Keep in mind that most celiacs and those with gluten-sensitivity don't have obvious symptoms, and many have zero symptoms, so just eating some gluten and having no reaction won't rule them out...but I do hope that you don't have either issue!

  8. Did you get any blood tests done? Normally you would have a blood screening before doing the endoscopy. If so, please share the results. If not, you should ask your doctor to do this before you go gluten-free.

  10. For a gluten challenge I believe they recommend at least 6 weeks of eating ~1 slice worth of wheat bread a day before the blood tests. Certainly doing this would be a good idea if you would not otherwise be able to maintain a gluten-free diet for life, or if you had any doubts about whether or not you should be gluten-free.
