  1. Usually soy sauce is made with gluten in it. For a buffet you would have to make sure they make all the food with gluten-free soy sauce, which is unlikely. And an awful lot of Chinese food has soy sauce in it.
  2. You can test yourself without a doctor. You can buy the items you suspect and try them one at a time over a week and see if you react. Or you can order a new set of nerves if you really believe you made yourself sick by worrying. Where you'll get a good deal on a set of nerves I am not sure, though, maybe Dr. Frankensteins store on E-bay.
  3. Hi HG, The celiac disease blood antibodies panel is usually the first test. Then an endoscopy to check to take villi biopsy samples for review. Four to 6 biopsy samples from different areas are recommended. Sometimes a doctor does only the ttg IgA test at first, but here are also several other antibody tests that can be done.   8. Hi RayB, The gene tests can't tell a person the have celiac disease. Only that they are in the group that might get celiac disease. The genes are actually fairly common, but celiac disease is much less common than the genes presence.

  21. Hi Steve, Welcome to the forum! I don't think you need to worry about gluten from your compost. Even if it was not destroyed in the composting process, it would just be in the soil, not the veggies. You can always rinse the veggies off if you are concerned. Or get a pond and feed the fish bread from now on!
