It sounds like you may have non-celiac gluten sensitivity, or even celiac disease. Since you are already gluten-free it probably doesn't make sense to go through a gluten challenge to get tested for celiac disease, and there currently isn't a test to screen for NCGS, which is ~10x more common than celiac disease. This sounds great! I wish more buffets would do this. I recently went to a belated holiday party where my wife works and was worried about the buffet offerings, and none of the workers there were able to clarify my questions. Luckily I ate something before I showed up, as this seem to happen often in catered work party environments. -

I agree, and this is a general guideline. If you miss a single day it shouldn't affect your results. -
Welcome to the forum @Glutenfreegurrrl! It is possible they could have a manufacturing issue due to a contaminated ingredient, but this is also unlikely as I believe they are made in a dedicated gluten-free facility, and do regular batch testing. Do you know if you have any issues with xanthan gum or other gums which are often used in gluten-free products...

I think it would be very difficult for anyone to give you accurate advice on this, but given that you mention your "severe" sensitivity to cassava then it would probably make sense for you to avoid tapioca maltodextrin, even though maltodextrin tends to be heavily processed and may not affect you as much. I agree with @trents and even though I've not seen any scientific studies done on this, wheat flour based dough baked in a oven should not expose you to gluten. If they were making the dough from wheat flour directly in your office there may be a very small chance of exposure, but just the scent of baking cookies should not expose you, although as you mentioned...- 4 replies

Many years ago, back in the 90's, it was believed that high temperatures could degrade gluten, for example those found in deep fry vats. I do not believe a study was ever done on this concept, but it seems like it would be relatively easy to conduct such a study, and the results would be very important to many celiacs.

Given how you spelled "coeliac" it looks like you might be in the UK. Here in the USA there are several subscription magazines which have been around for many years. One of them is Simply Gluten Free. They seem to focus heavily on recipes and their associated pictures of food, and then include lots of related articles. I recommend that you get a copy of each...

Welcome to the forum! Please note that there is zero evidence that coffee is contaminated with gluten during roasting, blending, packaging, etc. If you have any info to back up your claim, please share it, but coffee is considered gluten-free and there is very little chance of cross contamination.
