How Did Your Thanksgiving Go?

Everything I made was gluten-free except the stuffing, which of course I didn't eat. It wasn't worth inflicting gluten-free bread on other people just so I could eat it. Managed gluten-free versions of broccoli casserole (although the crackers that were supposed to be "just like Ritz" weren't) and pie crusts, but the gravy was a little weird, texture-wise. And I think I managed to impress upon the in-laws the importance of avoiding cross-contamination, so the stuffing stayed off my plate and out of the leftovers. A good day, for my first Thanksgiving all by myself - my parents finally moved to Florida so I had to cook my own Thanksgiving recreating Mom's recipes in gluten-free style. At least for the first time since diagnosis I could eat the broccoli casserole. Let's hear about the day's triumphs and tragedies. I hope everyone managed to not be glutened!

Turkey (DiPaola, born and raised in Trenton)

sweet potatoes, candied with marshmallows

broccoli-cheese casserole topped with gluten-free cracker crumbs

mashed potatoes

gravy thickened with gluten-free flour (so far so good, but not enough) so I added cornstarch (Mayday! Mayday!)

pumpkin pie

pumpkin cheese pie

rice pudding

and the scary stuffing made from normal bread cubes for all the "normal" people.

Hubby and I had:

Amish turkey breast (My mother wanted to know if it had a bonnet, at $3 a pound it ought to have!)

Green beans (none of that icky casserole stuff)

Sweet potato casserole

gluten-free dressing (Ooops, cooked it too long and it kinda dried out too much, but gravy helped)

Gravy (cornstarch)

Pumpkin pie

danger: glutenfull rolls for italian hubby...

Now the soup pot is on...

Guest nini

just got back from my mom's a little while ago... we shared cooking duties and mom was so great about keeping any gluten stuff far away from any of the main dishes.

gluten-free menu included

free range turkey

giblet gravy

mashed potatoes

sweet potatoes with marshmallows

green bean casserole (my improv cream of mushroom soup was PERFECT! and I used gluten-free corn flakes crumbled up instead of fried onions)

corn bread stuffing

grits casserole (we are in the SOUTH dahlin)

confetti corn casserole

cranberry orange relish

gluten-free biscuits

gluten-free cornbread

gluten-free pumpkin pie (SUCCESS!!!!!)

chocolate chip cookies (Like Tollhouse only better cos they are gluten-free!)

2 small deep fried turkeys

1 loaf homemade bread :(

I am so stuffed I think I am going to explode! We had dinner at my sister's and we all chipped in and helped with the cooking. Everyone was great and was careful not to cross-contaminate. Here is what we had:

Gluten-Free Menu

Turkey (basted and stuffed with pounds of butter) :D

Dressing (EnerG Tapioca and Papa's Loaf Breads cut into cubes and dried in the oven for 12 hours!!! I put them in last night around 8 at 200 degrees and forgot about them! I thought for sure they were ruined but this turned out soooooooooo good. I dropped them off to my mom this AM and she made the dressing for me since she was making the gluten stuffing too)

Noodles (cooked in turkey broth)

Corn Casserole - adapted my old gluten recipe - turned out great!

Mashed Potatoes and Gravy

Sweet Potatoes

Cranberry Sauce

Pumpkin Pie Cupcakes (thanks to Guhlia!)

Green Beans

Pickles and other misc. appetizers

Gluten Menu

Dressing

Noodles

Rolls

Pumpkin Pie

Chocolate Cream Cheese Pie

Coconut Cream Pie

I guess now you see why I am stuffed!

I had a wonderfully gluten free Thanksgiving. My mother cooked and made sure everything was okay for me. Had ham, corn, beans, cornbread, orange muffins and some kind of pie.

My daughter and I actually had ours yesterday so she could be with her dad today, But I am still eating like a pig ...

Mine was completely gluten free, since I was the only adult. :P I made gluten-free dressing from Food for Life millet bread and my daughter said it was the best stuffing she ever had.:) Baked hormone free chicken, asparagus, cranberry orange relish, steamed squash w/onions and candied sw potatoes.

My only disgression (sp? ) was a spoonful of melted marshmellows on my sweet potatoes.

