  1. I just want to mention that potassium can lower you blood pressure, and I believe that high levels over a long period of time can also cause kidney issues. The blood pressure med I take include potassium, and because I take it my doctor gives me a regular blood test to monitor my kidney function.
  2. Let us know how it turns out. Also, keep in mind that there is also a condition called non-celiac gluten sensitivity, which may be up to 10x more common than celiac disease, yet there are no tests for it at this point. In other words, if you get negative results but still have symptoms, you may still want to try out a gluten-free diet for a few weeks to see...
  3. Can you share its ingredients? It sounds like it would be naturally gluten-free, and would likely have no gluten in it. Garlic can upset some people's stomach, and cause IBS-like symptoms, but garlic is gluten-free.
  4. I also want to add that the condiments you crave are mostly gluten-free, or there are gluten-free versions of each of them, so you may not have to give them up.
  5. Your sensitivity level can change over time. Some celiacs report getting super sensitive after quitting gluten, and others, like myself, get less sensitive after they have fully healed their guts. It varies greatly, but this would not be a good indicator of whether or not you have celiac disease. Your initial tests would be the best indicator for that, and...
  6. Even one positive blood test is enough to mean that you likely do have celiac disease, but with two, the odds are very high indeed. I believe it is a good idea to go gluten-free, and you should also consider asking your first degree relatives to also get tested. Have you considered genetic testing to see if you carry any of the known celiac genetic markers...
  7. I agree, there should be no further testing required at this point, and starting the diet which should help relieve your symptoms would be even further confirmation of a diagnosis. If you are concerned at all about starting the diet too early, perhaps send an email or message to your doctors to let them know that you plan to do this.
  8. Unfortunately if you've been gluten-free for that long it would be best to restart eating gluten again daily for at least 6 weeks, then get tested, but that is only if you require a formal diagnosis to stay on a gluten-free diet. If you feel like the diet is working, and your many symptoms are improving, it is not required to get a confirmation. Also, you...
  9. The liquor store guy probably means well, but likely would not be the best source for info on this. Here is an article we did recently on Absolut:
  10. Malted rice is simply sprouted rice, which is usually roasted after it is sprouted, so it would be gluten-free.
  11. It sounds like you may have non-celiac gluten sensitivity, or even celiac disease. Since you are already gluten-free it probably doesn't make sense to go through a gluten challenge to get tested for celiac disease, and there currently isn't a test to screen for NCGS, which is ~10x more common than celiac disease. As a truck driver your biggest challenge will...
  12. I'm sorry to hear of your ordeal, and want to share this article with you, although it may be too late:
  13. Chocolate can have a laxative effect on some people, so perhaps you are in this group? I will assume that the chocolate in question is gluten-free.
  14. BTW, is there any chance the folks in charge of this operation would be open to doing this with gluten-free cookie dough, and make gluten-free cookies instead? Perhaps you could ask, as there are companies who make GF cookie dough.
  15. This sounds great! I wish more buffets would do this. I recently went to a belated holiday party where my wife works and was worried about the buffet offerings, and none of the workers there were able to clarify my questions. Luckily I ate something before I showed up, as this seem to happen often in catered work party environments.
  16. After many years here it is very rare to see someone who may be given an incorrect diagnosis of celiac disease, especially if they had positive blood tests of biopsy results, however it is much more common that a diagnosis is missed because many doctors are still not fully up on the testing protocols, and often don't even mention to their patients that they...
  17. I agree, and this is a general guideline. If you miss a single day it shouldn't affect your results.
  18. Welcome to the forum @Glutenfreegurrrl! It is possible they could have a manufacturing issue due to a contaminated ingredient, but this is also unlikely as I believe they are made in a dedicated gluten-free facility, and do regular batch testing. Do you know if you have any issues with xanthan gum or other gums which are often used in gluten-free products...
  19. Welcome to the forum. I think it would be very difficult for anyone to give you accurate advice on this, but given that you mention your "severe" sensitivity to cassava then it would probably make sense for you to avoid tapioca maltodextrin, even though maltodextrin tends to be heavily processed and may not affect you as much. You did not mention if this...
  20. I agree with @trents and even though I've not seen any scientific studies done on this, wheat flour based dough baked in a oven should not expose you to gluten. If they were making the dough from wheat flour directly in your office there may be a very small chance of exposure, but just the scent of baking cookies should not expose you, although as you mentioned...
  21. I'm not sure what your comment has to do with this article?
  22. Welcome to the forum. Did you have covid that you believe may have been a trigger? Have you been tested for celiac disease? Does anyone else in your family have issues with gluten?
  23. Welcome to the forum, and I think it is great that you are doing some research on how to remain gluten-free, as this is very important for your recovery. This is a link to our gluten-free recipes section: https://www.celiac.com/celiac-disease/gluten-free-recipes/ Feel free to ask us any questions you may have.
  24. Many years ago, back in the 90's, it was believed that high temperatures could degrade gluten, for example those found in deep fry vats. I do not believe a study was ever done on this concept, but it seems like it would be relatively easy to conduct such a study, and the results would be very important to many celiacs.
  25. I was very surprised to see this news today regarding Carol Kicinski who owns Simply Gluten Free Magazine and web site: https://www.thedailybeast.com/carol-kicinski-popular-gluten-free-tv-chef-and-poker-player-jon-heneghan-arrested-in-capitol-riot Here is the complaint: https://s3.documentcloud.org/documents/21273175/2-22-22-us-v-jon-heneghan...
