I've been making pudding pops with these molds from the river company. They are quick and easy to make. Might be a hit in a warm place like Texas. Some people get the ability to eat dairy back, others don't. If you want to try it, just eat a small amount one day, and see if symptoms develop. I can't eat dairy after almost a decade gluten-free, so it may or may not come back for you. -

Please don't let him go completely gluten-free until all celiac testing is done. The testing consists of blood antibodies and then an endoscopy to check for damage to the small intestine. Hi Darnock, You may have celiac disease. If you do, it is important not to go completely gluten-free until all the celiac testing is done. The celiac testing measures antibodies in your blood stream. Has he had his vitamin and mineral levels checked? We can be low vitamin D, B's, iron etc. All those vitamin deficiencies add up to problems with the body healing and maintaining itself. -

Hi Beth, I didn't do the gluten challenge myself. But I do have problems with beans. Sometimes I can eat them in small amounts. You may need more time to heal up after your challenge. A full year or more is not unusual IMHO. It may help if you avoid sugar and carby foods for a few months.

Hi, Your symptoms could be related to gall bladder disease. There is a test they can do to check your gall bladder function. It seems like some people with celiac disease have their gall bladders removed, sometimes unnessecarily though.

Hi Nick, Welcome to the forum! Your doctor doesn't seem to have run the full celiac disease test panel. Normally there are 5 or so antibody tests done. And then an endoscopy is done to confirm gut damage. It's bad to go gluten-free before all the testing is done. Mostly because the test results depend on the immune response being active. Yes, some of mine floated up and hit a jet plane! It was very embarrassing! Oh, you mean floating in water! Kidding. It does sound like you have either celiac disease or gluten intolerance. There have been several people with hashimoto's thyroiditis on the forum. It is one of the conditions associated with celiac disease that we have a higher than average chance of getting. Bloating can be made worse by eating sugary and carby foods, or dairy. So maybe cut those out for a while and see if things improve. Simple whole foods like meats...