I am sooo full !! Good to hear ya'll had a good one too. Marcia

I had a wonderful thanksgiving meal! We had turrkey, mashed potatoes and gravy, glazed sweet potatoes, corn, and cranberry sauce. Also, everyone but me had dressing. But I have never liked dressing so it was ok. And my mom was so thoughtful she didn't make rolls for anyone because she knows that is my favorite part of the meal. My mom did all the cooking and was just super careful with the dressing as that was the only thing with gluten in it.

tarnalberry Community Regular

Turkey just came out of the oven, so we should eat in about an hour. :P

Our menu:

Starters (served as a late, light llunch)

Sweet Potato and Pumpkin Soup with Ginger

Mixed Baby Greens and Spinach with Pomegranate Seeds, Star Fruit, and Raspberry Dressing

Ornish-diet Friendly Raw Brownies

Dinner

Roast Turkey with Fresh Garlic, Oregano, Rosemary, Thyme, and Sage

Fresh Orange-Cranberry Sauce

Rosemary Turkey Gravy

Creamy Wild and Brown Rice Dressing with Sage and Three Mushrooms

Rosemary Roasted New Baby Yukon Gold and Baby Red Potatoes

Sauteed Field Greens and Roasted Beets with Garlic

Simple Sauteed Green Beans

Dessert

French Apple Pie

Individual Pumpkin Custards

I already know that the soup, salad, brownies, cranberry sauce, and stuffing are quite tasty.

Edit: The whole meal is gluten free (for me), dairy free (for me and my BIL's dietary test), soy free (happenstance), and low fat (for my FIL). And quite a success, though my husband still doesn't like beets. :P

ArtGirl Enthusiast

It was just hubby and me. We had a simple meal:

All gluten-free

Roast turkey - gravey thickened with potato starch

Mashed potatoes (with only margarine in it - no milk - it's still good that way)

Green Beans (plain)

Swiss chard cooked with onions and turkey bacon for flavor

Apple Tart (with nut and date crust - no flour at all)

Hubby had some bread, but he always keeps it well away from the rest of the food.

Although the turkey wasn't stuffed, we managed to stuff ourselves just fine.

Next year I'm eating with Tarnalberry! Man, that looks good! I can't deviate from the standards or my family will grex, but I love her menu. I'll have to sneak some new dishes in next time.

lonewolf Collaborator

We're very traditional with our menu too. Everything was gluten-free except for one pie that my mom brought. The funny thing was that everyone thought that her gluten-free crust was better and the whole pie was eaten.

We had:

Turkey

Stuffing (in the bird) made with gluten-free bread, cornbread, apples and raisins, etc.

Mashed potatoes-red potatoes with skins left on and mashed a bit lumpily

Gravy - thickened with sweet rice flour

Homemade cranberry sauce

Rolls - Gluten Free Pantry Country French Bread made into rolls in muffin tins

Yams - with a little maple syrup and butter

Pickles, olives and carrots

Fruit salad

Pumpkin pie - a "regular" pie (made with milk sub.), gluten-free crust with same filling and a no-bake gluten-free, dairy-free and egg-free pie

We're all stuffed and happy. Ready for leftovers tomorrow!

emcmaster Collaborator

We had:

turkey (butterball)

steamed fresh green beans, dressed with a little butter & salt

sweet potato, cranberry & pineapple casserole (SO good!)

mashed potatoes

cranberry-orange relish (fresh cranberries, oranges, sugar)

butternut squash casserole (which would have been gluten-free if my mom hadn't forgotten and used a wooden spoon to make it <_< )

green salad

non gluten-free dressing & gravy (neither of which I cared about, so I didn't make my own)

non gluten-free pecan pie (but my mom saved a portion of the filling and made me a crustless piece)

gluten-free pumpkin cheesecake

non gluten-free apple pie

The food was delicious, however I must have gotten glutened on Monday or Tuesday because I felt badly even before I'd eaten anything. Thankfully it has been a rather mild glutening this time.

