degrees...
  23. You need silpat or wax paper. After rolling out, put wax paper on top and do some origami moves to fold it over then unfold it on top of the pie. Sometimes it works, sometimes not. Drink tequila.
