Gluten Free Teriyaki Sauce
Just made this last week and cooked our teriyaki chicken in it (and marinated in it too) Makes roughly 2 Classico Jars ( I save glass jars and reuse them) full of yummy yummy time sauce! 1 cup coconut aminos (or gluten-free soy sauce if you can find it, but I cannot!) 1 cup honey 1/2 cup juice from fresh oranges (or same amount of frozen concentrate!) 4 tbs rice vinegar 2 tbs fresh grated ginger ( I freeze the ginger and then grate it on the small side ofgluten-free Easter Dinner Menu
OK I think Ive got it all worked out and SAFE! I have been a label reading whirlwind! Finger foods to nosh whilst dinner cooks: A plate of Greek Olives, Summer Sausage (which is very hard to find w/o corn syrup!), A dip of stone ground mustard/honey/sriracha, Cabot extra sharp cheddar slices and a plate of deviled eggs. Ham Studded with Cherries & Pineapple & Gravy (fresh fruit not prepared) Salad and a home made Olive Garden copycat House dressing Sauteed Baby CarrotsSuccess, Finally!
Wee I am now (or will be on the 1st of April..no joke!) an employed person. Got the kindergarten teacher position at the local Country Day School (gifted school). I go in on Tuesday to sign the papers. I have to do a set of quick training they require the following week before I start too. It has GREAT benefits... wow... I just wanted to vent. I have been gluten-free for about 3 years. I have tried gluten challenges but never make it past 2 weeks. So I figured I would try enterolab, since supposedly it is more sensitive. I ate gluten for the last 2 weeks of 2014, sent in my sample. Came back positive. So I have been more careful than before- just washing hands more and making my daughter wash more as well. Plus I am still having bladder pain from those 2 weeks, but it has been improving. Salted Caramel Fudge I was shopping and looking for caramel that was grain free. I found ZERO corn syrup free offerings so I bought some heavy cream and went home to make my own. If you need to be dairy free, You can actually use coconut cream from the can and vegan margarine. Apparently it works wonderfully. Yes, I have one of the older models and have tested many products with it. For me it seems like a valuable tool and I have used it to test foods that I eat regularly, which are naturally gluten-free, for example salsa, refried beans, etc.

Has anyone tried the NIMA gluten detector? I'm seriously thinking of investing in one. I haven't eaten out at a restaurant since my late diagnosis 4 years ago (I'm 55 in March) Any information would be greatly appreciated