chrissy Collaborator

turkey breast

ham

mashed potatoes and gravy (the packet gravy from the turkey with flour wasn't very good---i made a separate gluten free gravy for the girls--i should have had that)

sweet potatoes

green bean casserole topped with funyuns

relish tray with ranch dip

jello

homemade gluten free rolls

mom brought some wheat rolls

apple cider

pumkin pie without a crust

pecan pie w/out crust

the twins made pie crusts by making gluten free cookie dough and pressing it in pie plates and baking---they filled them with lemon pie, chocolate pie, banana pie--and some thing else

kassie made a pistachio pie with a cocoa pebble crust

we ate pretty good

I found a cookbook called Sugar-free, Gluten free by Susan O'Brien that has some great recipes. (I have been a Type 1 diabetic since the age of 26. I am now 37.) I didn't make turkey, everyone wanted ham. Can I have ham? I sure have enough left over and I didn't eat any at dinner.

I made roasted veggies and stuffing with quinoa from the cookbook. Also red potatoes, and corn. I was just diagnosed mid october and am still learning. I am enjoying the new recipes, I was in a bit of a cooking rut before. Is irritability normal? I am off the charts! Definately not myself, alienating everyone, almost like there is some sort of imbalance. Well, enjoy the leftovers.

I loved reading about everyone's Thanksgiving meals! It all sounds so good :D

We had (and it's almost 8AM, and I'm still full)--

Corn chips/salsa

Turkey/gravy (potato starch)

Mashed potatoes

Candied yams (from scratch)

Dressing (made with GFP French bread, cubed and dried--so good!)

Corn (Not for me, though)

Tomato/mozzerella/olive salad

Homemade cranberry/orange relish

Rolls (again, not for me--I had gluten-free bread)

Gluten free/dairy free pumpkin pie

Regular chocolate chip cookie cake--ordered at bakery for the kids

Before bed, I had a turkey sandwich and more pie

Ours was also good. We were to my parents house for the meal.

We had Capon, beans, corn, mashed potatoes, rutabgas, sweet potatoes.

I made gluten-free bean casserole, and brought the Grainless Baker pumpkin pie, and I also brought cranberry sauce from the amish farmers market which was real good.

My sister made me gluten free stuffing from scratch, very good. She used Ener-G brown rice loaf, chopped celery and Wegmans chicken culinary broth which is made gluten-free. She also made gluten free candied yams.

The meal was a success, my parents had cooked for 10 people, more than we have had in years. My sister was engaged the evening before and she is also having a baby so that was exciting news, her fiance is from Italy and has never celebrated Thanksgiving so this was his first meal and it went great.

We barely had any leftovers which is a first for my mom. My other sister didn't eat as much since she was going to her boyfriends for dinner, they were having deep fried turkey.

It was also the first tradition meal our two young foster children had, so all around it went well!!!!!

I'm so jealous! We went to my mother-in-law's for Thanksgiving. Absolutely nothing was gluten free and they kept offering me cookies. :) Even though I ate very little of what I thought might have been gluten-free I still got very sick. Oh well, sounds like the thing to do is have Thanksgiving at my apartment next year. :)

It went GREAT! I was excited. For once I felt sick only from eating too much. The gravy was a little off, but the stuffing was awesome. My brother didn't realize that it was gluten-free. We also had to work around my mom's boyfriend's egg allergy, so I think we did well last night.

For dessert we made pumpkin spice panna cotta (cream, sugar, and gelatin instead of egg), apple crisp (with oatmeal topping instead of flour), ice cream, and a gluten-free pie from whole foods.

I actually don't feel tired today. Yay!

Rebecca47 Contributor

I cooked at my house and it was all great. My son did the rolls and i made box stuffing for my mom and son and his friend and I made sure it wasn't near the food I could it and everyone was extremely careful not to cross contaminate. It was all good and I did not get sick. :D;)

I want your stuffing recipe! I never was any good at making it, even when I could have gluten :P !

We had:

Appetizers:

Shrimp Cocktail

Cheese with Rice Crackers

Deviled Eggs

Main Course:

Turkey

Sweet Potatoes

Mashed Potatoes with Onions

Brocoli

Cranberry Sauce

Stuffing (non-gluten-free but I never loved stuffing anyway)

Pumpkin & Banana Bread

Dessert:

Cheesecake (gluten-free)

Italian Pastries

Flourless Chocolate Cake

All in all it was good, except my brother and his wife didn't make it because they got rear ended on their way to Thanksgiving, and she is 3 (almost 4 months) pregnant, and they spent the day at the hospital making sure the baby and everything was ok. My parents went to the hospital with them so they came for dessert. Kinda bummed, but thank G-d everyone, including the baby are ok.

I'm glad that everyone was ok, Jillian. How scary!

Thank you so much for this in depth analysis. I am currently taking Vit D3/K2 5000IU daily.i started taking a flushing Niacin but foolishly took a 500mg tab and nearly passed out! I have just ordered a gut microbiome genome test and it will be interesting to see what my current balance of microbes are. After I finish diagnosis I will definitely go gluten free. Diagnosis will inform exactly how strict I’ll need to be regarding cross contamination etc. my focus will be on healing the gut. I have also been focusing on the oral microbiome - cutting out FL and using more natural products as well as daily oil pulling. I read from some of your other forum entries about Benfothiamine and I’ll definitely order that. I’ll make sure my doc orders more detailed vitamin and mineral panel plus total IGA as well as the DGP-IGA and DGP-IGG tests. We will see if I can get the endoscopic biopsy done. Do you think I should request Vitamin B shots to get me started?  My daily vitamin protocol will likely be VitD/K2 5000IU, Benfothiamin 300x2, Niacin (flushing) 50mg working up to 300mg. I also take a EPA/DHA as well as some vascular support (Arterosil HP and Vascanox HP) as well as Magnesium at night. Which B complex brand do you like? I will see what the gut microbiome test comes back with. I’m sure they will try to sell me pre/probiotics and maybe some digestive enzymes. What are you thought on those? I’m curious if you managed to go into full remission from your Ménière’s disease? Thank you so much for your thoughtful insight. I know that building back up my gut health and immune health will help in so many ways as well as protecting me from many other major diseases as I go into my 60s and beyond.

You are right! The logo the have on their packages got me confused--it looks like they are less than 20ppm, not certified GF. Thanks for catching that! My brain also zeroed in on this "less than 10ppm" but I should have seen the rest...

Zinc glyconate lozenges (Cold Eeze) helps fight off viral respiratory infections by coating the mucous membrane cells to protect them from virus.  Zinc is an antiviral essential mineral. Choline deficieicy can be the cause of Non Alcoholic Fatty Liver Disease.  It is estimated by some experts that less than 10% eat the minimum RDA of around 450 mg.  It has also been connected to gallbladder disease.  Brain fog and high homosystein blood level is an independant indicator of cardiovascular disease. Eggs and red meat are the primary sources.  Three eggs or 10 cups of cooked brocolli a day.  Low vitamin D is a common denominator of autoimmune disease.  Is it a contributing factor or a result? I think that low vitamin D is maybe the main contributing factor.  Low vitamin D allows the immune system to run amuck. I would like to point out the many diagnosed with Celiac Disease went through several misdiagnoses, like gall bladder disease, and were repeatedly tested negative and then one day tested positive. Regardless of your diagnosis, you should avoid gluten, you mention it in your first post : "When I eat gluten I get a lot of mucus with my stool and most of the times it’s quite thin. As soon as I take gluten away from my diet my stool becomes normal". It can take six months to several years to heal completely.  How long I believe is directly related to how quickly you identify deficiencies and correct. Essential to my recovery:  Thiamine, 10,000 IU vitamin D3 a day, maintaining 25(OH)D at 80 ng/dl (200 nmole/L), 600 mcg Liquid Iodine, Phosphatidyl Choline.  And of course: Gluten Free.

Not all of King Arthur’s gluten free flours and baking mixes are certified gluten free. This bread flour is not.
    • knitty kitty
Bump up your thiamine dose!  You can take more if you don't feel anything after the first one.  Must needs getting to that 500mg. We need more thiamine when we're fighting an infection.  Zinc will help fight infections, too, as well as Vitamin C. They all work together. Hope you feel better!
